Additional income is provided by cattle trading and a shop run by his wife, Alicia Trigueros.ABOUT THE PROCESSINGThe harvested cherries are taken to the Ayarza Cherry Mill in the Santa Rosa region, where they are centrally selected, fermented, and dried. As a result, the entire process takes place under strict control. The lot consists of the Bourbon, Catuai, Pache, and Anacafe 14 varieties grown at an altitude of 1,600–2,000 meters above sea level.Only fully ripe cherries from the highest parts of the plantation are selected for processing. They undergo anaerobic fermentation for 120 hours in sealed bags equipped with a carbon dioxide release valve. Next, they dry on a patio for about ten days, after which the process is finished in a mechanical dryer down to a moisture level of 11.5%.The combination of long fermentation and precise drying yields a coffee with a smooth, sweet character, in which fruity notes harmoniously blend with marzipan and milk chocolate.ROASTER'S OPINIONThis Guatemala proves that a long, 120-hour anaerobic fermentation does not have to mean an intensely fermentative, dominant profile. Instead, it offers exceptional balance, a velvety texture, and a distinct, natural sweetness that makes every cup remarkably enjoyable and harmonious.Notes of almond marzipan and dried apricots emerge in the foreground, creating a warm, dessert-like base. They are accompanied by juicy blackberries that bring a fruity freshness, while creamy milk chocolate rounds out the whole profile, leaving a long, sweet finish. The flavors intertwine smoothly, creating a complex yet very approachable profile.This is an anaerobic natural with an elegant character – full of depth, yet free from excessive fermentativeness. They are pioneers when it comes to juicy and fruity Costa Rican naturals. In previous years, we visited their plantation several times and together tasted lots that had only just left the drying tables. Cupping with the producers on the farm is always a unique experience.The name Las Lajas comes from the Spanish version of the Arabic word used to describe stone artifacts made by the indigenous population, which were found on the farm's territory when it was founded, around 1840! Located at the foot of the Poás Volcano, in the town of Sabanilla, in the Alajuela region of Costa Rica, the farm has been passed down from generation to generation.In 2000, Las Lajas became one of the first farms in Costa Rica to obtain official organic certification. However, the history of their organic practices dates back to 1980 – that was when Oscar’s father passed away from illnesses related to the use of pesticides. Although there were no premiums for organic coffee at that time, Oscar and Francisca knew they had to transition to organic and sustainable farming, caring for the health and future of both their family and the local ecosystem.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMAlma Negra is a proprietary interpretation of natural processing developed by the Chacóns. During the first week, the hand-picked cherries lie on African raised beds and are constantly mixed for even drying. Then, they are moved to the greenhouse patio and dried in thin layers during the day, while at night they are formed back into thicker piles. These cycles are repeated until the ideal level of dryness is reached. From the very first sip, this coffee is surprising – its profile closely resembles beans from Kenya.Redcurrant dominates the aroma, complemented by a delicate floral background. In the cup, the currant notes are distinct, rounded out by hints of slightly underripe green apple and yellow mirabelle plum. The acidity is intense, reminiscent of currant and apple, with moderate fruit sweetness and a long, fresh finish. This is another highly successful lot from Coffee Garden.The Coffee Yard is a company owned by Norman Mukuru, who has collaborated with The Coffee Gardens for years on projects related to coffee processing and traceability. Thanks to this relationship, his beans can be exported to global markets.Norman operates at the foot of Mount Elgon, sourcing coffee from the Sironko, Mbale, Bulambuli, and Kapchorwa regions. He has nearly 20 years of experience and, since 2018, has also been developing natural processing, constantly refining his methods. This place has ideal growing conditions - fertile volcanic soils, hilly terrain, a cool climate, and regular rainfall. Thanks to this, the coffee from there is of truly high quality.After colonial times, cultivation was taken over by local, small-scale farmers who continue this tradition to this day, often using natural, sustainable methods and shade-grown cultivation.For the inhabitants of Gayo, coffee is more than just a product - it is the foundation of life. It supports virtually every family and is strongly tied to their culture and identity.After harvesting, the fresh coffee cherries are processed immediately. The first step is sorting using the flotation method (known as "rimbang") - the cherries are thrown into water, which causes the ripe, heavier (meaning good) ones to sink, while the immature or damaged ones float to the surface and are discarded. First of all, the species – it is not Arabica, it is not Canephora, and it is not Excelsa. It is a very rare Liberica. Its beautiful, tiny coffee cherries hide a great deal of sweetness and an interesting character. Secondly, Vietnam – an origin that we simply avoid, and thirdly – this Liberica grows at an altitude of 600 meters above sea level. To top it off, a very long fermentation was added to the coffee.All of this made the coffee very intense. In the aroma, it smells of fruit, malt, and delicate herbal notes. In the flavor, you will find very intense notes of stevia, apple, and tropical fruits. Everything is crowned by a long, very sweet, malty aftertaste. The acidity is low but well-developed. The body is high and very sticky, reminiscent of the natural sweetener that is stevia. This is a coffee that tastes like nothing we have ever had before!PROCESSING - intense fermentationIn the case of this coffee, we are dealing with a fairly simple processing method – anaerobic natural. Although the processing itself is quite classic, its length gives it a unique character. After being delivered to the washing station, the coffee cherries were placed into plastic vacuum bags. There, the cherries ferment for as long as 120 hours. After this time, the cherries are spread out on raised beds and dry for another 30 days. At the very end, the seeds are stripped of the remaining pulp and packed into GrainPro bags.PLANTATION - Quang Tri - Liberica straight from Vietnamese Saigon!Quang Tri is a coffee shop, a roastery, and a coffee producer. On the production side, Quang Tri operates by looking for small, natural plantations and rare botanical varieties – Canephora, Excelsa, and Liberica. And that is how lot 96b was created – it is a blend of Libericas coming from two very small farms.Next, the coffee was transported to one of the processing stations that Quang Tri has been working with for many years. There, the coffee was subjected to an intense fermentation process. First, the cleaned coffee cherries ferment for as long as 120 hours in plastic, airless bags. After this time, the cherries are spread out on raised beds and dry for another 30 days. At the very end, the seeds are stripped of the remaining pulp and packed into GrainPro bags.ROASTER'S OPINIONThere are rare coffees, there are strange coffees, there are unique coffees – this one combines everything. First of all, we are dealing with Liberica – in our several-year history, we have tasted maybe 2 Libericas and they were not very good. Secondly, it is a coffee from Vietnam, which is an origin we generally avoid. Thirdly, we have a very intense fermentation, which in itself is not that strange. However, Quang Tri produced only 180 kg of this lot – we bought 60 kg from this lot. The coffee is very sweet, even sticky – honey-like, though this sweetness is definitely much more reminiscent of stevia than honey. It has a light, fruity acidity reminiscent of apple, plus some tropical fruits and malt or dark beer. After this time, all flower residues are rinsed out, and the coffee is sent to dry. So much for the processing, and now a few interesting facts about the Simalem farm where this coffee comes from. It is located in the highlands of North Sumatra. This region, thanks to its fertile, volcanic soils and cool climate, offers ideal conditions for growing coffee. The Simalem farm operates in a sustainable manner, without the intensive use of chemicals, and its practices are certified and transparent. Johan Kwe is responsible for the quality of the processing; he is the only certified Q Processing Professional in Indonesia, meaning he possesses the best available knowledge in the field of coffee processing.ROASTER'S OPINIONOfficially the first co-ferment in the history of our roastery. It is very well-balanced – it tastes clearly of jasmine, but this is supported by the sweetness of grapes and a great, tea-like body.
