There is something of cherry liqueur to it: lightly fermented, deep and intense. But instead of drifting into a heavy, boozy ferment, it stays on the light side of the Force: fresh, bright, and grapefruit-leaning.Our first impression? Cherries in a liqueur-like, very sweet form. The grapefruit note is there to show clarity, freshness, and citrusy acidity. During our tests, the brew came out expressive, but not overwhelming. Fruity, clea,n and juicy. Not too light, not too heavy. Just right.The coffee comes from the Chirripó region in Costa Rica, from farms located at 1800–1950 m a.s.l. Behind the lot stands the Alvarado Fonseca Family, a producer family connected with the Corazón de Jesús micro-mill. Jhon Alvarado Abarca, also known as Johny, regularly appears among the top names in Cup of Excellence, and his work shows what you can achieve with experience, ambition, and constant process refinement.This lot was processed as natural anaerobic, which helps build deep, fermented fruitiness without taking away the coffee’s clarity. And that is exactly what we liked most about it: the intensity is clear, but kept in check. A good example of a thoughtful combination of peaberry selection and process.We especially recommend this lot to people who enjoy fruity-fermented intensity, but care just as much about balance. There is energy and depth here. But there is also lightness and freshness.*Peaberry is a natural anomaly: instead of two flat seeds developing inside the coffee cherry, there is one smaller, rounder seed. The family farm has existed since 1840. The 1990s brought significant losses, leading the family to sell part of their land to invest in production quality — they launched their own washing station and coffee mill, and also planted a wide variety of Arabica varieties, such as SL-28, Geisha, Villa Sarchi, and Java. This decision brought them great success and business stability. Today, they produce some of the most interesting coffees in the industry.After harvesting, the coffee cherries go to the mill, where they are washed and sorted by quality using optical sorters. Then, the coffee undergoes three stages of drying. For the first 10 days, it dries in the sun; for the next 8 days, it remains outdoors but shielded from the sun; finally, it goes to a patio-greenhouse, where it spends 15 days. After this time, it is hulled and moves to a warehouse for another 60 days, where the beans mature, stabilize, and gain longevity — skipping this stage could result in a rapid loss of quality.ROASTER'S OPINIONA fermented sensation. This is exactly where lots based on varieties such as Gesha, SL28, or Ethiopia 47 are created, which are now processed in a newly built dry mill launched in 2025.From the first experiments conducted on the Finca La Torre farm to multiple high rankings in the Cup of Excellence competition, the Alvarado family's business is based on conscious development, consistency, and a clearly defined vision of quality. The high altitude of the farms, the cool climate, and the long ripening period of the cherries translate into coffees with high sweetness, a clean profile, and great elegance in the cup.The coffees included in this lot come from the El Naranjal, Las Naranjas, and Los Angeles farms. The farmers manage their land under the shade of forest and fruit trees, taking care of biodiversity and soil fertility. Ripe cherries are hand-picked and then subjected to classic washed processing. After fermentation and washing, the coffee is dried for about twelve days under carefully controlled humidity and sun exposure.Behind the project is Cafetos de Segovia, an organization that has for years been helping local producers reach the specialty market directly. It places great emphasis on supply chain transparency, long-term cooperation with farmers, and fair compensation for high quality. Additional income is provided by cattle trading and a shop run by his wife, Alicia Trigueros.ABOUT THE PROCESSINGThe harvested cherries are taken to the Ayarza Cherry Mill in the Santa Rosa region, where they are centrally selected, fermented, and dried. As a result, the entire process takes place under strict control. The lot consists of the Bourbon, Catuai, Pache, and Anacafe 14 varieties grown at an altitude of 1,600–2,000 meters above sea level.Only fully ripe cherries from the highest parts of the plantation are selected for processing. They undergo anaerobic fermentation for 120 hours in sealed bags equipped with a carbon dioxide release valve. Next, they dry on a patio for about ten days, after which the process is finished in a mechanical dryer down to a moisture level of 11.5%.The combination of long fermentation and precise drying yields a coffee with a smooth, sweet character, in which fruity notes harmoniously blend with marzipan and milk chocolate.ROASTER'S OPINIONThis Guatemala proves that a long, 120-hour anaerobic fermentation does not have to mean an intensely fermentative, dominant profile. Instead, it offers exceptional balance, a velvety texture, and a distinct, natural sweetness that makes every cup remarkably enjoyable and harmonious.Notes of almond marzipan and dried apricots emerge in the foreground, creating a warm, dessert-like base. They are accompanied by juicy blackberries that bring a fruity freshness, while creamy milk chocolate rounds out the whole profile, leaving a long, sweet finish. The flavors intertwine smoothly, creating a complex yet very approachable profile.This is an anaerobic natural with an elegant character – full of depth, yet free from excessive fermentativeness. They are pioneers when it comes to juicy and fruity Costa Rican naturals. In previous years, we visited their plantation several times and together tasted lots that had only just left the drying tables. Cupping with the producers on the farm is always a unique experience.The name Las Lajas comes from the Spanish version of the Arabic word used to describe stone artifacts made by the indigenous population, which were found on the farm's territory when it was founded, around 1840! Located at the foot of the Poás Volcano, in the town of Sabanilla, in the Alajuela region of Costa Rica, the farm has been passed down from generation to generation.In 2000, Las Lajas became one of the first farms in Costa Rica to obtain official organic certification. However, the history of their organic practices dates back to 1980 – that was when Oscar’s father passed away from illnesses related to the use of pesticides. Although there were no premiums for organic coffee at that time, Oscar and Francisca knew they had to transition to organic and sustainable farming, caring for the health and future of both their family and the local ecosystem.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMAlma Negra is a proprietary interpretation of natural processing developed by the Chacóns. During the first week, the hand-picked cherries lie on African raised beds and are constantly mixed for even drying. Then, they are moved to the greenhouse patio and dried in thin layers during the day, while at night they are formed back into thicker piles. These cycles are repeated until the ideal level of dryness is reached. After that, the coffee rests for at least 60 days before export to achieve perfect homogenization.ROASTER'S OPINIONEvery year, we wait for coffees from Las Lajas with flushed cheeks!
