The region offers ideal climatic conditions and fertile soils, known locally as terra roxa (“red earth”), which are particularly suited to cultivating varieties such as Mundo Novo, Yellow Catuai, and Red Catuai. The coffee trees grow mainly on flat terrain, which allows for mechanical harvesting.The Robusta is sourced from Vietnam, Indonesia, or Uganda. Since its inception, it has been systematically developing, and its long-term plans include sourcing groundwater for processing as well as installing mechanical dryers and solar tunnels.The station employs six permanent workers, six seasonal workers, and 244 temporary workers. Each year, it processes between 500 and 600 tons of fruit supplied by 868 farmers who grow coffee in small backyard gardens. The main varieties cultivated in this region are local 7454, 74110, 7440, and 74112.The station applies rigorous procedures in terms of management and traceability of raw material origin. These include reducing water consumption and keeping detailed documentation at every stage of the supply chain — from farming to export.ABOUT THE PROCESSING OF COFFEE BEANS AT THE FARMThe 74110 variety, hand-picked by 868 smallholders. Before the actual process, it undergoes initial selection, during which unripe cherries or impurities are removed. Volcanic soils and a cool climate promote the slow ripening of the fruit, building the distinct acidity and structure characteristic of Kenyan coffees. The SL28, SL34, and Ruiru 11 varieties are also responsible for the profile.ABOUT THE PROCESSINGAfter selective hand-picking, ripe cherries are thoroughly sorted, including in a water tank, then depulped and fermented for about 24 hours. After fermentation, the beans are washed and dried on raised beds, where they are regularly turned and protected from intense sun and night moisture. Blackcurrant and citrus build an energetic profile, while kiwi and tomato add an interesting complexity to it.Intense blackcurrant dominates the aroma, complemented by fresh orange and a subtle, umami tomato note. In flavor, blackcurrant remains at the fore, joined by orange, lemon, and sweet kiwi. Bright, sparkling acidity gives juicy depth to the coffee, while a delicate tomato accent adds character to it. It is characterized by two types of climate: cool and temperate. Coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes.Our coffee comes from a selected group of producers from the upper part of the Palestina municipality, located at an altitude of approximately 1700 m a.s.l. This group of farmers specializes in cultivating varieties such as Tabi and Caturra.Cooperativa Departamental de Caficultores del Huila Ltda. (CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. It spans 27 municipalities and operates a support network consisting of 45 coffee purchasing points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 drying service points. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialty coffees allows the cooperative to meet market demand for coffee purchased under specific, ethical conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais, Brazil, between 1915 and 1918. The name "Caturra" comes from the Guarani word meaning "small," referring to the plant's dwarf stature. Due to its small size and densely spaced branches, it can be planted closely together, increasing the yield per area. Caturra contributed to the intensification of coffee farming, particularly in Central America, where it was introduced in the 1940s. This variety also played a crucial role in breeding coffee trees resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties.Tabi is a relatively young variety developed in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid. The word "Tabi" comes from the language of Colombia's indigenous people and means "peace" or "life."ABOUT THE PROCESSINGThe coffee undergoes a traditional washed process, which begins with the harvesting of ripe cherries. They are weighed and left for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after approximately 12 hours. Until recently, it was administratively part of Sidamo, but it now functions as a distinct coffee region. The area is largely forested and offers excellent conditions for growing Arabica. Coffee trees grow here at altitudes above 1,500 meters above sea level, in fertile, well-drained soils of volcanic origin that require little fertilization. The climate is warm but moderated by the altitude, with annual rainfall of 1,500–2,500 mm spread over about nine months. Temperatures usually remain within the range of 15 to 24°C. Over the past few decades, Guji has established its position as one of the most recognized and valued coffee-producing regions in Ethiopia.Sidamo is recognized as the largest coffee region in Ethiopia. It encompasses the fertile highlands located south of Lake Awasa in the Rift Valley. Crops are situated at altitudes ranging from 1,500 to 2,200 meters above sea level, which promotes slower ripening of the coffee cherries in a cooler climate. As a result, coffees from this region stand out with their natural sweetness and pleasant acidity. Highly fertile soils and annual rainfall of 1,200 to 2,000 mm create ideal conditions for growing high-quality coffee.Yirgacheffe lies in the central part of the Gedeo zone in southwestern Ethiopia. This region is famous for producing coffees of exceptional quality, which is influenced by fertile soils, a tropical climate, and high-altitude plantations, often exceeding 2,000 meters above sea level. Due to the altitude of the crops, local coffees are classified as SHG (Strictly High Grown) or SHB (Strictly Hard Bean). This means that the cherries ripen more slowly, allowing the plants to deliver nutrients to the beans for a longer period. It is one of the most valued specialty coffee growing areas in the country. Volcanic soil, the lake's humid microclimate, and an altitude of 1500–2100 m a.s.l. create ideal growing conditions here. Thanks to the slower ripening of the cherries, Rwandan coffee is characterized by a deep, complex flavor profile.The Kirambo washing station is picturesquely situated on a hillside overlooking Lake Kivu. It was established in 2008, but initially operated irregularly. The breakthrough came in 2017 when Rwanda Trading Company (RTC) took over management. Since then, Kirambo has become one of the leading specialty coffee processing centers in the region, regularly delivering highly rated and award-winning lots of beans.The coffee comes from small, family-owned farms that manage small plots of land. For this reason, processing stations were created in the region – they collect cherries from many local suppliers, sort them by quality, and process them using professional equipment, which would be unattainable for individual farmers. Rwanda Trading Company, which manages the washing station, actively supports smallholder producers by offering them agricultural training, crop renovation programs, and financial support. These actions translate into a steady increase in coffee quality, integration of the local community, and improved living conditions for farmers.The coffee cherries are hand-harvested and undergo rigorous selection, and are then processed using the natural (dry) method. The beans dry for 15–22 days on special raised beds, under continuous control of humidity levels. This processing method allows for achieving an extremely intense, fruity profile, rich sweetness, and a complex aroma.FROM THE ROASTERY: The capsule is made of 100% recycled aluminum (including 80% post-consumer recycled aluminum) and is fully recyclable. It is compatible with the Nespresso* Original system.We roast the green coffee and pack it into capsules in our own roastery. Peaberry is the name given to a very specific shape of coffee bean, which is the result of a natural mutation of the coffee cherry. While there are usually two beans in each fruit, a cherry with a peaberry mutation produces only one rounder bean. Peaberry mutations occur in approximately 5% of all coffee varieties. These beans are known for being rounder, smaller, and denser, which, when handled correctly, can contribute to a more even roast color.PROCESSINGCoffee cherries are carefully handpicked at peak ripeness by smallholder farmers and delivered to the factory for processing. The cherries undergo a Fully washed method, where they are first sorted, then pulped to remove the outer skin. Parchment is then fermented in concrete tanks for 12 to 24 hours, depending on temperature and climate conditions, to break down the mucilage. After fermentation, parchment is washed through grading channels using fresh water. During the peak season, parchment may be soaked in clean, circulating water for up to 24 hours before being transferred to raised beds for drying. The drying process lasts 5 to 21 days , with workers frequently turning the parchment and covering it during the hottest part of the day to ensure even drying and prevent defects.VARIETYSL28 is one of the best known and most respected African varieties. From Kenya, where it was originally selected in the 1930s, it has spread to other parts of Africa (it is particularly important in the Arabica growing areas of Uganda) and now to Latin America. The variety is suitable for medium to high altitudes and is drought tolerant, but susceptible to the main coffee diseases. SL28 is characterised by rusticity, a trait that means it can be left untended for several years or even decades and then return to successful production. Many parts of Kenya have SL28 trees that are 60-80 years old and still productive. The variety was selected at the former Scott Agricultural Laboratories (now the National Agricultural Laboratories, NARL, located in Kabete). The individual tree selections made at Scott Laboratories between 1935 and 1939 were prefixed with SL. There were 42 in total and they were examined for yield, quality and resistance to drought and disease. Recent genetic tests have confirmed that SL28 is related to the Bourbon genetic group. It has become valued for its sweet, complex flavour with vinous undertones.SL34 was originally selected in Kenya in the late 1930s at Scott Agricultural Laboratories. It is very susceptible to major diseases such as coffee rust, coffee berry blight and coffee berry disease. Therefore, proper disease control and prevention strategies are essential for its successful cultivation. Recent genetic tests have shown that SL34 is related to the Typica genetic group. It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. The pulping machine is only started once a large enough batch has been collected to allow for at least 2 hours of continuous operation. In the meantime, further deliveries arrive to maintain the workflow until approximately 19:00. After the pulp is removed, the beans are sorted by density in water channels into different grades: P1, P2, P3, lighter fractions, and so-called "pods" (the lowest grade).The coffee then ferments for 12–24 hours, after which it is thoroughly washed and soaked for another 8–12 hours.
