Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on small, multi-hectare farms in the El Tambo microregion, located west of Popayán, the capital of the Cauca department.PROCESSINGA single-variety Castillo, hand-harvested and depulped immediately after the cherries are picked. The beans are fermented for approximately 36 hours in a tank, then washed three times to completely remove any remaining mucilage from the parchment. They are slow-dried for around 15 days on raised beds, then homogenized and stabilized for several more days.ROASTER'S OPINIONYou can’t drink the same blend twice. Heraclitus already knew that, and we trust the guy. What he couldn’t quite grasp was that life is like helium-6 isotope – an outrageously unstable joke of the universe. We know this, and that’s how Elixir was born. Wildly unstable, always sweet. Different every time, always fruity. We throw our best coffees into it, because honestly, who’s going to stop us? Just as the warm weather has settled in for good, the first fresh harvests from Africa are starting to arrive. Itumpi from Tanzania clearly reminds us why we value coffees from this part of the continent: crisp, juicy brews with a large dose of freshness.In taste, Itumpi leans towards green-red rhubarb and pink grapefruit. The acidity is distinct and pleasantly juicy. In mouthfeel, the coffee is light, tea-like, and clean, with a crisp finish that practically begs to be brewed over ice.The enigmatic PB stands for peaberry. It refers to a natural anomaly where, instead of two flat beans, a single, smaller, and rounder bean develops inside the coffee cherry. Sometimes overlooked, though completely unfairly, because it can yield a very intense, concentrated flavor. It was this intensity that stole our taste buds from among the other grades.The raw material comes from the Itumpi cooperative in the Mbozi district, Songwe region. About 160 local producers operate here, cultivating coffee at an altitude of 1500–1700 meters above sea level. Sweet citrus and caramel bring warmth and brightness, while black tea provides structure and a clean, long finish. The cup is smooth, balanced, and easy to read, with a natural sweetness tying it all together. Expressive yet calm and highly drinkable – a great everyday coffee.RECIPEIt works best as filter coffee when you are looking for something sweet, balanced, and easy for daily brewing. Use a V60, Chemex, or batch brew, grind medium-coarse, and brew with water at 92–94°C to preserve the caramel sweetness and citrus brightness without losing the tea-like structure.In an AeroPress, the coffee becomes slightly fuller and rounder – the note of caramel steps into the foreground, and the body becomes a bit richer. But as it happens, until now these were mainly anaerobic, extended natural, and similar processes. In other words, the kind where the processing itself heavily influences the coffee's character. This time, however, we are offering you a washed coffee from Indonesia – it allows you to truly taste the origin.Frinsa is an estate that has been operating since 2010. It is run by a married couple, Wildan Mustofa and Atieq Mustikaningtyas. It consists of six farms with a total area of 105 hectares and its own washing station with a laboratory for anaerobic processing. Since its inception, the estate has focused on quality coffees. Initially, this was primarily related to producing coffees using the washed process, which is rare in Indonesia. Later, experimental processes were added to the mix. Thanks to the experience of the Mustofa and Mustikaningtyas couple and continuous investment in infrastructure, these coffees are always of the highest standard.ROASTER'S OPINIONThis is our first washed bean from Indonesia. There is something of cherry liqueur to it: lightly fermented, deep and intense. But instead of drifting into a heavy, boozy ferment, it stays on the light side of the Force: fresh, bright, and grapefruit-leaning.Our first impression? Cherries in a liqueur-like, very sweet form. The grapefruit note is there to show clarity, freshness, and citrusy acidity. During our tests, the brew came out expressive, but not overwhelming. Fruity, clea,n and juicy. Not too light, not too heavy. Just right.The coffee comes from the Chirripó region in Costa Rica, from farms located at 1800–1950 m a.s.l. Behind the lot stands the Alvarado Fonseca Family, a producer family connected with the Corazón de Jesús micro-mill. Jhon Alvarado Abarca, also known as Johny, regularly appears among the top names in Cup of Excellence, and his work shows what you can achieve with experience, ambition, and constant process refinement.This lot was processed as natural anaerobic, which helps build deep, fermented fruitiness without taking away the coffee’s clarity. And that is exactly what we liked most about it: the intensity is clear, but kept in check. A good example of a thoughtful combination of peaberry selection and process.We especially recommend this lot to people who enjoy fruity-fermented intensity, but care just as much about balance. There is energy and depth here. But there is also lightness and freshness.*Peaberry is a natural anomaly: instead of two flat seeds developing inside the coffee cherry, there is one smaller, rounder seed. This season, we went for the Aji variety, already warmly received by you, which struck us with its transparency. We got a proper strawberry punch straight to the taste buds, and we are still recovering from that fruity knockout.In the cup, the strawberry was the main thing: fresh, but also a little more jammy. At times, we had the impression of those yoghurt-and-strawberry chocolates appearing in the flavour too. There is no doubt that a lot is going on here, and sensory boredom is not really an option. We completed the flavour profile with notes of mango and sea buckthorn to highlight the fresh, soft sweetness and intense acidity that stays with us long after the last sip. The name Hydro Honey may sound fancy, but it is not just a pretty label. Behind it stands a specific, multi-stage process. Only the ripest cherries go into processing, first fermenting in a controlled anaerobic environment. The coffee is then depulped and pre-dried. Later, it returns to the tanks for a rehydration stage with selected yeasts and bacteria, before moving to raised beds, where it dries for up to 26 days. Finally, it goes through three months of stabilisation under controlled conditions. The family farm has existed since 1840. This decision brought them great success and business stability. Today, they produce some of the most interesting coffees in the industry.After harvesting, the coffee cherries go to the mill, where they are washed and sorted by quality using optical sorters. The crops are situated at an altitude of 1900 to 2200 meters above sea level, and the dominant varieties are Kurume and other local varieties characteristic of this region.The name Harruu Bunnaqaa originates from the Oromo language. "Harruu" means a large shade tree, under which Oromo community meetings traditionally took place, while "Bunnaqaa" is related to sharing coffee. Harruu Bunnaqaa is also a historical site in Guji, where local Oromo leaders would meet to jointly celebrate peace, blessings, and coffee.Coffees from this area stand out for their exceptional complexity and aromatic intensity, resulting primarily from the high altitude of the crops and very fertile soils. The pulping machine is only started once a large enough batch has been collected to allow for at least 2 hours of continuous operation. In the meantime, further deliveries arrive to maintain the workflow until approximately 19:00. After the pulp is removed, the beans are sorted by density in water channels into different grades: P1, P2, P3, lighter fractions, and so-called "pods" (the lowest grade).The coffee then ferments for 12–24 hours, after which it is thoroughly washed and soaked for another 8–12 hours.
