Yet, this is coffee, and quite an impressive one at that.The farms are located in a wild part of Yunnan, east of Pu’er city and right near the border with Laos. The entire coffee operation is led by Mr. Tian Cai, manager of the Yunnan Coffee Traders (YCT) farms, while its daily management is handled by his relative, Mr. Tang. This is a family team belonging to a small group of farmers from the Gui Ben region. The coffee cherries come from both their own crops and from neighboring smallholders. The cherries are spread in a thin layer on raised beds for two to three days, after which they are raked and dried for another 25 days. Only then do they move on to further processing, sorting, and, once prepared this way, await shipment to warehouses in Europe. We roasted them relatively light for espresso, which gave them a long aftertaste. In the background lurks a note known from Asian coffees, but for me, yellow sweet plum takes center stage here. It is about 192 km away from Kigali, and coffee cherries from surrounding farms located at 1,500–1,900 meters are processed on site. The high altitude, volcanic mineral-rich soils, and around 1,356 mm of rainfall per year create excellent conditions for growing coffee.In 2026, Baho Coffee continues to make great use of the station's unique location by Lake Kivu. The delicate breeze from the lake and the gentle sun allow the coffee to dry slowly and evenly, resulting in a very clean, full, and intense flavor in the cup. This coffee is famous for its distinct, fresh acidity and complex fruity character. Black Honey is a processing method that enhances the fruity character of the bean. It consists of removing the seed from the cherry, but without cleaning the pulp off of it. We allow it to ferment and interact with the seed - which is our future coffee. Archetypes of coffees from Ethiopia. A point of reference. Ben - our importer - alongside the name Bench Maji for the farm where this coffee comes from, also uses the name Geisha Farm. This is because local farmers grow mostly this botanical variety. Check out the effect of their effort by brewing this lot. The coffee has an intensely tropical taste thanks to the processing method – anaerobic fermentation with limited oxygen access, which lasted 96 hours. This, combined with a very clean and juicy botanical variety that is geisha, gives a taste so full and fruity that it is hard to stop drinking this coffee. It brings a tear to the eye! Willy is a great guy, full of passion, faith, and energy for testing new farming methods. This season, we have two coffees from him from two different lots of his farm: Murundo comes first, and we have Mahembe up our sleeve for you.Willy experimented here with anaerobic fermentation. What is this "anaerobic" thing anyway? In this process, coffee ferments in an oxygen-free environment – in this case, it lasted for 72 hours. Prolonged fermentation adds a lot of sweetness and a characteristic "funk" to the coffee. It's easy to overdo the latter, but Willy keeps an eye on everything, so you won't find any aggressive, lemony, or vinegary notes in the cup.
