Oscar continues this tradition, and thanks to him and his approach, Los Nogales is a center of innovation and information for all proactive farmers in this region.Detailed description of this coffee's processing method:Process: mosto fermentationSelection of ripe fruit: The process begins with the careful harvesting of only ripe coffee cherries. This is the key to obtaining high-quality coffee beans, as ripe fruit has optimal flavor and aroma.Cleaning and disinfection with purified water: The harvested coffee beans are thoroughly cleaned and disinfected with purified water. This helps eliminate impurities and unwanted microorganisms.Density sorting, or floating: Coffee beans are submerged in water and sorted by density. Higher-density beans tend to sink to the bottom, while lower-density beans float on the surface. This helps separate good beans from defective ones.Thermal shock: Selected beans undergo thermal shock in water at 80°C for 60 seconds, followed by rapid cooling in cold water at 15°C for 3 minutes. This process breaks down sugars and pasteurizes the beans, contributing to the final flavor of the coffee.Pulping in a wet mill and adding mosto: Coffee beans are separated from the skins and placed in fermentation barrels. Squeezed juice from the coffee cherry skins themselves, which contains a high amount of natural sugars—the so-called "mosto"—is added to them. This can enhance the flavor profile and give the coffee sweet notes.Fermentation: Coffee beans undergo a fermentation process lasting 120 hours. During this time, sugars break down, which affects the coffee's flavor and acidity. Pre-fermentation agents, similar to bread sourdough, are also added to give the coffee unique properties.Sun drying: Finally, the fermented coffee beans are sun-dried for 15 days. The area is known not only for its fertile soil but also for the small family farms that have been growing coffee here for generations. Agriculture is deeply rooted in the local culture – coffee cherries are hand-picked and farmers pay close attention to every detail of the harvest and processing. The Sambewe processing station works with more than 400 smallholder farmers who bring their carefully hand-picked cherries to it.For this particular batch, only Peaberry beans were selected, which give the coffee a unique flavor profile. After hand-picking, the floaters were sorted from the coffee and then the coffee was hulled and sent to fermentation tanks, where after 18-36 hours of fermentation, the beans were freed from the remaining pulp. After washing in channels, the subsequent beans were spread out in parchment on African beds, where they are dried for an average of 14-30 days depending on the weather. Plenty of floral and citrus notes, just right for bright summer days.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. The farm covers 12 hectares, of which 11 hectares are dedicated to coffee.Fernando Vargas purchased the farm in 2011 and gradually developed it towards the production of specialty coffee. Pink Bourbon was introduced to the farm in 2017 and currently makes up about 30% of the crops. Other varieties grown include Colombia Amarillo and Caturra.Pitalito is one of the most highly regarded coffee production areas in Huila. The growing conditions favor coffees with high sweetness, complex acidity, and good structure.ABOUT THE VARIETYPink Bourbon is an Arabica variety particularly associated with Huila. It is valued for its high sweetness, good structure, and a profile that often combines red fruits, tropical fruits, floral notes, and delicate spiciness.In this coffee, the variety delivers a distinctly fruity profile, but it is not one-dimensional. Alongside the fruit, there are notes of caramel, cinnamon, and chocolate, which build a greater depth in the brew.ABOUT THE PROCESSINGRipe coffee cherries are hand-picked and then placed in a water tank. This step allows for the separation of lower-density cherries, which float to the surface. After selection, the coffee undergoes about 12 hours of controlled contact with oxygen.Next, the cherries are depulped, and the beans, with some of the mucilage left on them, undergo 36 hours of dry aerobic fermentation. During this time, the coffee is regularly mixed to reduce the risk of overheating and to maintain a more even process. After fermentation, the coffee is washed and dried for about 15 days in a covered drying house. We recommend it primarily for filter brewing methods, where its complexity and delicacy are most pronounced.The coffee comes from the Oromia, Guji region in Ethiopia and was produced by Gemechu Shonora in cooperation with around 500 smallholder farmers. The crops are situated at an altitude of 1900 to 2200 meters above sea level, and the dominant varieties are Kurume and other local varieties characteristic of this region.The name Harruu Bunnaqaa originates from the Oromo language. "Harruu" means a large shade tree, under which Oromo community meetings traditionally took place, while "Bunnaqaa" is related to sharing coffee. Harruu Bunnaqaa is also a historical site in Guji, where local Oromo leaders would meet to jointly celebrate peace, blessings, and coffee.Coffees from this area stand out for their exceptional complexity and aromatic intensity, resulting primarily from the high altitude of the crops and very fertile soils. Naturally, this boosted the quality of the final product and made exporting outside Tanzania easier – and as a result – increased the cooperative's profit.ABOUT THE PROCESSING OF COFFEE BEANS ON THE FARMThe Bourbon variety, hand-picked, is delivered on the same day to a small washing station owned by the cooperative. After the depulping process, which separates the seed from the fruit, it is sorted by bean size and then separately fermented in a tank for 10 hours. He owns 6.5 hectares of coffee farm in one place and another 3 hectares in another place within the same village. He works full time in his farm assisted by his able children who completed their primary education but couldn’t find another job in towns. Mr Bekele, who is the father of 11 children, fully relied on the income he generated from his coffee farm. The coffee farm business also supports his two elder married sons who also work together with him.Mr Bekele Gemeda was incredibly grateful to see the care he has put into his coffee showed well enough in the cup to have his coffee kept separate, something that is rare in Ethiopia. The coffee is picked ripe and depulped the same day. There is usually a fermentation period of 8–12 hours in open-air tanks, then washed in water channels to remove the mucilage. The coffee seeds will be spread on raised beds to dry for 5–15 days, depending on the weather.ROASTERTea with honey and lemon and a piece of yeast cake with plum - that is what this coffee reminds me of.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. Grade 3 is considered a low grade.Fermentation: The coffee is dry fermented for 18-36 hours in concrete tanks under a roof that provides shade for better temperature control during fermentation.Washing/Grading: After fermentation the coffees are washed and again graded by density in washing channels. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long.
