Intense, juicy, and multidimensional — it tastes like thick blackcurrant juice with a touch of drunken cherry, elderflower syrup, and rosehip. In the cup, you will find plenty of fruity sweetness, depth, and a slightly winey character that develops beautifully as it cools. This batch is exceptionally intense and expressive. The aroma alone resembles a thick fruit liqueur: wild berries, currant juice, drunken cherry, and rosehip flowers. The flavor also features the characteristic sweetness of elderflower syrup, giving the whole profile an almost tea-like and floral finish.ABOUT THE PROCESSINGThis incredibly juicy profile is primarily the result of the anaerobic natural process — a method that requires immense control and experience. Only ripe, red coffee cherries are used after harvesting. Next, the whole cherries are placed in tightly sealed bags, where they ferment for 100 to 120 hours in an oxygen-free environment. The absence of oxygen completely changes the course of fermentation — different groups of microorganisms develop, creating compounds responsible for more winey, intensely fruity, and floral flavor notes.After the fermentation is complete, the cherries are spread out on raised drying beds. There, the coffee dries for about 15–20 days. During drying, the cherries are regularly turned to ensure the process runs evenly and without the risk of over-fermentation or the appearance of unwanted notes. It is this long and controlled drying that stabilizes the flavor profile and preserves the immense intensity of the aromas while maintaining a clean cup.The result? She took over the property from her former husband as part of a land division. Today, she runs the farm together with her husband Libardo, focusing on quality at every stage, from cultivation to processing.The plantation is located on fertile, volcanic clay soil that provides excellent conditions for coffee plants to thrive. In addition to coffee, Miriam and Libardo also grow plantains and cassava. They place great importance on selective harvesting. Workers pick only fully ripe, red cherries. To maintain high standards, they offer better pay rates and free meals.After harvesting, the coffee cherries are placed in water tanks, where lighter and underripe fruits are separated. The coffee is then transferred to a dedicated drying facility, where the beans are regularly turned to ensure even drying until optimal moisture content is reached.ABOUT THE COFFEEPink Bourbon is a variety with exceptional sensory potential. For a long time, pink cherries were believed to be a hybrid of Red and Yellow Bourbon. However, recent research suggests that this variety does not belong to the Bourbon group. Its origins are very likely linked to Ethiopian landrace varieties.As a result, Pink Bourbon combines characteristics of high-quality varieties such as Gesha, while also showing greater disease resistance than classic Bourbon, with which it often grows on the same farms. In the version prepared by Miriam Quesada, the coffee underwent natural processing. Hand-picking only ripe cherries ensures remarkable uniformity of the raw material.After initial cleaning, the cherries are placed in water tanks, where they rest briefly to allow separation of underripe or damaged fruit. The coffee is then dried in a specialized dryer, where controlled temperature and humidity, along with continuous rotation of the beans, ensure an almost perfectly even process. Finally, the beans are separated from the remaining fruit material and packed in GrainPro bags. The Pink Bourbon coffee prepared in this way is then exported to the European market.ROASTER’S OPINIONPink Bourbon is a variety we reach for almost every time it appears in importers’ offerings. We highly value it in both washed and natural versions. Each one reveals a completely different side of the same variety, while consistently delivering a lot of enjoyment. In this case, we are dealing with a bold, expressive natural that stands out from the very first contact.The aroma is rich and evocative, dominated by notes of almonds, juicy stone fruits, and fresh pink grapefruit. In the background, there is a distinctive sweet “purple” note reminiscent of fruity candies like Skittles. Sugary, joyful, hard to define precisely, yet undeniably pleasant.On the palate, the coffee unfolds in layers. Up front, there is an intense, fruity sweetness of peach and plum, complemented by a deep, slightly sticky molasses note. The acidity is gentle and smooth, well integrated into the overall profile, while the full body gives the coffee a creamy texture. Everything is beautifully balanced and highly drinkable. The finish is long, sweet, and complex, leaving a pleasant fruity and candy-like impression on the palate. This is a very successful, well-crafted Pink Bourbon that lingers in the memory.BREWINGUse your favorite method and recipe. Although it will not put you on your feet, it is a ticking fruit bomb. Decaf coffees have long had their place on our shelves and in our hearts, but this one quickly turned our habits upside down. From the very first encounter, it delivered a juicy punch straight to the taste buds. Is this really a decaf? This fruity? This expressive? We could not walk past it indifferently, nor resist sharing what the renowned Nogales farm is doing with caffeine free coffee. Nogales is a family run farm led today by Oscar Hernandez, a third generation farmer from Huila, who has been breaking coffee conventions for years, a mindset confirmed by a Cup of Excellence win in 2006.For the sensory description, we limited ourselves to three descriptors, although the truth is that the profile could easily hold almost an entire palette of Mamba like flavours. The cup is complex and intense, hard to confuse with anything else. A pronounced sweetness is supported by well balanced acidity and a round body. If you enjoy fruit forward profiles, avoid caffeine and do not want to give up either, these beans are made for you.The processing begins in a classic way. Hand harvesting, flotation to separate only ripe cherries, followed by 24 hours of fermentation and thorough washing. The coffee is then gently dried on raised beds until it reaches the desired moisture level.Only then does the decaffeination begin. First, the beans are immersed for four hours in hot water at 40°C, allowing the caffeine to be extracted. This step is repeated twice. Next, a natural must is used, an extract obtained from the husk and pulp of the coffee cherry. The entire process relies solely on components derived from the coffee itself.
