This is one of those coffees that shows modern Colombia can still surprise with its form, without losing precision.The cherries were hand-picked, then subjected to 24-hour oxidation and 36-hour fermentation in mucilage. After this stage, the mucilage layer was removed mechanically, followed by drying in a marquesina for about 20 days. The harvest season runs from April to December and is based on selective hand-picking to maintain consistent quality and uniformity of the cherries.ABOUT THE COFFEEGesha is a variety strongly associated with exceptional quality and a very high sensory potential when grown at high altitudes. It is also a low-yield variety, which means that even with high demand, it remains genuinely limited on the market. For years it has consistently won the most prestigious coffee competitions and achieved record-breaking results at international auctions.This lot is processed using a washed method with extended, controlled fermentation. The harvest is done manually and selectively, in cycles roughly every 20 days, using only fully ripe cherries.After harvesting, the cherries ferment in bags for about 12 hours. They are then transferred to a hopper, where the initial oxidation stage is completed. The coffee then undergoes flotation, followed by depulping and an extended fermentation of approximately 200 hours in tanks or vats.After fermentation, the coffee is washed using either a portable washing unit or an Ecomill system. It is then dried on raised beds for 15–17 days and stabilized in GrainPro bags for 10–15 days. The Brazilian beans are dried on concrete patios in a dry climate, while the Ugandan beans undergo selection, flotation, and drying on raised beds with fermentation, giving them a fruity character. The combination of both creates a sweet, tropical-chocolate profile, known as LOW Jungle Fruit.The Brazilian beans were decaffeinated using supercritical CO₂, which removes caffeine while preserving aroma and structure. The brew is light, intensely tropical-fruity with a delicate chocolate background, full-bodied with smooth acidity, and a long, fruity finish that highlights its character.In 250 g of brew prepared according to the V60 protocol, 57.2 mg of caffeine was measured, representing approximately a 70% reduction compared to the fully caffeinated version.ROASTER’S NOTELOW Jungle Fruit presents itself as a brew with a pronounced tropical-fruity profile and a subtle chocolate background. Juicy notes of pineapple and passion fruit dominate, enriched by accents of apricot and ripe stone fruits.
