His farm is just around the corner, and the terrace of the washing station offers such an extraordinary view of the valley and Lake Yojoa that if Bill Gates had visited this place, this very landscape would be known worldwide as the Windows desktop background. The Fernandez family (because there is also a second son, Nahun!) is not afraid to play around with processing, and thanks to bold experiments, year after year they deliver some of the best lots in all of Santa Barbara. This is an opinion, not a fact. But also a fact.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMWhat we have here is a 66-34 blend. The Ethiopia was processed as a natural – drying the coffee seeds inside the whole fruit. Freshly picked cherries undergo an initial selection, during which those with defects are rejected. Then, they are spread across so-called African beds – long tables, sometimes stretching for dozens (!) of meters, with a mesh lining that allows for even air circulation throughout the process, resulting in homogeneous drying. The whole process takes between 25 and 30 days, depending on the weather.On the other hand, Javier's lot is a longer-fermented honey – before depulping, the cherries fermented for 96 hours in a tank, and only later were they spread out to dry with a thick layer of mucilage. This technique extracted more deep, fruity-wine notes from the coffee.ROASTER'S OPINIONHere is our concept for this espresso: we created a roast profile that showcases the beautiful notes of flowers and fruits typical of high-quality Ethiopian coffees, but at the same time, on the flip side, offers quite a bit of chocolate-dessert depth, which also balances the acidity and gives the cup equilibrium. Many endemic plant and animal species make up an incredibly diverse ecosystem here.Workers at Santa Barbara can count on stable employment all year round, not just during the season. Everything is done formally here, with a social security package, insurance, and a wage that is significantly higher and fairer in the context of the conditions that usually still prevail in Arabica-producing countries.Interestingly, the farm does not have its own processing station, and the entire process, from fermentation to drying, takes place in... a laboratory in the very heart of the city of Popayan, the capital of the Cauca region.ABOUT COFFEE PROCESSING ON THE FARM The Pink Bourbon variety is hand-picked and, immediately after harvesting, transported in a refrigerated truck (sic!) to the Area 18 station in the center of Popayan. A one-kilogram sample is taken for preliminary analysis, where after obtaining data, such as sugar concentration or density, the decision regarding the final process is made.The cherries are cleaned and sorted, then undergo depulping (separating the seed from the fruit) and are placed in a bioreactor, which allows for full control of the fermentation process and manipulation of variables such as temperature, pH, pressure, or oxygen saturation. The latter stimulates the yeast strains naturally occurring in the fruit – during 48 hours of fermentation, this yeast converts sugars into aromatic precursors, which are responsible for the characteristic floral and fruity notes that lie within the Bourbon Rayado.After fermentation, the coffee is washed three times.Drying takes place mechanically in an advanced laboratory machine, which removes water from the beans to a precisely programmed value in a controlled, even, and repeatable process. They then undergo traditional sorting using the floating method, during which they are submerged in water. The highest-density cherries sink to the bottom, while immature or damaged ones float to the surface and are discarded. This ensures that only the finest raw material moves on to further processing.The next stage is anaerobic fermentation. Whole cherries are placed in tightly sealed tanks, where they ferment without oxygen for a controlled period. Under these conditions, complex aromatic compounds develop, giving the coffee exceptional depth, intense fruitiness, and distinctive, slightly winey notes.After fermentation is complete, the whole cherries are spread out for drying. The pulp remains on the beans throughout this process, gradually transferring sugars and aromatic compounds to them. Slow, carefully monitored drying results in a richer body, enhanced sweetness, and a distinct structure in the brew.Only after reaching the proper moisture level do the dried cherries go to the hulling machine, which removes the dried skin and pulp. The green coffee beans then undergo thorough sorting and quality control before being prepared for export.The result of this demanding process is an incredibly expressive cup. He grew up in Pérez Zeledón under difficult conditions, sharing a small house with his siblings and often going to school hungry. Despite limited opportunities, he and his family built a project based on high-quality specialty coffee production and an increasingly precise approach to processing.Over the past decade, the processes on the farm have evolved from simple, basic methods to consciously controlled production of honey and natural process lots. When the Ethiopian government liberalized export regulations in 2018, which practically opened up opportunities for smallholders to sell their coffee outside the country, Tagel founded the Olkai company and, in addition to exporting, also took over the coordination of the Hambela Goro mill.The coffee comes from 460 small producers in the area, from an impressive altitude of approx. 2,300 meters above sea level. They cultivate the local 74110 variety here, and many of them own only a few hundred trees. With improved water treatment facilities the farm now fully cleans all water before releasing it back into the environment. At the height of the season, when the volume of picked cherries is greatest, beans are sometimes transferred to the neighbouring fazenda belonging to Ivans brother. For their naturally processed lots, the whole cherry is transferred to raised African beds to slowly dry in the sun. Around 1,200 smallholder farmers deliver cherries to the factory for processing, growing mostly SL28 and SL34 cherries between 1,700 and 1,800 meters above sea level. Farmers typically manage small plots averaging 250 coffee trees, which are usually grown alongside subsistence food crops, fruit trees and other crops.ABOUT THE PROCESSCherries are carefully hand-picked before being delivered to Gachami. At the factory, the cherries are carefully hand-sorted to ensure the highest quality. Only the ripest are selected and pulped. After pulping, the coffee is fermented for 16 to 24 hours. The parchment is then washed through grading channels using clean water before being soaked in clean, circulating water for around 24 hours. Recent research has shown that the step also has added benefit to the coffee’s final quality and longevity, adding clarity to the cup. After soaking, the coffee is delivered to dry on raised beds, where it will be turned regularly and covered during the hottest part of the day and evenings to ensure even drying. Needless to say, all these excellent coffees are Arabicas.ABOUT THE VARIETYMeanwhile, the owners of Kiva Estate decided to see what the best possible Canephora from Panama would taste like. For some, this thought is still anathema. Canephora has still not gained the status of a coffee worthy of the best producing countries; in Costa Rica, its cultivation is actually banned.ABOUT THE FARMThe owners of Kiva Estate, a group of long-time friends who make a living from non-coffee professions, treated the project as a challenge – and, as it seems to us, a way to burn through a certain amount of capital (for the sake of the idea). For a year, they traveled around other producing countries, analyzing the differences in the cultivation and processing of Canephora and Arabica. They also gradually gathered the equipment needed for processing and brought a coffee cultivation specialist from Nicaragua to supervise the entire venture. This probably made a lot of sense, because although they are enthusiasts, they live in cities on a daily basis and had no prior experience with cultivation.The first harvest in 2023 immediately brought them publicity during the World of Coffee trade show in Athens. Since then, the fame of Rufina has only been growing, and the Brothers are also jumping on this train.PROCESSINGA few words about the processing – as is often the case with fine Canephora, we have anaerobic processing here. The coffee spent 10 days in fermentation tanks. Then, it underwent slow drying at a strictly controlled temperature. The result: a complex, deep, and delicate flavor.
