Fertile, volcanic soils, a cool climate, and shade-grown cultivation create ideal conditions for the fruit to ripen, while sustainable farming methods preserve the natural richness of this unique terroir.ABOUT THE PROCESSINGRight at the harvesting stage, only fully ripe, red cherries are selected. They then undergo traditional sorting using the floating method, during which they are submerged in water. The highest-density cherries sink to the bottom, while immature or damaged ones float to the surface and are discarded. This ensures that only the finest raw material moves on to further processing.The next stage is anaerobic fermentation. Whole cherries are placed in tightly sealed tanks, where they ferment without oxygen for a controlled period. Under these conditions, complex aromatic compounds develop, giving the coffee exceptional depth, intense fruitiness, and distinctive, slightly winey notes.After fermentation is complete, the whole cherries are spread out for drying. The pulp remains on the beans throughout this process, gradually transferring sugars and aromatic compounds to them. Slow, carefully monitored drying results in a richer body, enhanced sweetness, and a distinct structure in the brew.Only after reaching the proper moisture level do the dried cherries go to the hulling machine, which removes the dried skin and pulp. The green coffee beans then undergo thorough sorting and quality control before being prepared for export.The result of this demanding process is an incredibly expressive cup. The very first sip brings an intense aroma of elderberry and forest fruits. Moments later, the character of blackberry liqueur and the sweetness of homemade compote emerge, seamlessly transitioning into a juicy, citrus freshness reminiscent of grapefruit and lemon juice. This is a highly intense coffee, created for those who look for bold, full-bodied, and unforgettable flavor experiences in alternative brewing methods.Store in a cool, dry place.

Then, suddenly, it disappeared from our radar and we lost the chance to buy it again—until this harvest, twelve years later, when we cupped an exceptional Peaberry lot at the headquarters of Kenyacof in Nairobi.Guama takes its name from the village where it is grown, located on the western side of Kirinyaga, about 3 km from Kianyaga town, in the southern foothills of Mount Kenya at an altitude of 1,750 meters above sea level. Fermentation was carried out using only fresh river water from the Kaboyo River.This is a washed coffee grown in rich volcanic soil, with a classic Kenyan variety mix of SL34 and SL28—textbook quality in every sense.

We are continuing our series of seasonal releases inspired by fruity classics, and now we are turning to one of the most sought after summer pastries of all: the blueberry bun.FROM THE ROASTERYWhen Karolina asked for a coffee that tasted like a blueberry bun, our thoughts went straight to Burundi. Naturals from this origin can deliver exactly what we were looking for: plenty of dark fruit, pronounced sweetness and a round, smooth structure. Here, the blueberry flavour blends with a sweetness reminiscent of crumble topping, while the dense and velvety texture brings to mind a soft, buttery pastry. A blueberry bun in coffee form, only with caffeine instead of icing.ABOUT THE COFFEEHafi comes from Muyinga Province and from one of the newest washing stations working with JNP Coffee. The name itself means “close” in Kirundi and refers to a very real change in the lives of local producers. Before the station was built, some of them had to travel up to 20 kilometres to deliver freshly harvested cherries to the nearest mill. In the region’s hilly terrain, that journey was often too long for processing to begin on the same day. And the sooner the harvested fruit reaches the station, the easier it is to preserve its quality and the flavour potential of the green coffee.The new station shortened that distance and gave producers better control over freshly picked cherries. Around 2,000 farmers work with it, while the team itself is made up of people who gained experience at other mills across the region. We chose Hafi as a natural once again because everything works together so well here. The process highlights its dark fruit sweetness, gives the coffee a fuller character and moves the profile towards a rounded, dessert like cup.Plenty of blueberries, plenty of sweetness and a body reminiscent of the soft centre of a freshly baked pastry. A summer filter coffee that does exactly what the packaging suggests, without making a fuss about it. And somewhere in the back of your mind, you can almost hear that familiar seaside call: FRESH BLUEBERRY BUNS!Store in a cold and dry space.

They yield good results at high altitudes, but are also susceptible to certain coffee diseases.Batian is a much younger varietal. It was introduced in Kenya in 2010 as a response to issues with Coffee Berry Disease and coffee leaf rust. Its goal was to combine strong quality potential with higher resistance and better productivity.The name of this coffee also includes "AA". This is neither a varietal nor a taste grade. AA is the Kenyan designation for bean size—it applies to the largest fraction separated during sorting.ABOUT THE PROCESSINGThis is where this lot deviates most from what Kii is usually associated with. This is the key to obtaining high-quality coffee beans, as ripe fruit has optimal flavor and aroma.Cleaning and disinfection with purified water: The harvested coffee beans are thoroughly cleaned and disinfected with purified water. This helps eliminate impurities and unwanted microorganisms.Density sorting, or floating: Coffee beans are submerged in water and sorted by density. Higher-density beans tend to sink to the bottom, while lower-density beans float on the surface. This helps separate good beans from defective ones.Thermal shock: Selected beans undergo thermal shock in water at 80°C for 60 seconds, followed by rapid cooling in cold water at 15°C for 3 minutes. This process breaks down sugars and pasteurizes the beans, contributing to the final flavor of the coffee.Pulping in a wet mill and adding mosto: Coffee beans are separated from the skins and placed in fermentation barrels.
