Together with his siblings and wife Rose, a partnership began with FAF (Fazenda Ambiental Fortaleza or Environmental Fortress Farm) in 2008 to change to sustainable, quality driven coffee farming. Fast forward and a whole region has been transformed, with neighbours collaborating and following the best possible farming practices. Named after the Brazilian Roadrunner which is native to the area, Ivan and Roses Sitio Seriema farm is a model of modern, responsible coffee production. We first tasted coffees from the family in 2014 and they have helped change our perception of Brazilian coffees. With a high proportion of Brazilian coffee produced at the lower ‘commodity’ standard, it has been an intriguing journey to see the beautiful terroir of the country properly expressed. Our relationship with Ivan and Rose has grown over the years and we have started investing in upgrades at their farm. With improved water treatment facilities the farm now fully cleans all water before releasing it back into the environment. Working with FAF, this project is now spreading across the region: helping to deliver a more sustainable model of coffee production.ABOUT THE PROCESSRipe cherries are picked by hand to be naturally processed and dried on the farm. At the height of the season, when the volume of picked cherries is greatest, beans are sometimes transferred to the neighbouring fazenda belonging to Ivans brother. For their naturally processed lots, the whole cherry is transferred to raised African beds to slowly dry in the sun. Their annual production is currently very small – around 2 tons of green coffee – but in their case, "every bean matters." There is no room here for cheap, container-scale production, so every coffee cherry cultivated by them is treated with due attention.The farm is pictorially located on the slopes of the Telomoyo volcano, surrounded by dense jungle. Once every four years, the eruption of the nearby Merapi volcano covers the entire region in volcanic ash, which is incredibly fertile and promotes the development of sweetness and spicy characteristics in the coffee.ABOUT THE PROCESSINGExperiments with Canephora are particularly important to them, which naturally caught the attention of the Brothers (fine robusta neophytes). This specific lot underwent their signature process – quadruple anaerobic fermentation. The fruits spend five days in each of four consecutive tanks, being cleaned of fermentation byproducts in between. This is Vins and Bedjo's proven method to "clean up" robusta, giving it a clear character and a great, mild profile.ABOUT THE SPECIESWe are glad that you are exploring coffea canephora, often called robusta, together with us. For years, this species was mainly associated with cheap blends, but well-cultivated canephora can be intense, sweet, creamy, and surprisingly complex.That is precisely why it is appearing in our selection — to show that the world of coffee is broader than arabica alone.However, it is worth brewing it a bit differently. Canephora is more intense and extractable, which is why we recommend lower temperatures: 86–89°C (it is best to start at 88°C). Water with lower mineralization — around 70 ppm — also works well. You can simply mix your water with distilled water in a 1:1 ratio or use low-mineral water, such as Żywiec Zdrój.Do not be surprised if it tastes different from the coffee you know. They are pioneers when it comes to juicy and fruity Costa Rican naturals. In previous years, we visited their plantation several times and together tasted lots that had only just left the drying tables. Cupping with the producers on the farm is always a unique experience.The name Las Lajas comes from the Spanish version of the Arabic word used to describe stone artifacts made by the indigenous population, which were found on the farm's territory when it was founded, around 1840! Located at the foot of the Poás Volcano, in the town of Sabanilla, in the Alajuela region of Costa Rica, the farm has been passed down from generation to generation.In 2000, Las Lajas became one of the first farms in Costa Rica to obtain official organic certification. However, the history of their organic practices dates back to 1980 – that was when Oscar’s father passed away from illnesses related to the use of pesticides. Although there were no premiums for organic coffee at that time, Oscar and Francisca knew they had to transition to organic and sustainable farming, caring for the health and future of both their family and the local ecosystem.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMAlma Negra is a proprietary interpretation of natural processing developed by the Chacóns. During the first week, the hand-picked cherries lie on African raised beds and are constantly mixed for even drying. Then, they are moved to the greenhouse patio and dried in thin layers during the day, while at night they are formed back into thicker piles. These cycles are repeated until the ideal level of dryness is reached. The farm is run by Senel Campos along with his son Alan, managing three estates spread across the steep terrains of southern Costa Rica.Senel Campos' story is a tale of consistency and gradual development. He grew up in Pérez Zeledón under difficult conditions, sharing a small house with his siblings and often going to school hungry. Despite limited opportunities, he and his family built a project based on high-quality specialty coffee production and an increasingly precise approach to processing.Over the past decade, the processes on the farm have evolved from simple, basic methods to consciously controlled production of honey and natural process lots. Now in the trusted hands of his son, Diego, Los Pirineos continues to deliver the unexpected. At 1400 metres above sea level, Los Pirineos sits on volcanic slopes amongst lush forest. The microclimate around the volcano provides sun-filled days and cool breezes that are ideal for growing and drying. In the drying area of the farm, raised beds are positioned between two peaks which consistently channel the wind across the drying coffee. With twelve hours of sun per day, this creates an ideal environment for Honey and Natural processing. Quality and responsibility are central to the way Diego works. All the water used in processing is from collected rain, and bees are kept on the farm to help pollination across the farm and surrounding forest. With more than 60 employees, Diego ensures year round employment on projects across the farm.ABOUT THE PROCESSOur Pacamara lot underwent Black Honey processing. After harvest, ripe cherries are pulped but almost all of the mucilage is left intact. The pulped coffee is then spread in a thin layer on shaded raised drying beds. The shade slows the drying process compared to the other Honey processes used on the farm.
