He gained his knowledge working with his father, and today he runs a 12.6-hectare farm, which is the main source of income for his family. Additional income is provided by cattle trading and a shop run by his wife, Alicia Trigueros.ABOUT THE PROCESSINGThe harvested cherries are taken to the Ayarza Cherry Mill in the Santa Rosa region, where they are centrally selected, fermented, and dried. As a result, the entire process takes place under strict control. The lot consists of the Bourbon, Catuai, Pache, and Anacafe 14 varieties grown at an altitude of 1,600–2,000 meters above sea level.Only fully ripe cherries from the highest parts of the plantation are selected for processing. They undergo anaerobic fermentation for 120 hours in sealed bags equipped with a carbon dioxide release valve. Next, they dry on a patio for about ten days, after which the process is finished in a mechanical dryer down to a moisture level of 11.5%.The combination of long fermentation and precise drying yields a coffee with a smooth, sweet character, in which fruity notes harmoniously blend with marzipan and milk chocolate.ROASTER'S OPINIONThis Guatemala proves that a long, 120-hour anaerobic fermentation does not have to mean an intensely fermentative, dominant profile. Instead, it offers exceptional balance, a velvety texture, and a distinct, natural sweetness that makes every cup remarkably enjoyable and harmonious.Notes of almond marzipan and dried apricots emerge in the foreground, creating a warm, dessert-like base. They are accompanied by juicy blackberries that bring a fruity freshness, while creamy milk chocolate rounds out the whole profile, leaving a long, sweet finish. The flavors intertwine smoothly, creating a complex yet very approachable profile.This is an anaerobic natural with an elegant character – full of depth, yet free from excessive fermentativeness. The result is a coffee of medium intensity, with clear yet perfectly balanced acidity and a long, juicy finish.ABOUT PROCESSINGThe beans underwent washed processing – a method valued for emphasizing the natural characteristics of coffee and exceptional clarity of flavor. After harvesting, the ripe fruits go to the washing station, where they are sorted and then mechanically separated from the pulp. The beans ferment in water tanks, which allows the remaining fruit layer to be removed. After fermentation is complete, they are thoroughly rinsed and dried on African beds until the appropriate moisture level is reached. Arabica, canephora, liberica. But here we have to throw our hands up and say – it's a matter of debate. Excelsa was discovered in 1903 and since then was considered a separate species. In 2006, its official classification was changed to a variety of liberica. However, many farmers and researchers dispute this decision, pointing to many characteristics unique to excelsa.We won't resolve this dispute. However, we can say with great certainty that, like liberica, excelsa has a unique flavor profile not found in other species. Sage, licorice, exceptionally high sweetness. You can't miss it. Very to the point – the name Si Unyil Manis translates to "the sweet little one".ABOUT THE CULTIVATIONIn coffee, you often hear claims about sustainable and biodiverse farming. Often these are empty words. Meanwhile, excelsa is perfect for precisely these conditions. It gladly grows in the shade of other trees, among many plant species. Si Unyil Manis is cultivated in an equatorial forest, alongside banana trees, tobacco, and tall shade trees. Compared to the nearby oil palm plantations, this is an incredibly vibrant ecosystem.ABOUT THE PROCESSINGThe producer of this coffee, Rainaldi, specializes in excelsa like few others. For years, he has been searching for processing methods that allow full expression of this species' (variety's?) flavor notes. In this case, the full name of the process is "anaerobic thermo soaked natural". In practice, this means that after harvesting, the fruits were given a warm bath, from which they went into fermentation tanks. Further processing is classic natural drying. The warm bath helps eliminate some of the naturally occurring bacteria and fermenting yeast. This results in a more stable and repeatable anaerobic process.ROASTER'S OPINIONA mystery coffee. Is this another – now the fourth species of coffee plant in our offer? Maybe yes, maybe no. But we guarantee that while drinking it, you won't be puzzling over it, because the coffee is spectacular even without mysteries.We were looking for a promotional slogan for this coffee. The cherries fermented for about 12 days (around 300 hours) under controlled conditions and were then slowly dried on raised beds for 35 days until reaching 12% moisture.The result?
