Located at an altitude of over 1500 m a.s.l. on fertile, volcanic soils, it is a rare example of a full-scale plantation in a country dominated by small, backyard crops.The site employs chemical-free practices with an emphasis on a sustainable approach and natural shading, which supports even ripening of the fruit. Harvesting is done by hand, selecting only fully ripe cherries, which allows the proper balance of sugars and acidity to be maintained at the raw material stage. The processing is a classic washed method with extended fermentation. The beans ferment for three days, during which they are rinsed daily, followed by an additional day of fermentation. After this stage, the coffee is sun-dried for a minimum of 21 days and undergoes multi-stage sorting, which translates into the clarity and repeatability of the profile.ROASTER'S OPINIONThe opinion of Filip Ślęczek – our head roaster: Papua New Guinea – we haven't had coffee from this region for several years. And when it finally appeared, it made its way to Coffeedesk! It is safe to say that this is an unusual daily coffee. You will find a lot of clean, halva-like sweetness, broken by the acidity of dark grapes (you certainly know the taste of thick grape skin), with the whole subtly seasoned with a hint of thyme. Its captivating and complex flavor profile is characterized by floral notes, fruitiness, juicy acidity, and honey-like sweetness.This exceptional coffee was produced using a method developed at El Vergel Estate, employing Aspergillus oryzae, a fungus renowned for its ability to enhance flavor profiles. The farm covers 6 hectares, 5 of which are dedicated to coffee cultivation, and the trees in this lot are around four years old.The farm is managed by Vladimir and his family, and the entire process, from harvesting to drying, takes place on-site and under their direct supervision. The harvest season runs from April to December and is based on selective hand-picking to maintain consistent quality and uniformity of the cherries.ABOUT THE COFFEEGesha is a variety strongly associated with exceptional quality and a very high sensory potential when grown at high altitudes. It is also a low-yield variety, which means that even with high demand, it remains genuinely limited on the market. For years it has consistently won the most prestigious coffee competitions and achieved record-breaking results at international auctions.This lot is processed using a washed method with extended, controlled fermentation. The harvest is done manually and selectively, in cycles roughly every 20 days, using only fully ripe cherries.After harvesting, the cherries ferment in bags for about 12 hours. They are then transferred to a hopper, where the initial oxidation stage is completed. The coffee then undergoes flotation, followed by depulping and an extended fermentation of approximately 200 hours in tanks or vats.After fermentation, the coffee is washed using either a portable washing unit or an Ecomill system. It is then dried on raised beds for 15–17 days and stabilized in GrainPro bags for 10–15 days. The producers focus on precise and responsible coffee processing, aiming to express the character of the local terroir while respecting the natural environment. During the harvest season, the farm employs around 15 people and produces approximately 5.5 tons of coffee annually from just under two hectares, cultivating several botanical varieties processed using different methods.Coffee production at this location comes with challenges such as variable weather conditions and rising operating costs. In response, the owners plan new plantings of varieties better adapted to the local climate, as well as a gradual expansion of their cultivation area. Since 2022, the farm has also been investing in the development of controlled fermentation infrastructure, which is used not only by the owners themselves but also by neighboring producers seeking to improve the quality of their coffees. This offering is another coffee from this farm in our portfolio—this time naturally processed Caturra and Red Catuai from the latest harvest in Costa Rica.ABOUT THE COFFEEAt the farm, every stage of the process is closely monitored and documented, allowing for consistent quality improvements from season to season. This lot was prepared using the natural processing method. Cherries of the Red Catuai and Caturra varieties are first placed in a water bath for flotation, during which selection takes place—only healthy, fully ripe cherries continue to the next stage, while defective fruit is removed.The cherries are then disinfected using ozone to limit the development of undesirable microorganisms. The next step is drying the whole fruit on raised beds typical of African coffee farms, under full sun. This process lasted 28 days and required regular turning of the coffee to ensure even moisture evaporation. The beans ultimately reached a moisture content of 10.5%.After drying, the coffee is placed in GrainPro bags, where it rests and stabilizes for at least one month. The final stage takes place at a dry mill, where the coffee is hulled, sorted by size and density, and subjected to electronic color sorting before shipment.Costa Rican coffees are often associated with pronounced sweetness, typically resulting from honey processing. In this case, however, we are dealing with a naturally processed coffee that dried for an extended period in full sun. The result is a very clean and transparent flavor profile, featuring notes of ripe grapefruit, plum, and dark chocolate. La Laguna stands out with an intense sweetness reminiscent of maple syrup. The body is high and almost oily, while the acidity is low and soft, with a subtle grapefruit accent. The high humidity and rainy climates across Colombia do add to the challenging of achieving a high-quality naturally-processed coffee; but, when it is done properly and the coffee is moved consistently throughout the curing process, we find the resulting cup profile to be exquisite. Pink Bourbon: Cultivated from hybridization of Red and Yellow Bourbon. It's very rare, but the producers say it is quite resistant to rust. Pink and Orange Bourbons are very difficult to produce with consistency. The recessive genes leading to the expression of these colors are easily thwarted by the presence of yellow and red genes in a given pollen grain. A carefully isolated and contained lot can do quite well and preserve the unique color and character of this variety, though this is quite hard to find.ROASTER'S NOTEElegant yet very expressive. A rarely encountered floral note reminiscent of lavender, paired with the sweetness and acidity of very ripe fruit.V60 RECIPE16g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. But always taste and then judge your coffee.Store in a cold and dry space.

Just as the warm weather has settled in for good, the first fresh harvests from Africa are starting to arrive. Itumpi from Tanzania clearly reminds us why we value coffees from this part of the continent: crisp, juicy brews with a large dose of freshness.In taste, Itumpi leans towards green-red rhubarb and pink grapefruit. The acidity is distinct and pleasantly juicy. In mouthfeel, the coffee is light, tea-like, and clean, with a crisp finish that practically begs to be brewed over ice.The enigmatic PB stands for peaberry. It refers to a natural anomaly where, instead of two flat beans, a single, smaller, and rounder bean develops inside the coffee cherry. Sometimes overlooked, though completely unfairly, because it can yield a very intense, concentrated flavor. It was this intensity that stole our taste buds from among the other grades.The raw material comes from the Itumpi cooperative in the Mbozi district, Songwe region. About 160 local producers operate here, cultivating coffee at an altitude of 1500–1700 meters above sea level. Since 2019, the cooperative has been producing fully washed coffees using their own wet mill. With such a crisp, acidic profile, this method fits like a glove.Store in a dry and cool place.
