He owns 6.5 hectares of coffee farm in one place and another 3 hectares in another place within the same village. He works full time in his farm assisted by his able children who completed their primary education but couldn’t find another job in towns. Mr Bekele, who is the father of 11 children, fully relied on the income he generated from his coffee farm. The coffee farm business also supports his two elder married sons who also work together with him.Mr Bekele Gemeda was incredibly grateful to see the care he has put into his coffee showed well enough in the cup to have his coffee kept separate, something that is rare in Ethiopia. The coffee is picked ripe and depulped the same day. There is usually a fermentation period of 8–12 hours in open-air tanks, then washed in water channels to remove the mucilage. The coffee seeds will be spread on raised beds to dry for 5–15 days, depending on the weather.ROASTERTea with honey and lemon and a piece of yeast cake with plum - that is what this coffee reminds me of.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. It is located in the highlands of North Sumatra. This region, thanks to its fertile, volcanic soils and cool climate, offers ideal conditions for growing coffee. What we have here is the essence of Rwandan terroir – the cherries ripen on mineral-rich volcanic soils and at impressive altitudes exceeding 2000 meters above sea level. Nova Coffee, in turn, is the washing station and export company owned by Agnes and Felix Mukamushinja, who coordinate the entire enterprise. In 2024, they won first place in the prestigious Best of Rwanda competition with their coffee.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMAll the fruit is harvested by the female producers by hand and with great care – years of practice and training have borne fruit (pun intended) in an extremely selective picking, resulting in perfectly ripe cherries. The lot is processed as a "classic" washed coffee. The fruit undergoes depulping, after which it goes into a tank for over 24 hours where fermentation takes place. This is followed by washing and then straight to drying.ROASTER'S OPINIONIt is no coincidence that we are hosting Bukure for another season in a row – this is a textbook example of a Rwandan coffee pampered at every stage. It brings together 160 small producers living in the Mbozi region, less than 70 km from the border with Zambia. Recently, in 2019, the cooperative built a central washing station, thanks to which all harvested cherries are processed on-site. Naturally, this boosted the quality of the final product and made exporting outside Tanzania easier – and as a result – increased the cooperative's profit.ABOUT THE PROCESSING OF COFFEE BEANS ON THE FARMThe Bourbon variety, hand-picked, is delivered on the same day to a small washing station owned by the cooperative. After the depulping process, which separates the seed from the fruit, it is sorted by bean size and then separately fermented in a tank for 10 hours. Washed and dried on raised beds for 10 days.ROASTER'S OPINIONOne could say that high-quality lots from Tanzania are a wonderful rescue that comes outside the fresh Kenya season. Starting with Caturra and Castillo, it was not long before they started expanding their collection of varietals to fully explore the amazing terroir at their disposal. Through experimentation and collaboration, the Bayter family have sought to discover new expressions of Colombia flavour and are renowned for their adaptation of modern processing techniques.THE PROCESSGuava Banana coffee begins with the careful selection of ripe Red and Yellow Caturra cherries. The cherries first undergo a 48 to 60-hour anaerobic fermentation, bringing intense character to the profile. The whole cherries are then dried in the sun on covered raised beds - ""Marquesina"" - until they reach 30% moisture. Then, the cherries are moved to mechanical drying in circular dryers at temperatures below 45°C until they achieve 18%-16% moisture. After a pre-stabilisation stall to intensify flavours, the drying process is completed until optimal moisture is achieved. Each farmer owns a farm ranging from about 1/5 to 1/3 of a hectare and delivers coffee to the station in the form of freshly harvested cherries.Kenyan microlots can be traced back to a specific processing station, and whenever possible, to an individual farm. They are selected based on the evaluation of coffee quality during cupping. Since most Kenyan growers own between 1/8 and 1/4 of a hectare of land, the harvested cherries usually go to a local station, where they are sorted and processed. Deliveries from various farmers are combined there and processed into batches covering the harvest delivered on a given day.Due to the huge number of samples requiring evaluation, our green coffee buyer usually stays in Kenya throughout the entire harvest period. From the evaluated batches, they select the best ones, which we then purchase as microlots consisting of fewer than 100 bags.ABOUT THE PROCESSINGMost coffee in Kenya comes from smallholder producers delivering cherries to processing stations that specialize primarily in fully washed coffees. Larger estates are also known mainly for producing coffees processed using this method.The washed process may vary slightly depending on the location, but it typically includes a soaking stage characteristic of Kenya. Ripe coffee cherries are picked and depulped on the very same day. The beans then ferment for 24–48 hours in open concrete or cement tanks. After fermentation, they are thoroughly rinsed in water channels and then soaked in water for 12–72 hours. Finally, they are spread out on raised beds to dry.Store in a cool and dry place.

The process begins with the hand-picking of exclusively ripe, red coffee fruits, which reach the washing station on the same day. There, the cherries are thoroughly sorted, and unripe or damaged fruits are discarded.Next, the fruits pass through a depulper, which separates the skin and most of the pulp from the bean. The beans covered with a thin layer of mucilage go into fermentation tanks, where for about 36–48 hours natural enzymes break down the remaining pulp. This is a crucial stage – properly controlled fermentation builds flavor clarity, distinct acidity, and the characteristic tea-like elegance of Ethiopian coffees.After fermentation is complete, the beans are thoroughly rinsed in clean water to completely remove any remaining mucilage. Next, they go onto African raised beds, where they dry under natural conditions. During drying, they are turned regularly so that moisture evaporates evenly, and the beans maintain high quality and stability. Every cherry is carefully selected, because in the natural method, the entire fruit remains on the bean throughout the entire drying period. Even a small proportion of unripe or damaged fruits could negatively affect the final coffee profile.Upon arrival at the processing station, the fruits undergo flotation sorting. The cherries go into water tanks where lower-density, damaged, or unripe fruits are removed. Next, a manual selection is carried out so that only the highest quality fruits move on to the next stage.The next step is drying the whole fruits on raised African beds. This is the most important stage of the whole process. For about 3–5 weeks, the fruits slowly release moisture, remaining whole along with the skin and pulp. During this time, natural sugars and aromatic compounds gradually penetrate the beans, building characteristic sweetness and a rich flavor profile.During drying, the fruits are turned regularly to ensure even moisture evaporation and to prevent uncontrolled fermentation. During the hottest hours of the day and during rainfall, the beds are covered, which allows stable drying conditions to be maintained and preserves the high quality of the beans.Upon reaching the appropriate moisture level, the coffee goes to a warehouse where it undergoes a stabilization stage (resting). Thanks to this, moisture is evenly distributed inside the beans, which translates to greater stability during transport and subsequent roasting.Only at the very end are the dried skin and pulp mechanically removed, and the beans undergo a final selection in terms of size, density, and quality. Coffee prepared this way goes to the roastery, retaining the full extent of its fruity character.If you like filter coffees with a distinctly fruity, sweet, and dessert profile, Ngororero Natural will be a great choice. Together with his brother, he is responsible for both the daily work on the farm and the sale of their coffees. On different plots, he cultivates varieties such as Gesha, Pink Bourbon, and Castillo, constantly developing processing methods to search for even higher quality coffee.This specific lot of Gesha was selected from among the best coffees in the Nariño region during the La Mejor Taza de Nariño competition. It then went to the auction of the best lots, where it was won by Adam Laska — co-owner of the KAFAR roastery — who had previously participated in the competition as a judge.ABOUT THE PROCESSINGThe processing starts with the manual harvesting of fully ripe cherries. Next, the coffee undergoes a four-day anaerobic fermentation in sealed jute bags kept in the cool climate of the Alta Clara region. The next stage is an eight-day anaerobic fermentation in airtight steel tanks, which deepens the sweetness, texture, and complexity of the sensory profile.After fermentation, the coffee is dried for 15–20 days in parabolic dryers, which ensures uniform airflow. The final stage is manual selection and a 15-day stabilization period in jute bags.In the cup, the coffee presents an elegant and refined character with notes of guava, sweet cherry, and muscovado sugar, supported by a creamy texture and a long, sweet finish. The crops are situated at an altitude of 1900 to 2200 meters above sea level, and the dominant varieties are Kurume and other local varieties characteristic of this region.The name Harruu Bunnaqaa originates from the Oromo language. "Harruu" means a large shade tree, under which Oromo community meetings traditionally took place, while "Bunnaqaa" is related to sharing coffee. Harruu Bunnaqaa is also a historical site in Guji, where local Oromo leaders would meet to jointly celebrate peace, blessings, and coffee.Coffees from this area stand out for their exceptional complexity and aromatic intensity, resulting primarily from the high altitude of the crops and very fertile soils.
