The washing station is located on the slopes of Mount Kenya near the town of Kangema, and the coffee cherries harvested by 980 farmers who are members of the cooperative are processed here.Fun fact: Like many other Kenyan coffees, coffees from the Githiga station undergo a double washing process. After the ripe cherries are separated from defective, unripe, and overripe ones, they are wet-processed using clean water from the Githiga stream.

It serves a total of 513 active farmers (349 men and 164 women), each owning on average 300 coffee trees and about 0.5 acres of land. In addition to coffee, farmers near their plantations also grow macadamia nuts, bananas, and maize. Karindundu supports farmers by advising them on practices such as using organic fertilizers and pruning their plants. The station also operates a demonstration plot where these methods can be observed in practice.Fun fact: After harvesting ripe coffee cherries, farmers deliver them to Karindundu, where they undergo a traditional washed process. The coffee is depulped, fermented overnight, washed, and then placed on raised drying beds, where it dries until it reaches the desired moisture level.

They inherited their farms from their parents and creatively evolved their cultivation and processing methods. They have been working with specialty coffee since the early 2000s and achieved legendary status long ago. Year after year, they produce the highest quality green beans, serving as pioneers not only of specialty coffee in Honduras but also of new processing techniques. They were the ones who successfully adapted natural processing to the challenging climatic conditions of Honduras.The Caballero family owns nearly 200 hectares of land divided into 17 different farms in the Marcala region of eastern Honduras. All their operations are centered at a central washing station – Xincala. This is where all the cherries they harvest are processed. The family constantly invests in the station's development, making it possible to continuously improve quality.Marysabel and Moises's farms feature clay-like soil, and the main variety they grow is Catuai, though they also have Java, Pacamara, and Geisha trees.ROASTER'S OPINIONWe roasted our first naturals from Caballero in 2020. A lot has changed since then. Back then, the processing still had its flaws; there were many heavily over-fermented beans that roasted darker than the rest, creating a slight "muddiness" or what some called "tarriness" in the cup. Today, that is completely gone. This is a sweet, jammy, and thick natural, yet remarkably clean and transparent at the same time. We were fans of those coffees back then, but now we are truly blown away.

Thanks to the natural processing method, the coffee retains intense sweetness and aromatic complexity.The secret behind this coffee's character lies in the natural process, one of the oldest methods of preparing coffee beans. The process begins with the hand-picking of fully ripe coffee cherries. Selection at this stage is crucial, as only perfectly ripe cherries ensure the subsequent sweetness and clarity of flavor.After harvesting, the fruit undergoes an initial selection to remove unripe or damaged cherries. Water tanks are often used for this purpose – lower-density fruits float to the surface and are discarded, while the highest-quality cherries sink to the bottom and proceed to the next stage of production.Next, the whole fruits—complete with skin and pulp—are spread in a thin layer on raised drying beds. This is where the most critical part of the natural process begins. For several weeks, the fruit slowly dries in the sun, allowing the sugars and aromatic compounds from the pulp to permeate the beans inside. This stage is responsible for the characteristic sweetness, fruitiness, and intense aroma.During drying, the cherries are regularly turned to ensure even moisture evaporation and to prevent uncontrolled fermentation. Farmers closely monitor the temperature and drying time, which typically lasts from two to even four weeks. Once the fruit reaches the correct moisture level, they resemble hard, dried coffee cherries.Only at the end of the process are the dried fruits sent to the mill, where the dried skin and pulp are mechanically removed. This yields the green coffee beans, ready for sorting, grading, and export.Thanks to this slow, natural process, the beans from Nyamyumba acquire exceptional sweetness and aromatic depth. In the cup, this translates into an elegant flavor profile where linden flowers meet honey sweetness, while notes of Damson plum and cherry add a juicy, fruity structure. This is a calm, harmonious Rwanda that demonstrates how delicate and simultaneously aromatic natural-processed coffee can be.

His father was a Guji legend: a producer and a coffee trader who built the very first washing station in the Bule Hora community in Guji, in the early 00’s. In the meantime, unfortunately, he went bankrupt losing all of his growing lands. Tagel promised himself to redeem the plots that had belonged to his father and years later he pulled it off! Then, in 2018, when the government made it easier for producers to export by liberalizing legislation, he founded Olkai.Hambela Goro works with 460 smallholder producers that grow 74110 varietal at an impressive altitude of 2300 masl. Most of them own literally only hundreds of coffee trees each, which makes lots from Hambela Goro truly multi-component blends. At the same time, the consistency and quality of this coffee are beyond extraordinary.In addition to direct involvement in coffee production, Olkai prioritizes social responsibility in order to empower producers they work with. Then they undergo several steps of hand sorting. After depulping the coffee is submerged in water, in tanks and goes through 48 hours of fermentation. Following this, the parchment is being moved to african beds for drying and that takes around 10-12 days, depending on the weather and humidity prevailing during this period.Several amazing factors, such as specific terroir, extremely high altitude, an amazing 74110 varietal, smallholders’ skills and the professional management and organization at Hambela Goto created a beautiful synergy, resulting in this wonderful washed coffee. Coffee cultivation is usually managed by family members, rarely hiring out external workers. 70% of the population wears traditional clothing, and 46% of the producers are women producers.Before the arrival of Spanish conquerors, Tzeltal indigenous people settled in the actual Tzajalchen area. The Aztecan people came and lived here, but in the 16th century, Dominican Friars started to colonize the area. In 1712 Tzeltal people started to rebel against the Dominican people, resulting in the entirety of the population today being the Tzeltal indigenous people.Pedro's father, along with his three brothers, initially grew corn and beans. There weren't any coffee trees planted in the farm. More than 30 years ago, a program of INMECAFE (El Instituto Mexicano del Café) arrived in Tzajalchen and brought coffee seeds of Bourbon and Caturra to plant, and that's how they started coffee cultivation in the area. About 20 years ago, his father handed over the farm to him and his two brothers, then Mr. Pedro began to work organically with his wife and his son. He produced 15 quintales from his 1-ha farm, and bought three more hectares. Now his farm is 4-has and continues to maintain organic practices.The harvest is picked by hand, selecting only 100% ripe cherries, and is usually done in 4 picking sessions per season. Pulping is done on the same day of the harvest, and the coffee is then fermented for 10-16 hours.
