These extreme conditions favor slow fruit maturation and the building of a complex flavor profile.The Caturra variety is also not among the most common there — it accounts for about 20% of total coffee production in Peru, which makes lots of this type even more interesting and unique. Peru as an origin is often underestimated and overlooked by consumers, which is why we regularly try to include at least one coffee from this country in our offer. This time, it is the beans from Ismeria Leon.In the aroma, the coffee is fresh and fruity — green apple clearly dominates, complemented by delicate cranberry and caramel sweetness. On the palate, the profile remains very consistent: juicy apple appears in the foreground, enveloped in caramel, with hints of cranberry and grape.The whole has a medium, round body and low, smooth acidity reminiscent of an unripe apple. We have been buying coffee from Willy, via the importer 1000 Hills, since the very beginning of HAYB. When Willy let us know last year that he was having trouble with his cherry size sorting machine and his lot contained various screen sizes, we only asked one thing: "Willy, we understand, but how’s the flavor?". We were assured that on-site, the coffee tastes the same as every year – everything is in its place. We ordered samples and decided on this lot, even though the beans vary significantly in size. Because flavor comes first, right?If we had decided not to take this batch, the farm would have had to sell the goods on the local market for much less money or somehow sort it again – sending only the larger beans to Europe and leaving the "little ones" in Rwanda. The harvest season runs from April to December and is based on selective hand-picking to maintain consistent quality and uniformity of the cherries.ABOUT THE COFFEEGesha is a variety strongly associated with exceptional quality and a very high sensory potential when grown at high altitudes. It is also a low-yield variety, which means that even with high demand, it remains genuinely limited on the market. For years it has consistently won the most prestigious coffee competitions and achieved record-breaking results at international auctions.This lot is processed using a washed method with extended, controlled fermentation. The harvest is done manually and selectively, in cycles roughly every 20 days, using only fully ripe cherries.After harvesting, the cherries ferment in bags for about 12 hours. They are then transferred to a hopper, where the initial oxidation stage is completed. The coffee then undergoes flotation, followed by depulping and an extended fermentation of approximately 200 hours in tanks or vats.After fermentation, the coffee is washed using either a portable washing unit or an Ecomill system. It is then dried on raised beds for 15–17 days and stabilized in GrainPro bags for 10–15 days.
