Kafar is a coffee brand founded in 2015 by a group of friends whose professional lives revolve around coffee. At the heart of the brand is a specialty coffee roastery, supported by additional initiatives such as training delivered in partnership with Coffee Support and serving outdoor events with our coffee truck—a blue coffee trailer with the distinctive KAFAR logo. What truly sets our roastery apart is the meticulous selection of green coffee overseen by two certified Q Graders (an international Specialty Coffee Association certification). Thanks to this, our range features coffees of the highest quality. The green beans we roast at Kafar come from trusted importers who prioritize direct relationships with coffee producers, fostering long-term cooperation and shortening the supply chain. The four-hectare farm, entirely planted with coffee, belongs to Laureano Gómez — a second-generation producer and former teacher who decided to leave his career in education to fully dedicate himself to developing the family farm and producing specialty coffees.Laureano brought back to life an estate that had been neglected for years, building a project based on quality, experimentation, and a conscious approach to production. Together with his brother, he is responsible for both the daily work on the farm and the sale of their coffees. On different plots, he cultivates varieties such as Gesha, Pink Bourbon, and Castillo, constantly developing processing methods to search for even higher quality coffee.This specific lot of Gesha was selected from among the best coffees in the Nariño region during the La Mejor Taza de Nariño competition. It then went to the auction of the best lots, where it was won by Adam Laska — co-owner of the KAFAR roastery — who had previously participated in the competition as a judge.ABOUT THE PROCESSINGThe processing starts with the manual harvesting of fully ripe cherries. Next, the coffee undergoes a four-day anaerobic fermentation in sealed jute bags kept in the cool climate of the Alta Clara region. The next stage is an eight-day anaerobic fermentation in airtight steel tanks, which deepens the sweetness, texture, and complexity of the sensory profile.After fermentation, the coffee is dried for 15–20 days in parabolic dryers, which ensures uniform airflow. The final stage is manual selection and a 15-day stabilization period in jute bags.In the cup, the coffee presents an elegant and refined character with notes of guava, sweet cherry, and muscovado sugar, supported by a creamy texture and a long, sweet finish. We recommend it primarily for filter brewing methods, where its complexity and delicacy are most pronounced.The coffee comes from the Oromia, Guji region in Ethiopia and was produced by Gemechu Shonora in cooperation with around 500 smallholder farmers. The crops are situated at an altitude of 1900 to 2200 meters above sea level, and the dominant varieties are Kurume and other local varieties characteristic of this region.The name Harruu Bunnaqaa originates from the Oromo language. "Harruu" means a large shade tree, under which Oromo community meetings traditionally took place, while "Bunnaqaa" is related to sharing coffee. Harruu Bunnaqaa is also a historical site in Guji, where local Oromo leaders would meet to jointly celebrate peace, blessings, and coffee.Coffees from this area stand out for their exceptional complexity and aromatic intensity, resulting primarily from the high altitude of the crops and very fertile soils. The sensory profile frequently features herbal, floral, and spicy notes, along with fresh accents reminiscent of hops or citrus.This lot offers a flavor profile with notes of blueberry, vanilla, and lemongrass, with a distinct, crisp texture. It is also a region with a difficult history, where despite many challenges local producers continue to develop and cultivate coffee of the highest quality. This lot was produced as part of the Black Condor Project – an initiative supporting more than 100 independent farmers through fair pricing, training, and access to modern processing infrastructure.The project is led by Emmanuel, a producer raised in a family with a multi-generational coffee tradition. In 2016, together with his family, he established a central processing station to help farmers from more than 15 nearby villages process their coffee in a controlled, quality-focused way. This approach allows for a consistent and clean sensory profile while also significantly increasing the income of the local community. Farmers are offered prices up to 18–20% higher than the market average, and regular workshops on fermentation, drying, and cupping help continuously improve production standards.ABOUT COFFEEColombia La Roma undergoes a classic washed process, which highlights the natural clarity and elegance of Colombian varieties such as Caturra and Castillo. Careful cherry selection, controlled fermentation, and slow drying contribute to a balanced and harmonious flavor profile.In the cup, this coffee offers notes of chocolate and almonds that create a sweet, creamy base. The farm is run by Senel Campos along with his son Alan, managing three estates spread across the steep terrains of southern Costa Rica.Senel Campos' story is a tale of consistency and gradual development. He grew up in Pérez Zeledón under difficult conditions, sharing a small house with his siblings and often going to school hungry. Despite limited opportunities, he and his family built a project based on high-quality specialty coffee production and an increasingly precise approach to processing.Over the past decade, the processes on the farm have evolved from simple, basic methods to consciously controlled production of honey and natural process lots. Coffees from La Toboba are characterized by a very low number of defects and high consistency in quality.This specific lot of the Catigua variety was subjected to the natural process, which brings out notes of walnut, mandarin, and sugar cane in the cup. In Burundi, coffee is typically grown on micro-farms, often in small plots next to family homes.The coffee cherries arrive at the station on the day of harvest, where they undergo water flotation sorting, hand selection, and classic washed processing. Fermentation in clean water lasts 10–12 hours, after which the coffee is thoroughly washed and dried on raised beds for 2–3 weeks.
