It’s not easy to find beans that match our taste preferences in a country roughly the size of the UK or Romania, but with a population density closer to that of the Netherlands or Poland. Uganda is relatively densely populated, and agriculture drives the economy—but most farmers grow Robusta.But rest assured, we managed to find a fruity bomb, a true gem.Norman’s farm is located at the foot of Mount Elgon in Uganda, sourcing cherries from the regions of Sironko, Mbale, Bulambuli, and Kapchorwa. The Coffee Yard is a large reception and drying center for coffee cherries. With almost 20 years of experience in the industry, Norman has specialized in natural-process coffees since 2018, continually refining his processing methods to achieve ideal flavor profiles.The processing steps include:• Selecting and washing cherries to remove defects.• Initial drying on raised beds.• Additional sorting by color and moisture content.• Fermentation in open tanks, which contributes to the coffee’s unique flavor notes.• Drying for about 21 days until moisture drops below 12%.After an additional week, the beans are hulled, hand-sorted and optically sorted, then prepared for export.ROASTER’S NOTEThis coffee truly surprised me! Another lesson showing that it’s worth exploring unknown paths, staying curious, and continuing to search. Farms in this area are small — on average they have around 610 trees. The volcanic, nutrient-rich soils combined with the high elevation of 1,700 to 2,000 meters above sea level create excellent conditions for producing top-quality coffee.During the harvest season, ripe cherries are carefully hand-picked by farmers and their families. The growers then bring the harvested cherries — on foot or by bicycle — to the washing station. The Karengera station encourages farmers to carry out thorough sorting before selling: removing any unripe, damaged, or overripe fruit.Once received, the cherries are pulped to separate the beans, which then undergo a dry fermentation lasting 12 hours. Afterwards, the beans are soaked in clean water for another 8 hours to remove any remaining mucilage, and then passed through grading channels for final washing and sorting. It’s a lot of work so that somewhere on the other side of the world we can enjoy a clean, delicate cup.We invite you on this journey — a cup of coffee from Rwanda always transports me to warm, sunny places.

Earl Grey tea from HAYB. Classic Ceylon tea with aromatic bergamot oil, no artificial flavors.  Where did the name "earl gray" come from? There are two theories on this subject. The first one says that the tea owes its name to Count Gray, who was to receive it as a thank you for saving the drowning son of Mandarin. The second theory, about the origin of the name Earl Gray, had its origin in cargo ships going to England. During the long journey, the green tea crates got wet, the tea began to ferment (green tea began to turn black naturally), with an unpleasant odor as a side effect.
