Coffee here is most often processed using the natural or honey method, and experiments with aerobic fermentation are also common.Fun fact: Our coffee lot was delivered to the station on the very day of harvest. Its parameters were then evaluated, and the cherries were placed in large hermetic tanks for 5 days of anaerobic fermentation. At the appropriate moment, the coffee is exposed to a temperature of 20°C to halt fermentation and remove yeast. The cherries then “mature” in the tanks for another 5 days before being transferred to solar dryers. Drying takes 30 to 45 days.

Through coffee, they create pathways to economic autonomy and collective prosperity.Fun fact: the mountain water decaf process is a chemical-free decaffeination method developed in Veracruz. It uses pure glacial water from the high mountains of Mexico to extract caffeine from green coffee beans. Through repeated soaking and filtration cycles, caffeine is removed while the natural compounds of the beans remain intact.

The station is run by Cup of Excellence winner Asman Arianto. Asman Gayo Mill works with several small coffee producers from the villages of Pantan Musara, who were displaced from their homes and land a few years ago due to a natural disaster and rebuilt their lives and farms with a focus on coffee production. Unlike most other coffee collection and processing centers in Sumatra, Asman Gayo Mill produces both washed and natural coffees.Fun fact: Microlots from Sumatra can usually be traced back to the level of the processing station, and sometimes even to a specific producer. Due to the generally small size of farms in Sumatra, most coffee is a blend of beans from many smallholders. Microlot coffees not only offer greater traceability than blended lots, but they also tend to achieve the highest quality.

It serves a total of 513 active farmers (349 men and 164 women), each owning on average 300 coffee trees and about 0.5 acres of land. In addition to coffee, farmers near their plantations also grow macadamia nuts, bananas, and maize. Karindundu supports farmers by advising them on practices such as using organic fertilizers and pruning their plants. The station also operates a demonstration plot where these methods can be observed in practice.Fun fact: After harvesting ripe coffee cherries, farmers deliver them to Karindundu, where they undergo a traditional washed process. The coffee is depulped, fermented overnight, washed, and then placed on raised drying beds, where it dries until it reaches the desired moisture level.

During the harvest season, approximately 1,200 local farmers deliver their coffee cherries to the station.Our coffee lot comes from the special Malebo Project. It is a coffee produced by the Idido station, available exclusively to the importer Cafe Imports, for which only Grade 1 beans from the Idido area were selected. It was the only coffee from Idido in that season to undergo washed processing. Part of the proceeds from the Malebo Project is donated to support the local orphanage, Ardent Children Center.

The processing was carried out at the cooperative’s facilities to ensure consistency. The coffee was then decaffeinated in Germany using the water process.Did you know? Water process decaf is a multi-step decaffeination method in which green coffee is soaked in a water solution to extract the caffeine. The caffeine is then removed from the solution using activated carbon. The caffeine-free solution is subsequently added back to the pre-dried coffee beans. Final drying restores the beans to their original moisture content.

The washing station is located on the slopes of Mount Kenya near the town of Kangema, and the coffee cherries harvested by 980 farmers who are members of the cooperative are processed here.Fun fact: Like many other Kenyan coffees, coffees from the Githiga station undergo a double washing process. After the ripe cherries are separated from defective, unripe, and overripe ones, they are wet-processed using clean water from the Githiga stream.
