ABOUT THE COFFEE & PROCESSING
Estrella del Sur coffee is decaffeinated using the so-called sugarcane method, which relies on ethyl acetate (EA), a natural compound derived from sugarcane. The process begins with preparing the green coffee: the beans are gently steamed to open their structure, allowing the caffeine to be effectively removed. They are then immersed in an ethyl acetate solution, which binds to the caffeine and extracts it from the beans.
After several extraction cycles, the beans are steamed again to completely remove any remaining EA, then dried, cooled, and polished to preserve quality. Thanks to this method, the coffee retains its full flavor, body, and aroma without the use of harsh chemicals. Sugarcane decaf is considered one of the cleanest and most neutral decaffeination methods available on the market.
ROASTER’S OPINION
Decaf or not, this is simply a very good coffee. Juicy, fruity, sweet, and complex. We drink it all day long, not just after 6 pm.
