Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on small, multi-hectare farms in the El Tambo microregion, located west of Popayán, the capital of the Cauca department.PROCESSINGA single-variety Castillo, hand-harvested and depulped immediately after the cherries are picked. The beans are fermented for approximately 36 hours in a tank, then washed three times to completely remove any remaining mucilage from the parchment. They are slow-dried for around 15 days on raised beds, then homogenized and stabilized for several more days.ROASTER'S OPINIONYou can’t drink the same blend twice. El Vergel grows more than 28 different coffee varieties and is the first farm in Colombia to develop the Koji fermentation process, a technique that has completely revolutionized green coffee production.Pink Bourbon is a unique coffee variety, known for its unusual pink-colored cherries. Its captivating and complex flavor profile is characterized by floral notes, fruitiness, juicy acidity, and honey-like sweetness.This exceptional coffee was produced using a method developed at El Vergel Estate, employing Aspergillus oryzae, a fungus renowned for its ability to enhance flavor profiles. The innovative process involves cultivating the fungus on steamed rice for 3–4 days. Once fully developed, the rice is harvested, dried, and ground into a fine powder. This powder is then evenly spread over coffee cherries placed on raised beds. Ensuring oxygen exposure is crucial, as it enables the fungus to grow and transform the fruit.During a 24–72 hour aerobic fermentation, the koji culture develops, covering most of the cherries and intensifying their flavor complexity. After fermentation, the cherries are dried in two stages: first for 10 days under the sun, followed by 2–4 days of mechanical drying at a controlled temperature not exceeding 38°C to preserve the coffee’s delicate characteristics. Initially, they grew avocados, and since 2009, they have been experimenting with coffee cultivation. Natural drying processes were introduced, and research began on bacteria and yeast that control fermentation (including the Koji strain). Currently, over 28 different coffee varieties are grown there.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, particularly in Central America, where it was introduced to cultivation in the 1940s. This variety also played a significant role in breeding coffee trees resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. The Red Caturra variety is characterized by an intense aroma and a rich flavor profile. On the other hand, Yellow Caturra is a subtle coffee variety with bright, yellow beans. It is characterized by a mild flavor profile.ABOUT THE PROCESSINGSugarcane is a unique type of fermentation resulting in more intense fruity notes. After the fermentation is complete, caffeine is removed through an extraction process in special containers, where it is washed with a mixture of water and ethyl acetate. The harvest season runs from April to December and is based on selective hand-picking to maintain consistent quality and uniformity of the cherries.ABOUT THE COFFEEGesha is a variety strongly associated with exceptional quality and a very high sensory potential when grown at high altitudes. It is also a low-yield variety, which means that even with high demand, it remains genuinely limited on the market. For years it has consistently won the most prestigious coffee competitions and achieved record-breaking results at international auctions.This lot is processed using a washed method with extended, controlled fermentation. The harvest is done manually and selectively, in cycles roughly every 20 days, using only fully ripe cherries.After harvesting, the cherries ferment in bags for about 12 hours. They are then transferred to a hopper, where the initial oxidation stage is completed. The coffee then undergoes flotation, followed by depulping and an extended fermentation of approximately 200 hours in tanks or vats.After fermentation, the coffee is washed using either a portable washing unit or an Ecomill system. It is then dried on raised beds for 15–17 days and stabilized in GrainPro bags for 10–15 days. Fazenda Mundo Novo is not just a random address on the map, but a place with a clearly established work standard.Although the farm's name is Mundo Novo (also the name of a botanical variety), the variety of this specific lot is Yellow Catucaí. It is valued for its sweetness, good structure, and a clean, organized sensory profile.This is a natural process managed with great control. The cherries were hand-picked at the optimal moment of ripeness and then spread in a thin layer on the patio that same day to begin drying.
