Nova Coffee, in turn, is the washing station and export company owned by Agnes and Felix Mukamushinja, who coordinate the entire enterprise. In 2024, they won first place in the prestigious Best of Rwanda competition with their coffee.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMAll the fruit is harvested by the female producers by hand and with great care – years of practice and training have borne fruit (pun intended) in an extremely selective picking, resulting in perfectly ripe cherries. The lot is processed as a "classic" washed coffee. The fruit undergoes depulping, after which it goes into a tank for over 24 hours where fermentation takes place. This is followed by washing and then straight to drying.ROASTER'S OPINIONIt is no coincidence that we are hosting Bukure for another season in a row – this is a textbook example of a Rwandan coffee pampered at every stage. The selected cherries are then placed in sealed, shaded barrels, where they undergo a specialized, 72-hour, dry anaerobic fermentation. By removing oxygen and maintaining strict temperature regulations, this process allows the coffee to develop an incredibly clean acidity and a creamy texture, while preserving the distinctive characteristics of its original terroir.After fermentation, the coffee is carefully removed from the barrels and sorted by hand once again to ensure that only the finest cherries move on to the drying stage. Over the course of 33 days, the beans are dried on raised drying beds that provide optimal airflow. Arabica, canephora, liberica. But here we have to throw our hands up and say – it's a matter of debate. Excelsa was discovered in 1903 and since then was considered a separate species. In 2006, its official classification was changed to a variety of liberica. However, many farmers and researchers dispute this decision, pointing to many characteristics unique to excelsa.We won't resolve this dispute. However, we can say with great certainty that, like liberica, excelsa has a unique flavor profile not found in other species. Sage, licorice, exceptionally high sweetness. You can't miss it. Very to the point – the name Si Unyil Manis translates to "the sweet little one".ABOUT THE CULTIVATIONIn coffee, you often hear claims about sustainable and biodiverse farming. Often these are empty words. Meanwhile, excelsa is perfect for precisely these conditions. It gladly grows in the shade of other trees, among many plant species. Si Unyil Manis is cultivated in an equatorial forest, alongside banana trees, tobacco, and tall shade trees. Compared to the nearby oil palm plantations, this is an incredibly vibrant ecosystem.ABOUT THE PROCESSINGThe producer of this coffee, Rainaldi, specializes in excelsa like few others. For years, he has been searching for processing methods that allow full expression of this species' (variety's?) flavor notes. In this case, the full name of the process is "anaerobic thermo soaked natural". In practice, this means that after harvesting, the fruits were given a warm bath, from which they went into fermentation tanks. Further processing is classic natural drying. The warm bath helps eliminate some of the naturally occurring bacteria and fermenting yeast. This results in a more stable and repeatable anaerobic process.ROASTER'S OPINIONA mystery coffee. Is this another – now the fourth species of coffee plant in our offer? Maybe yes, maybe no. But we guarantee that while drinking it, you won't be puzzling over it, because the coffee is spectacular even without mysteries.We were looking for a promotional slogan for this coffee. It is a classic example of a perfectly prepared washed coffee, where flavor clarity, clear acidity, and elegant complexity are what matter most.Behind its profile stands one of the most valued processing methods – washed – which allows to bring out the natural character of the beans and highlight the terroir of Ethiopia. The process begins with the hand-picking of exclusively ripe, red coffee fruits, which reach the washing station on the same day. There, the cherries are thoroughly sorted, and unripe or damaged fruits are discarded.Next, the fruits pass through a depulper, which separates the skin and most of the pulp from the bean. The beans covered with a thin layer of mucilage go into fermentation tanks, where for about 36–48 hours natural enzymes break down the remaining pulp. This is a crucial stage – properly controlled fermentation builds flavor clarity, distinct acidity, and the characteristic tea-like elegance of Ethiopian coffees.After fermentation is complete, the beans are thoroughly rinsed in clean water to completely remove any remaining mucilage. Next, they go onto African raised beds, where they dry under natural conditions. During drying, they are turned regularly so that moisture evaporates evenly, and the beans maintain high quality and stability. Upon reaching the appropriate moisture level, the coffee rests in parchment before being prepared for export.The result is an exceptionally clear and elegant cup – exactly what you can expect from a classic washed Ethiopia. Once every four years, the eruption of the nearby Merapi volcano covers the entire region in volcanic ash, which is incredibly fertile and promotes the development of sweetness and spicy characteristics in the coffee.ABOUT THE PROCESSINGExperiments with Canephora are particularly important to them, which naturally caught the attention of the Brothers (fine robusta neophytes). This specific lot underwent their signature process – quadruple anaerobic fermentation. The fruits spend five days in each of four consecutive tanks, being cleaned of fermentation byproducts in between. This is Vins and Bedjo's proven method to "clean up" robusta, giving it a clear character and a great, mild profile.ROASTER'S OPINIONHere is what we love fine robustas for. The station was established in 2006, but remained inactive for a long time until Leo Fidele Ndagijimana took it over in 2018. Fidele repaired and modernized the machinery, using his experience in managing stations in western Rwanda to establish new processing standards. Even a small proportion of unripe or damaged fruits could negatively affect the final coffee profile.Upon arrival at the processing station, the fruits undergo flotation sorting. The cherries go into water tanks where lower-density, damaged, or unripe fruits are removed. Next, a manual selection is carried out so that only the highest quality fruits move on to the next stage.The next step is drying the whole fruits on raised African beds. This is the most important stage of the whole process. For about 3–5 weeks, the fruits slowly release moisture, remaining whole along with the skin and pulp. During this time, natural sugars and aromatic compounds gradually penetrate the beans, building characteristic sweetness and a rich flavor profile.During drying, the fruits are turned regularly to ensure even moisture evaporation and to prevent uncontrolled fermentation. During the hottest hours of the day and during rainfall, the beds are covered, which allows stable drying conditions to be maintained and preserves the high quality of the beans.Upon reaching the appropriate moisture level, the coffee goes to a warehouse where it undergoes a stabilization stage (resting). Thanks to this, moisture is evenly distributed inside the beans, which translates to greater stability during transport and subsequent roasting.Only at the very end are the dried skin and pulp mechanically removed, and the beans undergo a final selection in terms of size, density, and quality. This coffee is full-bodied, expressive, and extremely satisfying.ABOUT PROCESSINGThis character is partly due to the natural processing method. The process begins with the hand-picking of exclusively ripe, dark red coffee cherries. Next, the fruit is thoroughly sorted. Unripe, damaged, or overly light cherries are removed using a water bath, during which lower-density fruits float to the surface.After selection, the whole fruits go onto elevated drying beds or patios, where they remain for several weeks. During this time, neither the skin nor the pulp is removed – the bean dries inside the fruit. To ensure the process runs evenly and without the risk of defect-causing fermentation, the fruits are turned regularly, and their moisture level and temperature are constantly monitored. As the water evaporates, natural sugars and aromatic compounds from the pulp gradually penetrate the beans, building their characteristic sweetness and fruity depth.Once the fruits reach the appropriate moisture level, they are left to stabilize so that humidity distributes evenly inside the bean. Only then are the dried skin and pulp mechanically removed in the hulling process. The final stage is a ultimate selection of beans by size, density, and quality before they reach the roastery.The result of this carefully conducted processing is a coffee with a rich structure, distinct sweetness, and an intense dessert-fruity character.
