Coffeelab Coffee

COFFEELAB is a Warsaw-based specialty coffee roastery built on three core pillars: quality, precision, and taste. From the very beginning, our focus has been on sourcing the finest green coffee, carefully selected from plantations around the world. We roast both classic single origins and coffees from less obvious regions, unafraid to explore unconventional beans with experimental processing methods and discover new flavor profiles — all to ensure that every cup is full of character.Behind the brand stand passionate people — experienced roasters and baristas who truly understand coffee. Many have been with us since day one, and their knowledge and dedication form the foundation of our roastery. Thanks to them, every batch is refined down to the smallest detail — from sourcing to the final roast profile. It’s the people, their expertise, and our shared obsession with coffee that make COFFEELAB more than just a roastery — it’s a community built around flavor, precision, and passion for what we do every day.

Whole-bean specialty coffee from Colombia, roasted in Warsaw by Coffeelab. Dark roast, perfect for espresso machines and moka pots. You can expect hints of almonds, amaretto and biscuits.Country: ColombiaRegion: HuilaMethod of decaffeination: SugarcaneProcessing: WashedAltitude: 1400 – 2000 m a.s.l.Variety: Castillo, Caturra, ColombiaABOUT COFFEEIn this edition, Decaf but Tasty! reminds us entirely of tiramisu. First, a dessert-like base of sponge fingers. Then plenty of sweetness, notes of almonds and that sweet-bitter amaretto accent. This coffee comes from Huila, Colombia, and follows a classic washed process. The beans are sourced from small-scale producers working on a few hectares each, where selective picking and controlled fermentation are the norm rather than the exception. Depulped on the day of harvest, fermented for 12–36 hours, then thoroughly washed and dried to the desired moisture level. The result is a clean, structured base that translates into clarity and balanced sweetness in espresso.Caffeine is removed using the EA (ethyl acetate) method. It is a compound that occurs naturally in fruit and as a by-product of sugar fermentation. The green coffee, already processed, is first steamed under low pressure to open up its structure. It is then placed in a water-EA solution, which binds to the caffeine molecules. The process is repeated until caffeine is no longer detectable. Finally, the coffee is steamed once more to remove any remaining traces, then dried and prepared for export. The result is a decaffeinated espresso that feels complete. Sweet, expressive and simply good.Store in a cold and dry space.

COFFEELAB - Brazil Fazenda Vivir Café Filter 250 g

Roasting date: 23.07.2026

Whole-bean specialty coffee from Brazil, roasted in Warsaw by CoffeeLab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of dried apricot, muscovado and rice tea.Origin: BrazilRegion: Cerrado MineiroFarm: Fazenda Vivir CaféVariety: Red CatuaíProcessing: Induced FermentationAltitude: 1100 m a.s.l.Brazil from the Veloso sisters is a proper sweet one for filter: sticky and dessert-like. Just right over a few ice cubes when you feel like a cold coffee that leans more sweet than fruity and juicy. You won’t find high acidity or a citrusy kick here. Instead, there are notes of dried fruit, like sweet apricot, alongside the darker, deeper sweetness of muscovado sugar. The finish reminds us of rice tea: gently toasted, smooth, with a pleasantly sticky texture.ABOUT THE FARMBehind this coffee are Virgínia and Viviane Veloso, sisters and co-founders of Vivir Café. Their family has been working with coffee in Cerrado Mineiro for over 50 years, and today they produce coffee across six farms, focusing on specialty Arabica, quality and a more conscious approach to farming. This lot is Red Catuaí grown at 1100 m a.s.l., processed as a natural with 48 hours of induced fermentation.Store in a cold and dry space.

COFFEELAB - Burundi Hafi JAGODZIANKA Natural Filter 250 g

Manufacturer: COFFEELAB

Roasting date: 27.07.2026

Whole-bean specialty coffee from Burundi, roasted in Warsaw by CoffeeLab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of blackberry, sweet crumble and buttery texture.Country: BurundiRegion: MuyingaVarietal: BourbonProcessing: NaturalAltitude: 1750 m a.s.l.We are pleased to welcome Burundi Hafi to our menu. This time in a special summer edition. We are continuing our series of seasonal releases inspired by fruity classics, and now we are turning to one of the most sought after summer pastries of all: the blueberry bun.FROM THE ROASTERYWhen Karolina asked for a coffee that tasted like a blueberry bun, our thoughts went straight to Burundi. Naturals from this origin can deliver exactly what we were looking for: plenty of dark fruit, pronounced sweetness and a round, smooth structure. Here, the blueberry flavour blends with a sweetness reminiscent of crumble topping, while the dense and velvety texture brings to mind a soft, buttery pastry. A blueberry bun in coffee form, only with caffeine instead of icing.ABOUT THE COFFEEHafi comes from Muyinga Province and from one of the newest washing stations working with JNP Coffee. The name itself means “close” in Kirundi and refers to a very real change in the lives of local producers. Before the station was built, some of them had to travel up to 20 kilometres to deliver freshly harvested cherries to the nearest mill. In the region’s hilly terrain, that journey was often too long for processing to begin on the same day. And the sooner the harvested fruit reaches the station, the easier it is to preserve its quality and the flavour potential of the green coffee. The new station shortened that distance and gave producers better control over freshly picked cherries. Around 2,000 farmers work with it, while the team itself is made up of people who gained experience at other mills across the region. We chose Hafi as a natural once again because everything works together so well here. The process highlights its dark fruit sweetness, gives the coffee a fuller character and moves the profile towards a rounded, dessert like cup.Plenty of blueberries, plenty of sweetness and a body reminiscent of the soft centre of a freshly baked pastry. A summer filter coffee that does exactly what the packaging suggests, without making a fuss about it. And somewhere in the back of your mind, you can almost hear that familiar seaside call: FRESH BLUEBERRY BUNS!Store in a cold and dry space.

COFFEELAB - Burundi Nguvu Washed Filter 250 g

Manufacturer: COFFEELAB

Roasting date: 23.07.2026

Whole-bean specialty coffee from Burundi, roasted in Warsaw by CoffeeLab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of blackberry, black tea and apricot.Origin: BurundiRegion: MuyingaVariety: BourbonProcessing: WashedAltitude: 1700 m a.s.l.ABOUT THE COFFEEAnother fresh harvest from Luis, and just like every year, it does not disappoint. This season, we went for the Aji variety, already warmly received by you, which struck us with its transparency. We got a proper strawberry punch straight to the taste buds, and we are still recovering from that fruity knockout. In the cup, the strawberry was the main thing: fresh, but also a little more jammy. At times, we had the impression of those yoghurt-and-strawberry chocolates appearing in the flavour too. There is no doubt that a lot is going on here, and sensory boredom is not really an option. We completed the flavour profile with notes of mango and sea buckthorn to highlight the fresh, soft sweetness and intense acidity that stays with us long after the last sip. In truth, the range of associations was almost endless, so we narrowed it down to the notes that stood out the most and best captured this juicy, ripe fruitiness.ABOUT THE VARIETYWe write the variety simply as Aji, though its fuller name is Bourbon Aji. The name comes from… a pepper. Farmers in southern Huila noticed the distinctive aroma of the cherries, reminiscent of a small chilli pepper. Here comes the plot twist, though: genetic testing has shown that it is not a direct descendant of classic Bourbon, but a variety of Ethiopian origin.ABOUT THE PROCESSINGThe coffee and its processing come from Luis Marcelino of Aroma Nativo in Pitalito. The name Hydro Honey may sound fancy, but it is not just a pretty label. Behind it stands a specific, multi-stage process. Only the ripest cherries go into processing, first fermenting in a controlled anaerobic environment. The coffee is then depulped and pre-dried. Later, it returns to the tanks for a rehydration stage with selected yeasts and bacteria, before moving to raised beds, where it dries for up to 26 days. Finally, it goes through three months of stabilisation under controlled conditions. This is exactly the process that helps build an equally layered profile: intense, juicy and long-lasting.Store in a cold and dry space.

COFFEELAB - Colombia Miraflores Honey Filter 200 g

Manufacturer: COFFEELAB

Roasting date: 24.08.2026

Whole-bean specialty coffee from Colombia, roasted in Warsaw by CoffeeLab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of hard candies, pineapple and mango.Origin: ColombiaRegion: Huila, PitalitoFarm: MirafloresVariety: Pink Bourbon, Geisha, Bourbon AjiProcessing: HoneyAltitude: 1750 m a.s.l.ABOUT THE COFFEE A coffee hat-trick. Three widely loved and highly sought-after varieties: Geisha, Pink Bourbon and Bourbon Aji, all in one bag. Lucelly Aviles Trejos combined three separately processed lots from her 2026 harvest to create the final boss from Miraflores Farm: wildly tropical, delicately floral and turbo sweet.Hard candy describes less of a single flavour here and more of the overall sensation. The cup is sticky and candy-sweet, with a long, fruity finish. Pineapple is meant to convey its bright, tropical acidity, and mango its ripe sweetness and fleshy fruit character. It is difficult to pull the blend apart and say which variety is responsible for which part of the flavour. And that is exactly how it should be. This is not about three solos being played at once, but the effect that only emerges when the whole trio plays together.ABOUT THE PROCESSING AND THE FARMLucelly processed all three components separately using the honey method. Although the exact fermentation methods and durations differ, they follow the same basic structure: sorting the cherries in water, fermenting them whole, depulping and then carrying out another fermentation stage in sealed tanks. The beans are partially washed and dried for 8 days with some of the mucilage still attached. Only then are the three finished lots brought together in a single blend.Lucelly runs the five-hectare Miraflores Farm with her family in Pitalito, Huila, at around 1,750 metres above sea level. When they bought the farm in 2019, it had been neglected and needed rebuilding almost from the ground up. Lucelly began studying soil health and coffee cultivation, completed a sensory evaluation course, roasted her first small batches herself and sold them to neighbours. Over time, the family created their own brand, Dolcecafé, and their coffees began reaching customers far beyond Colombia.Miraflores shows that sometimes the simplest experiments produce the biggest results. Three great lots, one blend and a flavour none of them could deliver alone.Store in a cold and dry space.

COFFEELAB - Costa Rica Alvarado Fonseca Familia Natural Anaerobic Filter 250 g

Manufacturer: COFFEELAB

Roasting date: 17.08.2026

Whole-bean specialty coffee from Costa Rica, roasted in Warsaw by CoffeeLab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of cherry liqueur, wild strawberry and grapefruit.Origin: Costa RicaRegion: ChirripóFarm: Corazón de JesúsVariety: PeaberryProcessing: Natural AnaerobicAltitude: 1800 – 1950 m a.s.l.ABOUT THE COFFEECosta Rica Alvarado Fonseca Family is another peaberry* that completely won us over. There is something of cherry liqueur to it: lightly fermented, deep and intense. But instead of drifting into a heavy, boozy ferment, it stays on the light side of the Force: fresh, bright, and grapefruit-leaning.Our first impression? Cherries in a liqueur-like, very sweet form. The grapefruit note is there to show clarity, freshness, and citrusy acidity. During our tests, the brew came out expressive, but not overwhelming. Fruity, clea,n and juicy. Not too light, not too heavy. Just right. The coffee comes from the Chirripó region in Costa Rica, from farms located at 1800–1950 m a.s.l. Behind the lot stands the Alvarado Fonseca Family, a producer family connected with the Corazón de Jesús micro-mill. Jhon Alvarado Abarca, also known as Johny, regularly appears among the top names in Cup of Excellence, and his work shows what you can achieve with experience, ambition, and constant process refinement. This lot was processed as natural anaerobic, which helps build deep, fermented fruitiness without taking away the coffee’s clarity. And that is exactly what we liked most about it: the intensity is clear, but kept in check. A good example of a thoughtful combination of peaberry selection and process. We especially recommend this lot to people who enjoy fruity-fermented intensity, but care just as much about balance. There is energy and depth here. But there is also lightness and freshness.*Peaberry is a natural anomaly: instead of two flat seeds developing inside the coffee cherry, there is one smaller, rounder seed. In practice, it can often give a more concentrated and intense flavour.Store in a cold and dry space.

Introducing Alma Negra from the legendary Las Lajas. This is one of those micro mills whose name has become synonymous with a distinctive style: intense sweetness, juicy naturals and funky processing. Alma Negra is one of its best-known processes. This Costa Rican coffee lands in the territory of dark red fruit and dried tea leaves. The closest comparison would be cherry rooibos: sweet, gently astringent and syrupy, with an exotic, tangy flash lingering in the aftertaste.ABOUT THE PROCESSINGThis signature take on the natural process is based on the very slow and precisely controlled dehydration of whole coffee cherries. Only hand-picked fruit with a sugar content above 22° Brix makes the cut. The cherries are first washed and then density-sorted in water, with the lower-density fruit removed. An additional round of electronic sorting eliminates any remaining defects. The selected cherries are dried on patios inside a greenhouse for 22 to 30 days, depending on the intensity of the sunlight. After drying, the coffee rests for at least 60 days to equalise its moisture content and stabilise the flavour profile developed in the fruit. Only then is it hulled, sorted once again and prepared for packing.ABOUT THE FARMLas Lajas is run by Francisca and Oscar Chacón. Before they started pushing the boundaries of coffee processing, they were already ahead of their time in how they approached cultivation. They decided to switch to organic farming after the death of Oscar’s father, who had worked with pesticides for many years. Since then, Las Lajas has stopped using conventional crop protection chemicals. They made that decision at a time when organic farming did not yet command a higher price for coffee. In 2000, Las Lajas became one of the first officially certified organic coffee farms in Costa Rica.Store in a cold and dry space.
