Fast forward and a whole region has been transformed, with neighbours collaborating and following the best possible farming practices. Named after the Brazilian Roadrunner which is native to the area, Ivan and Roses Sitio Seriema farm is a model of modern, responsible coffee production. We first tasted coffees from the family in 2014 and they have helped change our perception of Brazilian coffees. With a high proportion of Brazilian coffee produced at the lower ‘commodity’ standard, it has been an intriguing journey to see the beautiful terroir of the country properly expressed. Our relationship with Ivan and Rose has grown over the years and we have started investing in upgrades at their farm. With improved water treatment facilities the farm now fully cleans all water before releasing it back into the environment. Working with FAF, this project is now spreading across the region: helping to deliver a more sustainable model of coffee production.ABOUT THE PROCESSThis lot underwent fermentation for 36 hours: the whole cherries are sorted and cleaned, before being placed in a sealed anaerobic environment. The fermented cherries were then dried on patios with the whole outside cherry intact. The anaerobic process is a great match for the terroir of Brazil, bringing superb depth to the profile.ROASTER'S OPINIONThe first anaerobic lot we have featured from our partners Ivan and Rose dos Santos. After sorting by hand and then floatation, the best quality cherries are transferred to raised African drying tables for 3 to 4 weeks. This lot comes from the Planadas region in Tolima, Colombia – grown at an altitude of 1500–2150 meters above sea level on volcanic, clay soil by about 175 families gathered in local agricultural associations. Tolima regularly appears in the Cup of Excellence, and for good reason – the region delivers coffees with a distinct character and a clean profile. The coffee is decaffeinated using the sugarcane ethyl acetate method – not chemically, but using a natural solvent derived from sugarcane. The green beans enter a steam chamber, are then soaked in spring water, and spend 8 hours in direct contact with ethyl acetate, which dissolves the caffeine while leaving the rest untouched. The result: coffee that tastes like coffee.ROASTER'S OPINIONEl Indio is a decaf that doesn't act like a decaf. Lime acidity, red fruits, and a chocolate finish – everything is in place, only caffeine is missing. El Diviso is one of the most acclaimed farms in the Colombian specialty coffee industry, known for combining traditional cultivation knowledge with a scientific approach to fermentation and drying. The Bourbon Sidra undergoes a multi-stage natural process: after selective hand-picking and flotation, the cherries undergo a 36-hour oxidation process, followed by a 48-hour anaerobic fermentation. Next, the leachate from the cherries is collected and reused in a subsequent 36-hour submerged fermentation with continuous recirculation, finished with a thermal shock. Drying takes place in sealed, air-conditioned stainless steel dehumidifying equipment to preserve all aromatic compounds.ROASTER'S OPINIONPineapple, lychee, and melon give the coffee a distinct, multi-layered fruity character, while the delicate acidity of mandarin orange makes the whole cup crisp and full of life.
