ABOUT THE FARM AND REGION


Banko Gotiti is a village in the Gedeb district of the Gedeo zone in Ethiopia, where the Yirgacheffe region is located.The Banko Gotiti cooperative was founded in 2012, independently from the larger Worka organization. It currently brings together around 300 members who cultivate a blend of traditional Ethiopian coffee varieties.Yirgacheffe has become famous for coffees with a distinct, often berry-like flavor profile. The region is exceptionally lush – the dense vegetation is the result of a warm, tropical climate with moderate rainy and dry seasons. Most of the coffee is grown by smallholder farmers, in the shade and using organic methods.The plantations are located at altitudes ranging from 1,600 to 2,400 meters above sea level. Numerous micro-regions create complex and diverse flavor profiles, depending, among other things, on the washing station from which a given coffee originates.

How many times have I heard this story – I like coffee, I wonder what really good coffee tastes like, oh, there's something called Specialty, I buy a bag of Ethiopia... and that's it. This coffee has permanently altered your neural pathways. You don't know what it is, you don't understand the taste, but you LOVE it. You buy another one, and another, Kenya, El Salvador, you stick pins in the globe, blood pressure constantly high, another origin, processing? Wait, there's more of this? You jump from one rabbit hole to another. Somewhere along the way you bought a dripper, an aeropress, maybe I'll find a job in a cafe, I didn't really care about university anyway, you say there are coffee competitions? Interesting... wait, I was supposed to say something about the filter coffee of the month, not summarize my life. But seriously, if this coffee starts even half a similar story for one person or reminds someone of their beginnings, that's enough for me. Good soup.

RECIPE


19g of coffee to 290ml of water at 91*C

  1. 0:00-0:30 First bloom - 45g.
  2. 0:30-1:00 Second bloom - up to 90g.
  3. 1:00-(1:20-1:25) One continuous pour up to 290g. Stream directed straight into the center, light circular motions, avoid the sides of the dripper. If your pour fits within 20-25s, it means you have a good stream flow rate.
  4. The total drawdown should finish between 2:15-2:45. Draining too fast? Swirl.
