What we have here is the essence of Rwandan terroir – the cherries ripen on mineral-rich volcanic soils and at impressive altitudes exceeding 2000 meters above sea level. Nova Coffee, in turn, is the washing station and export company owned by Agnes and Felix Mukamushinja, who coordinate the entire enterprise. In 2024, they won first place in the prestigious Best of Rwanda competition with their coffee.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMAll the fruit is harvested by the female producers by hand and with great care – years of practice and training have borne fruit (pun intended) in an extremely selective picking, resulting in perfectly ripe cherries. The lot is processed as a "classic" washed coffee. The fruit undergoes depulping, after which it goes into a tank for over 24 hours where fermentation takes place. This is followed by washing and then straight to drying.ROASTER'S OPINIONIt is no coincidence that we are hosting Bukure for another season in a row – this is a textbook example of a Rwandan coffee pampered at every stage. It brings together 160 small producers living in the Mbozi region, less than 70 km from the border with Zambia. Recently, in 2019, the cooperative built a central washing station, thanks to which all harvested cherries are processed on-site. Naturally, this boosted the quality of the final product and made exporting outside Tanzania easier – and as a result – increased the cooperative's profit.ABOUT THE PROCESSING OF COFFEE BEANS ON THE FARMThe Bourbon variety, hand-picked, is delivered on the same day to a small washing station owned by the cooperative. After the depulping process, which separates the seed from the fruit, it is sorted by bean size and then separately fermented in a tank for 10 hours. Washed and dried on raised beds for 10 days.ROASTER'S OPINIONOne could say that high-quality lots from Tanzania are a wonderful rescue that comes outside the fresh Kenya season. Jammy, fruity, and juicy. And that is exactly the case here. We are happy to put Itumpi into the roaster for another year in a row!Store in a cool and dry place.

Anaerobic processing delivers an amazing array of flavour, from guava, mango, and strawberry, to dark chocolate and cola. Fruity sweetness that really lingers on the palate.ABOUT THE FARMEl Vergel is a family operation of two brothers, Elias and Shady, and their mother Marta. Located in Fresno, Tolima, they started as an avocado farm. In 2012 both brothers saw the opportunity to utilise their land to grow specialty coffee. Situated on the slopes of the snowcapped Nevado del Ruiz volcano, the farm benefits from a unique microclimate. Starting with Caturra and Castillo, it was not long before they started expanding their collection of varietals to fully explore the amazing terroir at their disposal. Soon, they were planting Tabi, Pink Bourbon, Pacamara, and Gesha, to name a few. Through experimentation and collaboration, the Bayter family have sought to discover new expressions of Colombia flavour and are renowned for their adaptation of modern processing techniques.THE PROCESSGuava Banana coffee begins with the careful selection of ripe Red and Yellow Caturra cherries. The cherries first undergo a 48 to 60-hour anaerobic fermentation, bringing intense character to the profile. The whole cherries are then dried in the sun on covered raised beds - ""Marquesina"" - until they reach 30% moisture. Then, the cherries are moved to mechanical drying in circular dryers at temperatures below 45°C until they achieve 18%-16% moisture. After a pre-stabilisation stall to intensify flavours, the drying process is completed until optimal moisture is achieved. The beans are then stabilised for 45 days in GrainPro bags, ensuring consistency and quality.Store in a cold and dry space.

Each farmer owns a farm ranging from about 1/5 to 1/3 of a hectare and delivers coffee to the station in the form of freshly harvested cherries.Kenyan microlots can be traced back to a specific processing station, and whenever possible, to an individual farm. They are selected based on the evaluation of coffee quality during cupping. Since most Kenyan growers own between 1/8 and 1/4 of a hectare of land, the harvested cherries usually go to a local station, where they are sorted and processed. Deliveries from various farmers are combined there and processed into batches covering the harvest delivered on a given day.Due to the huge number of samples requiring evaluation, our green coffee buyer usually stays in Kenya throughout the entire harvest period. From the evaluated batches, they select the best ones, which we then purchase as microlots consisting of fewer than 100 bags.ABOUT THE PROCESSINGMost coffee in Kenya comes from smallholder producers delivering cherries to processing stations that specialize primarily in fully washed coffees. Larger estates are also known mainly for producing coffees processed using this method. The washed process may vary slightly depending on the location, but it typically includes a soaking stage characteristic of Kenya. Ripe coffee cherries are picked and depulped on the very same day. The beans then ferment for 24–48 hours in open concrete or cement tanks. After fermentation, they are thoroughly rinsed in water channels and then soaked in water for 12–72 hours. Finally, they are spread out on raised beds to dry.Store in a cool and dry place.

In the cup, you will find juicy lemon and lime, a delicate jasmine aroma, and an elegant finish reminiscent of black tea. Clean, light, citrusy. In the cup, fresh notes of lemon and lime dominate, giving the coffee juiciness and a pleasant energy. They are accompanied by a subtle jasmine aroma, and the whole closes with a long, gently dry aftertaste reminiscent of black tea. This is a coffee of medium intensity, very harmonious and extremely pleasant for daily brewing.ABOUT PROCESSINGThere are coffees that surprise with exotic fermentations and intense fruit notes. This Ethiopia takes a completely different path. It is a classic example of a perfectly prepared washed coffee, where flavor clarity, clear acidity, and elegant complexity are what matter most.Behind its profile stands one of the most valued processing methods – washed – which allows to bring out the natural character of the beans and highlight the terroir of Ethiopia. The process begins with the hand-picking of exclusively ripe, red coffee fruits, which reach the washing station on the same day. There, the cherries are thoroughly sorted, and unripe or damaged fruits are discarded.Next, the fruits pass through a depulper, which separates the skin and most of the pulp from the bean. The beans covered with a thin layer of mucilage go into fermentation tanks, where for about 36–48 hours natural enzymes break down the remaining pulp. This is a crucial stage – properly controlled fermentation builds flavor clarity, distinct acidity, and the characteristic tea-like elegance of Ethiopian coffees. After fermentation is complete, the beans are thoroughly rinsed in clean water to completely remove any remaining mucilage. Next, they go onto African raised beds, where they dry under natural conditions. During drying, they are turned regularly so that moisture evaporates evenly, and the beans maintain high quality and stability. Upon reaching the appropriate moisture level, the coffee rests in parchment before being prepared for export. The result is an exceptionally clear and elegant cup – exactly what you can expect from a classic washed Ethiopia. If you appreciate coffees full of freshness, citrus energy, and floral finesse, this offering will be an excellent choice for V60, Origami, Kalita, or Chemex.Store in a cool, dry place.

The whole is complemented by the aroma of a fresh rhubarb sweet bun, giving the coffee a dessert character. This is a profile full of sweetness, juiciness, and a creamy texture that will perform perfectly in filter methods.ABOUT PROCESSINGThis unique character is primarily due to natural processing, which requires immense precision and patience at every stage. The process begins with the hand-picking of exclusively fully ripe coffee fruits. Every cherry is carefully selected, because in the natural method, the entire fruit remains on the bean throughout the entire drying period. Even a small proportion of unripe or damaged fruits could negatively affect the final coffee profile.Upon arrival at the processing station, the fruits undergo flotation sorting. The cherries go into water tanks where lower-density, damaged, or unripe fruits are removed. Next, a manual selection is carried out so that only the highest quality fruits move on to the next stage. The next step is drying the whole fruits on raised African beds. This is the most important stage of the whole process. For about 3–5 weeks, the fruits slowly release moisture, remaining whole along with the skin and pulp. During this time, natural sugars and aromatic compounds gradually penetrate the beans, building characteristic sweetness and a rich flavor profile.During drying, the fruits are turned regularly to ensure even moisture evaporation and to prevent uncontrolled fermentation. During the hottest hours of the day and during rainfall, the beds are covered, which allows stable drying conditions to be maintained and preserves the high quality of the beans.Upon reaching the appropriate moisture level, the coffee goes to a warehouse where it undergoes a stabilization stage (resting). Thanks to this, moisture is evenly distributed inside the beans, which translates to greater stability during transport and subsequent roasting.Only at the very end are the dried skin and pulp mechanically removed, and the beans undergo a final selection in terms of size, density, and quality. Coffee prepared this way goes to the roastery, retaining the full extent of its fruity character. If you like filter coffees with a distinctly fruity, sweet, and dessert profile, Ngororero Natural will be a great choice. This is a coffee that shows how much Rwanda can offer when producer experience meets precisely executed natural processing.Store in a cool, dry place.

The four-hectare farm, entirely planted with coffee, belongs to Laureano Gómez — a second-generation producer and former teacher who decided to leave his career in education to fully dedicate himself to developing the family farm and producing specialty coffees.Laureano brought back to life an estate that had been neglected for years, building a project based on quality, experimentation, and a conscious approach to production. Together with his brother, he is responsible for both the daily work on the farm and the sale of their coffees. On different plots, he cultivates varieties such as Gesha, Pink Bourbon, and Castillo, constantly developing processing methods to search for even higher quality coffee. This specific lot of Gesha was selected from among the best coffees in the Nariño region during the La Mejor Taza de Nariño competition. It then went to the auction of the best lots, where it was won by Adam Laska — co-owner of the KAFAR roastery — who had previously participated in the competition as a judge.ABOUT THE PROCESSINGThe processing starts with the manual harvesting of fully ripe cherries. Next, the coffee undergoes a four-day anaerobic fermentation in sealed jute bags kept in the cool climate of the Alta Clara region. The next stage is an eight-day anaerobic fermentation in airtight steel tanks, which deepens the sweetness, texture, and complexity of the sensory profile. After fermentation, the coffee is dried for 15–20 days in parabolic dryers, which ensures uniform airflow. The final stage is manual selection and a 15-day stabilization period in jute bags.In the cup, the coffee presents an elegant and refined character with notes of guava, sweet cherry, and muscovado sugar, supported by a creamy texture and a long, sweet finish. This is a limited lot created for the most demanding consumers who brew coffee using filter methods.Store in a dry and cool place.

This washed coffee offers notes of nougat, plum and honey, creating a smooth, balanced and approachable cup. Crafted for daily exploration, Atlas shines as both filter coffee and espresso, delivering comforting sweetness and the unmistakable character of Central America.ABOUT THE FARMFinca Santa Clara has been producing exceptional coffee in the Antigua Valley of Guatemala since 1930. Today, fourth-generation producer Ricardo Zelaya continues the family's commitment to quality, building on decades of experience that earned the estate the prestigious Cup of Excellence in 2001. Coffee grows between 1,650 and 1,700 metres above sea level on the slopes of Volcán de Agua, where fertile volcanic soils and a cool mountain climate provide ideal conditions for exceptional Arabica coffee. Around a quarter of the estate is preserved as native forest, protecting biodiversity, natural water sources and the healthy ecosystem that supports both the farm and its coffee.ABOUT THE PROCESSRicardo prepares this lot using a traditional washed process, chosen to highlight the clarity and balance of the coffee. After harvest, the cherries are pulped before undergoing fermentation to remove the remaining fruit. The beans are then carefully washed and transferred to African drying beds inside purpose-built greenhouses, where they dry slowly over approximately 21 days. This measured approach allows moisture to leave the coffee evenly, preserving sweetness, enhancing clarity and contributing to the smooth, structured profile found in the cup.ROASTER'S OPINIONIntroducing Atlas: our new Core Coffee. Rich volcanic soils, cool mountain air, and generations of expertise create a cup that feels complete.
