Situated at an altitude of 1,900–2,100 meters above sea level, the farms benefit from a cooler climate, fertile soils, and large temperature differences between day and night. Such conditions favor the slow ripening of the cherries, allowing the beans to gradually develop their natural potential.Coffee trees grow among traditional, diverse crops that provide natural shade. The cherries are harvested by hand, and only fully ripe cherries are selected for further processing. Subsequently, they are processed using the natural method on raised beds, where they require regular turning and careful monitoring throughout the entire drying period. This process allows the origin's character to be preserved and the full potential of the bean to be brought out.ABOUT THE COFFEENotes of mandarin, milk chocolate, and spices dominate in the cup. The high altitude, volcanic mineral-rich soils, and around 1,356 mm of rainfall per year create excellent conditions for growing coffee.In 2026, Baho Coffee continues to make great use of the station's unique location by Lake Kivu. The delicate breeze from the lake and the gentle sun allow the coffee to dry slowly and evenly, resulting in a very clean, full, and intense flavor in the cup. This coffee is famous for its distinct, fresh acidity and complex fruity character. Black Honey is a processing method that enhances the fruity character of the bean. It consists of removing the seed from the cherry, but without cleaning the pulp off of it. We allow it to ferment and interact with the seed - which is our future coffee. So we decided to make Rafał's life a little nicer, ordered samples, and chose this (and one more!) great lot.Located in Ngozi Province, the Mubuga processing station collaborates with over 1,900 local farmers who deliver their carefully selected harvests here every year. This place stands out for its impressive technical infrastructure created for the precise processing of only the finest, fully ripe cherries. The station's facilities include as many as 12 fermentation tanks, 3 soaking tanks, over 300 drying beds, and 4 specialized tables for quality sorting.Harvesting in this region usually lasts from April to June, but this coffee's journey to your cup only begins then. After hand-picking, the coffee undergoes a classic washed processing – the beans ferment and soak for 48 hours, then dry on African beds for nearly three weeks.
