MAMAM - Ethiopia Kayon Mountain Natural Filter 250 g

Manufacturer: MAMAM

Roasting date: 16.09.2026

Whole-bean specialty coffee from Ethiopia, roasted by MAMAM roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The flavour of the brew resembles bergamot, vanilla and yuzu.Origin: EthiopiaRegion: Shakiso, GujiFarm: Kayon MountainVariety: HeirloomProcessing: NaturalAltitude: 2100 m a.s.l.Cupping score: 88 / 100 FARM AND REGIONKayon Mountain is a family-owned coffee farm located in Shakiso, in Ethiopia’s Guji region, around 500 kilometres south of Addis Ababa. The farm has been owned and operated by Ismael Hassen Aredo and his family since 2012 and stretches between the villages of Taro and Sewana. The farm covers around 500 hectares, with approximately 300 hectares planted with coffee at elevations reaching 2,200 metres above sea level. The remaining land is largely preserved forest. Coffee grows under the shade of acacia and other indigenous trees, while an on-site nursery is used to cultivate both coffee seedlings and native shade trees.Unlike many Ethiopian coffees, which are produced by combining cherries from numerous smallholders at a central washing station, Kayon Mountain manages both growing and processing on the farm. Ismael works with around 25 permanent employees and more than 300 seasonal workers during harvest. The farm also provides transportation for its workers and supports local communities through funding for schools and administrative buildings.PROCESSINGFor this natural lot, ripe cherries of local Ethiopian varieties are carefully selected before being dried in the sun on raised African beds. Throughout drying, the cherries are regularly turned to ensure even processing and a clean expression of the fruit.High altitude, native varieties and careful natural processing come together in a style that feels unmistakably Ethiopian: intensely aromatic, sweet and fruit-driven, while retaining the floral character and lively acidity Guji is known for.ROASTER'S NOTECoffee from a family-owned farm in Guji, grown at altitudes up to 2,200 metres above sea level. Both harvesting and processing take place directly on the farm, giving the team full control over the coffee from tree to drying. Intensely aromatic, sweet, and fruity – everything we look for in a good Ethiopian natural.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. MAMAM - Kenya Cianda Estate Natural Filter 250 g

Manufacturer: MAMAM

Roasting date: 16.09.2026

Whole-bean specialty coffee from Kenya, roasted by MAMAM roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The flavour of the brew resembles strawberry, red grapes and oange.Origin: KenyaRegion: KiambuFarm: Cianda EstateVariety: SL-28Processing: NaturalAltitude: 1600 m a.s.l.Cupping score: 88 / 100 ABOUT THE FARM AND REGIONCianda Estate is one of Kiambu’s historic coffee farms, established in 1928 just outside Nairobi. Today, the 100-hectare estate remains family-run, with more than 70 hectares planted with coffee - mainly SL28, SL34 and Ruiru 11.Its location makes Cianda increasingly unusual. Kiambu has long been one of Kenya’s traditional coffee-growing regions, known for its rich red volcanic soils and ideal growing conditions. But as nearby Nairobi continues to expand, many of the region’s historic coffee farms have been sold and converted into residential or industrial developments. Cianda remains committed to coffee production.PROCESSING AND VARIETYWhile Kenya is best known for its distinctive washed coffees, Cianda began experimenting with natural processing in response to growing interest in alternative processing methods. For this lot, only ripe cherries of the SL28 variety are handpicked and carefully selected before being spread on raised beds and slowly dried for 20–30 days.SL28 is one of Kenya’s most iconic coffee varieties, originally selected by Scott Agricultural Laboratories in the 1930s. It became widely planted for its ability to thrive in Kenya’s conditions and, most importantly today, for its exceptional cup quality. Here, natural processing shows a different side of a classic Kenyan variety, bringing more sweetness and ripe fruit to SL28’s characteristic bright acidity. Expect a vibrant and juicy cup with berry-like acidity, bold strawberry jam like sweetness and a lingering bittersweet chocolate finish.ROASTER'S NOTESL28 from one of the historic farms in the Kiambu region. Natural processing adds more ripe fruitiness and sweetness to the classic Kenyan profile, while maintaining its characteristic, vibrant acidity.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Whole bean specialty coffee from Guatemala, roasted in Berlin by The Barn. Medium roasted, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods, as well as for espresso. In the cup, you can expect the notes of nougat, plum and honey.Country: GuatemalaRegion: AntiguaFarm: Ricardo ZelayaProcessing: WashedVarietal: Caturra & BourbonAltitude: 1700 m a.s.l.THE CUPAtlas captures the sweet elegance that has made Guatemalan specialty coffee so admired. This washed coffee offers notes of nougat, plum and honey, creating a smooth, balanced and approachable cup. Crafted for daily exploration, Atlas shines as both filter coffee and espresso, delivering comforting sweetness and the unmistakable character of Central America.ABOUT THE FARMFinca Santa Clara has been producing exceptional coffee in the Antigua Valley of Guatemala since 1930. Today, fourth-generation producer Ricardo Zelaya continues the family's commitment to quality, building on decades of experience that earned the estate the prestigious Cup of Excellence in 2001. Coffee grows between 1,650 and 1,700 metres above sea level on the slopes of Volcán de Agua, where fertile volcanic soils and a cool mountain climate provide ideal conditions for exceptional Arabica coffee. Around a quarter of the estate is preserved as native forest, protecting biodiversity, natural water sources and the healthy ecosystem that supports both the farm and its coffee.ABOUT THE PROCESSRicardo prepares this lot using a traditional washed process, chosen to highlight the clarity and balance of the coffee. After harvest, the cherries are pulped before undergoing fermentation to remove the remaining fruit. The beans are then carefully washed and transferred to African drying beds inside purpose-built greenhouses, where they dry slowly over approximately 21 days. This measured approach allows moisture to leave the coffee evenly, preserving sweetness, enhancing clarity and contributing to the smooth, structured profile found in the cup.ROASTER'S OPINIONIntroducing Atlas: our new Core Coffee. From its birthplace in Ethiopia, coffee journeyed to the volcanic highlands of Central America, where generations of producers shaped one of the most celebrated coffee-growing regions. Atlas is our expression of that legacy. Grown at Finca Santa Clara in Antigua, Guatemala, this single origin coffee offers remarkable sweetness, clarity and balance. Rich volcanic soils, cool mountain air, and generations of expertise create a cup that feels complete. Atlas is our tribute to Central American flavour: a specialty coffee shaped by exploration, craftsmanship, and place.Store in a cold and dry space.

The Barn - Guatemala La Colina Washed Omniroast 250 g

Manufacturer: THE BARN

Whole bean specialty coffee from Guatemala, roasted in Berlin by The Barn. Medium roasted, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods, as well as for espresso. In the cup, you can expect the notes of pecan and baked apple.Country: GuatemalaRegion: ChimaltenangoFarm: La ColinaProcessing: WashedVarietal: CaturraAltitude: 1700 m a.s.l.Cupping score: 87 / 100 pktTHE CUPOur washed coffees from La Colina are always well balanced and full of character. This season, expect notes of baked apple, nougat, and pecan. The profile has high sweetness and soft acidity, with smooth milk chocolate flavour that lingers as it cools.ABOUT THE FARMLocated in San Martín Jilotepeque, Chimaltenango, La Colina - The Hill - is named for the steep elevations of the area. Antonio is the third generation of his family to farm here, and began by planting grains and pulses. However, he told us that it has always been his dream to farm coffee, and in 1991, the first coffee tree was planted. Slowly but surely, Antonio increased the number of trees and the production capacity of La Colina. Nine years ago, Antonio built his own processing facilities, and with his focus on quality rather than quantity, he has achieved excellent rankings in the Guatemala Cup of Excellence competition. The coffee grows within a beautiful landscape of oak, cypress, and pine. The farm benefits from multiple streams, with fresh water for irrigation and processing. Only one quarter of his farm is planted with coffee, while the rest remains native forest, certified by the National Institution of Protection of Forests.ABOUT THE PROCESSUsing spring water from the farm, this lot was fully washed, then sun-dried on patios. Consistent sunshine during harvest allows even drying of coffee and the clean richness we love in our Guatemalan portfolio.ROASTER'S OPINIONFor the fourth season, we are sharing coffee from Antonio Medina, whose La Colina estate has become a favourite feature of our Guatemalan portfolio. Perfect for both espresso and filter, this washed Caturra lot offers smooth, balanced sweetness. Notes of baked apple, toffee, and pecan are made for Autumn!Store in a cold and dry space.

Trigger - Banger Brew Rose Donut Wet-Hulled / Co-fermented Washed Filter 250 g

Roasting date: 14.09.2026

Whole-bean specialty coffee from Indonesia and Colombia, roasted by Trigger roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of donut with rose.Country: Indonesia / ColombiaRegion: Sumatra / HuilaFarm: Simalem Specialty Coffee / AmberaProcessing: Wet-Hulled / Co-fermented WashedAltitude: 1600 / 1700 m a.s.l.Variety: Catimor / Pink BourbonCupping score: 87 / 100ABOUT THE COFFEEBanger Brew Pączek z Różą (Rose Donut) is a blend of coffees from Indonesia and Colombia, combining wet-hulled processing and co-fermentation with rose water, roasted for filter brewing. Floral, sweet, and a bit surprising – exactly how Banger Brew should work. The Indonesian base provides sweetness and a full body, characteristic of wet-hulled coffees, while the Colombian co-ferment with rose water does exactly what the name suggests: turns your batch brew into a liquid rose-filled donut! Clean, smooth, and exceptionally drinkable in large quantities. It works best in a batch brew, where the jammy, floral character has room to spread its wings without excessive acidity.ROASTER'S OPINIONBanger Brew Pączek z Różą is a coffee that makes people stop and ask in surprise, "what is this?!". The co-fermentation with rose water is noticeable, yet subtle – floral, but not perfumy, sweet, but not over the top. The wet-hulled Indonesian base provides a fuller body and makes the blend extremely drinkable. A batch brew with personality, but still slightly nonchalant.V60 RECIPEwater temperature: 92 degrees Celsius, 300 g water, 20 g coffee, grind size 7.2 (Fellow Ode II)Pre-infusion 75 g water pouring: 0-0:10,150 g water pouring: 0:30-0:40,225 g water pouring: 1:00-1:10,300 g water pouring: 1:30-1:40. All the water should finish drawdown around 2:20 - 2:30.Store in a cool and dry place.

Roasting date: 09.10.2026

Whole-bean specialty coffee from Ethiopia, roasted by Trigger roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of kumquat, dark oolong and lemon.Country: EthiopiaRegion: DjimmaFarm: local farm from GeraProcessing: WashedAltitude: 1950-2050 m a.s.l.Variety: HeirloomCupping score: 87 / 100ABOUT THE COFFEEGera Station = five brothers, a family business, and 2,050 meters above sea level. The Gera washing station is located in the Gera woreda in the Djimma region of Ethiopia – run by five brothers, second-generation producers who took over from their parents 5 years ago. Year-round, 20 people work here, and during the harvest season from October to December, this number increases to 80. The coffee grows in the shade of Abyssinian banana trees, cultivated using organic methods by many local smallholder farmers without synthetic fertilizers. Ripe cherries are hand-picked by seasonal workers, and after processing, they are sun-dried for 12–16 days until reaching the ideal moisture content. Kumquat and lemon give it a lively, fresh acidity, while dark oolong provides the brew with a structure and depth not always expected from a washed Ethiopian coffee. A coffee that surprises – in a positive way.ROASTER'S OPINIONGera is a washed Ethiopia with a character that is hard to miss. Kumquat and lemon build a bright, lively acidity, while dark oolong keeps it all in check and gives the cup a tea-like structure. Clean, precise, and with personality. An unexpected choice that is hard to put down.V60 RECIPEwater temperature: 93 degrees Celsius, 300 g water, 21 g coffee, grind size 7.2 (Fellow Ode II)Pre-infusion 75 g water pouring: 0-0:10,150 g water pouring: 0:30-0:40,225 g water pouring: 1:00-1:10,300 g water pouring: 1:30-1:40.All the water should finish drawdown around 2:20 - 2:40.Store in a dry and cool place.
