ABOUT THE COFFEE

Bright, fruity, and clean in taste. It is characterized by a vibrant tropical note with a citrus accent, while remaining balanced and very pleasant to drink. This lot comes from the Chire district in the Sidamo region of Ethiopia, where it is grown at an altitude of 2236 meters above sea level – one of the highest elevations in the region, which contributes to the clarity and brightness of flavor in the cup. It is produced by Girma Shonte on his 2.5-hectare family farm, using agroforestry techniques that provide natural shade and support soil health. Girma, his family, and seasonal workers hand-pick only ripe, red cherries, which are then placed on raised beds and regularly turned to ensure even drying. The entire process takes between 15 and 20 days, resulting in a clean and expressive natural coffee.

ROASTER'S OPINION

Girma Shonte is a classic Ethiopian natural coffee with a bright, tropical, and very approachable flavor profile. Tropical fruits and mandarin orange give it a distinct, citrusy character, while milk chocolate adds delicacy and balance. The brew is sweet, clean, and expressive, and its vibrant acidity perfectly binds all the components together. It is distinct, yet smooth and sessionable – a great everyday Ethiopia.
