ABOUT THE COFFEE


Coffee from the Quindio region, very juicy, very fruity in a broad sense, a coffee with a strong tropical profile in aroma and flavor at a medium temperature, which over time changes into a more floral and light fruitiness. Such coffees are rarely available today, so I think it's a real treat.



ROASTER'S OPINION


One of the "louder coffees" – it screams, being absolutely tropical, sweet, with medium+ acidity like in a ripe pineapple. We can even find slightly fermented notes that may bring wine and rum tones to mind. A natural so advanced that you could easily mistake it for an anaerobic in a blind tasting. Fortunately, all of this is nicely balanced by flowers, which greet us in the aroma and bid us farewell in the long aftertaste.



RECIPE


Immersion method:17 g coffee / 270 g water at 95°C


Grind size: coarse

  1. Bloom: use 70 g of water and wait 50 seconds.
  2. Open the flow and add 100 g of water.
  3. Around 1:45 add another 100 g of water.
  4. Total time: 2:30 


Store in a dry and cool place.
