The beans are sourced from small-scale producers working on a few hectares each, where selective picking and controlled fermentation are the norm rather than the exception. Depulped on the day of harvest, fermented for 12–36 hours, then thoroughly washed and dried to the desired moisture level. The result is a clean, structured base that translates into clarity and balanced sweetness in espresso.Caffeine is removed using the EA (ethyl acetate) method. It is a compound that occurs naturally in fruit and as a by-product of sugar fermentation. The green coffee, already processed, is first steamed under low pressure to open up its structure. It is then placed in a water-EA solution, which binds to the caffeine molecules. The process is repeated until caffeine is no longer detectable. Finally, the coffee is steamed once more to remove any remaining traces, then dried and prepared for export.The result is a decaffeinated espresso that feels complete. This season, we went for the Aji variety, already warmly received by you, which struck us with its transparency. We got a proper strawberry punch straight to the taste buds, and we are still recovering from that fruity knockout.In the cup, the strawberry was the main thing: fresh, but also a little more jammy. At times, we had the impression of those yoghurt-and-strawberry chocolates appearing in the flavour too. There is no doubt that a lot is going on here, and sensory boredom is not really an option. We completed the flavour profile with notes of mango and sea buckthorn to highlight the fresh, soft sweetness and intense acidity that stays with us long after the last sip. In truth, the range of associations was almost endless, so we narrowed it down to the notes that stood out the most and best captured this juicy, ripe fruitiness.ABOUT THE VARIETYWe write the variety simply as Aji, though its fuller name is Bourbon Aji. The name comes from… a pepper. Farmers in southern Huila noticed the distinctive aroma of the cherries, reminiscent of a small chilli pepper. Here comes the plot twist, though: genetic testing has shown that it is not a direct descendant of classic Bourbon, but a variety of Ethiopian origin.ABOUT THE PROCESSINGThe coffee and its processing come from Luis Marcelino of Aroma Nativo in Pitalito. The name Hydro Honey may sound fancy, but it is not just a pretty label. Behind it stands a specific, multi-stage process. Only the ripest cherries go into processing, first fermenting in a controlled anaerobic environment. The coffee is then depulped and pre-dried. Later, it returns to the tanks for a rehydration stage with selected yeasts and bacteria, before moving to raised beds, where it dries for up to 26 days. Finally, it goes through three months of stabilisation under controlled conditions. This is exactly the process that helps build an equally layered profile: intense, juicy and long-lasting.Store in a cold and dry space.

Instead, there are notes of dried fruit, like sweet apricot, alongside the darker, deeper sweetness of muscovado sugar. The finish reminds us of rice tea: gently toasted, smooth, with a pleasantly sticky texture.ABOUT THE FARMBehind this coffee are Virgínia and Viviane Veloso, sisters and co-founders of Vivir Café. The name itself means “close” in Kirundi and refers to a very real change in the lives of local producers. Before the station was built, some of them had to travel up to 20 kilometres to deliver freshly harvested cherries to the nearest mill. In the region’s hilly terrain, that journey was often too long for processing to begin on the same day. And the sooner the harvested fruit reaches the station, the easier it is to preserve its quality and the flavour potential of the green coffee.The new station shortened that distance and gave producers better control over freshly picked cherries. Around 2,000 farmers work with it, while the team itself is made up of people who gained experience at other mills across the region. We chose Hafi as a natural once again because everything works together so well here. The process highlights its dark fruit sweetness, gives the coffee a fuller character and moves the profile towards a rounded, dessert like cup.Plenty of blueberries, plenty of sweetness and a body reminiscent of the soft centre of a freshly baked pastry. Three widely loved and highly sought-after varieties: Geisha, Pink Bourbon and Bourbon Aji, all in one bag. Lucelly Aviles Trejos combined three separately processed lots from her 2026 harvest to create the final boss from Miraflores Farm: wildly tropical, delicately floral and turbo sweet.Hard candy describes less of a single flavour here and more of the overall sensation. The cup is sticky and candy-sweet, with a long, fruity finish. Pineapple is meant to convey its bright, tropical acidity, and mango its ripe sweetness and fleshy fruit character. It is difficult to pull the blend apart and say which variety is responsible for which part of the flavour. And that is exactly how it should be. This is not about three solos being played at once, but the effect that only emerges when the whole trio plays together.ABOUT THE PROCESSING AND THE FARMLucelly processed all three components separately using the honey method. Although the exact fermentation methods and durations differ, they follow the same basic structure: sorting the cherries in water, fermenting them whole, depulping and then carrying out another fermentation stage in sealed tanks. The beans are partially washed and dried for 8 days with some of the mucilage still attached. Only then are the three finished lots brought together in a single blend.Lucelly runs the five-hectare Miraflores Farm with her family in Pitalito, Huila, at around 1,750 metres above sea level. When they bought the farm in 2019, it had been neglected and needed rebuilding almost from the ground up. Lucelly began studying soil health and coffee cultivation, completed a sensory evaluation course, roasted her first small batches herself and sold them to neighbours. Over time, the family created their own brand, Dolcecafé, and their coffees began reaching customers far beyond Colombia.Miraflores shows that sometimes the simplest experiments produce the biggest results. Three great lots, one blend and a flavour none of them could deliver alone.Store in a cold and dry space.
