Roasting date: 18.06.2026

Whole bean specialty coffee from Brazil, roasted in Berlin by The Barn. Medium roasted, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods, as well as for espresso. In the cup, you can expect the notes of fig jam and nougat.Country: BrazilRegion: São PauloFarm: Ivan and Rose dos SantosProcessing: AnaerobicVarietal: CatuaiAltitude: 1250 m a.s.l.Cupping score: 87 / 100We love coffees from Ivan and Rose for their sweetness and texture. In the cup, expect fig jam, prune, and nougat. The fermentation brings a gentle boozy quality, while staying well balanced with a lasting chocolate note.ABOUT THE FARMIvan is the younger brother of Gertrudes and Joao Hamilton dos Santos. Together with his siblings and wife Rose, a partnership began with FAF (Fazenda Ambiental Fortaleza or Environmental Fortress Farm) in 2008 to change to sustainable, quality driven coffee farming. Fast forward and a whole region has been transformed, with neighbours collaborating and following the best possible farming practices. Named after the Brazilian Roadrunner which is native to the area, Ivan and Roses Sitio Seriema farm is a model of modern, responsible coffee production. We first tasted coffees from the family in 2014 and they have helped change our perception of Brazilian coffees. With a high proportion of Brazilian coffee produced at the lower ‘commodity’ standard, it has been an intriguing journey to see the beautiful terroir of the country properly expressed. Our relationship with Ivan and Rose has grown over the years and we have started investing in upgrades at their farm. With improved water treatment facilities the farm now fully cleans all water before releasing it back into the environment. Working with FAF, this project is now spreading across the region: helping to deliver a more sustainable model of coffee production.ABOUT THE PROCESSThis lot underwent fermentation for 36 hours: the whole cherries are sorted and cleaned, before being placed in a sealed anaerobic environment. The fermented cherries were then dried on patios with the whole outside cherry intact. The anaerobic process is a great match for the terroir of Brazil, bringing superb depth to the profile.ROASTER'S OPINIONThe first anaerobic lot we have featured from our partners Ivan and Rose dos Santos. In the cup, it is like sweet fig jam and velvety nougat: an espresso full of character.Store in a cold and dry space.

The Barn - Costa Rica Volcan Azul Natural Omniroast 250 g

Manufacturer: THE BARN

Roasting date: 27.08.2026

Whole-bean specialty coffee from Costa Rica, roasted in Berlin by The Barn. Medium roast, perfect for all brewing methods. In the cup, you can expect the notes of dried figs and vanilla.Country: Costa RicaRegion: West ValleyProcessing: NaturalVarietal: CaturraAltitude: 1400 - 1500 m a.s.l.Cupping score: 87 / 100THE CUPOur natural processed lot is intense and fruit-forward. Notes of dried fig, blueberry, and apricot are sweetly balanced. Fragrant vanilla and lavender will appear as it cools, with a defined complexity that is a signature of the farm.ABOUT THE FARMThe West Valley is the most prominent coffee growing region in Costa Rica. Most of its coffees are grown under protective shade, and produced on fertile clay. The mountainous landscape is dominated by three volcanoes and a gentle tectonic depression, while the Pacific weather patterns create well-defined dry and wet seasons. Volcan Azul is located on the edges of the Poás Volcano. For 5 generations, the producers have continued making coffee with the objective in mind of achieving excellence and superior quality. The descendants of the founder's families are acquiring natural tropical forests in order to protect and preserve the environment, and to reduce air contamination and global warming. It is their way of contributing to a better future for the generations to come.THE PROCESSThe process for this lot starts when cherries are still on the tree. By constantly measuring the Brix sugar content level, Alejo and his team seek to identify the ideal moment to pick the coffee. Cherries are then sorted and transferred whole to raised beds for slow drying.ROASTER"S NOTECoffees from Volcan showcase a truly special combination of terroir and expertise. Season after season, our naturally processed Caturra blows us away, with superb texture. and sweet complexity.Store in a cold and dry space.

The Barn - El Salvador Los Pirineos Pacamara Black Honey Filter 250 g

Manufacturer: THE BARN

Roasting date: 21.05.2026

Specialty-grade whole-bean coffee from El Salvador, roasted by The Barn in Germany. Light roast – perfect for all pour-over brewing methods: from drip, Chemex, AeroPress, and French Press to other alternative brews and batch brewers! Flavor notes: red apple, rooibos.Origin: El SalvadorRegion: UsulutanFarm: Los Pirineos, Diego BaraonaVariety: PacamaraProcessing: Black HoneyAltitude: 1500 m a.s.l. Cupping score: 87 / 100ABOUT THE COFFEEWe love the large beans of the Pacamara varietal for their superb complexity. In the cup, expect refined fruit notes like red apple, and plum, alongside rooibos and milk chocolate. The body is silky, with honey-like sweetness.ABOUT THE FARMGilberto Baraona was a shining beacon of the coffee industry in El Salvador. Over many years, he worked relentlessly to explore the possibilities of production, with a varietal programme that many dream of: the nursery that Gilberto developed hosts over 70 distinct coffee cultivars. Now in the trusted hands of his son, Diego, Los Pirineos continues to deliver the unexpected. At 1400 metres above sea level, Los Pirineos sits on volcanic slopes amongst lush forest. The microclimate around the volcano provides sun-filled days and cool breezes that are ideal for growing and drying. In the drying area of the farm, raised beds are positioned between two peaks which consistently channel the wind across the drying coffee. With twelve hours of sun per day, this creates an ideal environment for Honey and Natural processing. Quality and responsibility are central to the way Diego works. All the water used in processing is from collected rain, and bees are kept on the farm to help pollination across the farm and surrounding forest. With more than 60 employees, Diego ensures year round employment on projects across the farm.ABOUT THE PROCESSOur Pacamara lot underwent Black Honey processing. After harvest, ripe cherries are pulped but almost all of the mucilage is left intact. The pulped coffee is then spread in a thin layer on shaded raised drying beds. The shade slows the drying process compared to the other Honey processes used on the farm. Coffee is dried for approximately 25 days until it reaches ideal humidity and the mucilage has turned sticky and black, giving the process its name.ROASTER'S NOTEIn a stunning volcanic landscape, fifth generation producer Diego continues the work of his father. Matching the Pacamara varietal with Black Honey processing delivers elegant fruit and silky sweetness.Store in a cold and dry space.

Crafted for daily exploration, Atlas shines as both filter coffee and espresso, delivering comforting sweetness and the unmistakable character of Central America.ABOUT THE FARMFinca Santa Clara has been producing exceptional coffee in the Antigua Valley of Guatemala since 1930. Today, fourth-generation producer Ricardo Zelaya continues the family's commitment to quality, building on decades of experience that earned the estate the prestigious Cup of Excellence in 2001. Coffee grows between 1,650 and 1,700 metres above sea level on the slopes of Volcán de Agua, where fertile volcanic soils and a cool mountain climate provide ideal conditions for exceptional Arabica coffee. Around a quarter of the estate is preserved as native forest, protecting biodiversity, natural water sources and the healthy ecosystem that supports both the farm and its coffee.ABOUT THE PROCESSRicardo prepares this lot using a traditional washed process, chosen to highlight the clarity and balance of the coffee. After harvest, the cherries are pulped before undergoing fermentation to remove the remaining fruit. The beans are then carefully washed and transferred to African drying beds inside purpose-built greenhouses, where they dry slowly over approximately 21 days. This measured approach allows moisture to leave the coffee evenly, preserving sweetness, enhancing clarity and contributing to the smooth, structured profile found in the cup.ROASTER'S OPINIONIntroducing Atlas: our new Core Coffee. From its birthplace in Ethiopia, coffee journeyed to the volcanic highlands of Central America, where generations of producers shaped one of the most celebrated coffee-growing regions. Atlas is our expression of that legacy. Grown at Finca Santa Clara in Antigua, Guatemala, this single origin coffee offers remarkable sweetness, clarity and balance. Rich volcanic soils, cool mountain air, and generations of expertise create a cup that feels complete. Atlas is our tribute to Central American flavour: a specialty coffee shaped by exploration, craftsmanship, and place.Store in a cold and dry space.

Whole-bean specialty coffee from Guatemala, roasted in Berlin by The Barn. Filter coffee - light roasted, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the notes of vanilla and papaya.Country: GuatemalaRegion: ChimaltenangoFarm: La ColinaProcessing: NaturalVarietal: CaturraAltitude: 1950 m a.s.l.Cupping score: 88 / 100 pointsTHE CUPFreshly picked cherries are transported to the dry mill and sorted, before being placed on raised beds to dry. Natural coffees from La Colina spend about 15 days in direct sun, with 11 hours of sun during the harvest season.ABOUT THE FARMLocated in San Martín Jilotepeque, Chimaltenango, La Colina - The Hill - is named for the steep elevations of the area. Antonio is the third generation of his family to farm here, and began by planting grains and pulses. However, he told us that it has always been his dream to farm coffee, and in 1991, the first coffee tree was planted. Slowly but surely, Antonio increased the number of trees and the production capacity of La Colina. Nine years ago, Antonio built his own processing facilities, and with his focus on quality rather than quantity, he has achieved excellent rankings in the Guatemala Cup of Excellence competition. The coffee grows within a beautiful landscape of oak, cypress, and pine. The farm benefits from multiple streams, with fresh water for irrigation and processing. Only one quarter of his farm is planted with coffee, while the rest remains native forest, certified by the National Institution of Protection of Forests.
