It begins with depulping, which separates the beans from the fruit. The beans then ferment in tanks for 36 to 40 hours. This particular microlot is later washed and moved to African drying beds. Compared to patio drying, these beds allow for more even airflow during drying, resulting in greater control over the process.ROASTER’S OPINIONWe’ve been drinking Raul’s coffee every year for the past six years, and this is unquestionably the best Bourbon he has produced so far. Nearby lies Nyungwe National Park, known for its pristine forests and a significant protected population of gorillas. The water used during processing comes from a natural spring.Cyiya supports its local community in several ways, including providing training for producers and distributing coffee seedlings and shade trees free of charge. At the same time, it promotes environmental protection through conservation programs and wastewater treatment initiatives.ABOUT THE COFFEE PROCESSING AT THE FARMThe Bourbon variety is hand-picked and undergoes an initial selection before being delivered to the mill. The next stage involves soaking the cherries in water to separate the under-ripe ones, which float to the surface instead of sinking. After the beans are separated from the fruit, they undergo fermentation in tanks for 18 hours, followed by washing and drying on raised beds for approximately two weeks.ROASTER'S OPINIONEvery year we get excited about fresh Rwandan coffees and pack these beautiful beans into jars. Tagel promised himself to redeem the plots that had belonged to his father and years later he pulled it off! Then, in 2018, when the government made it easier for producers to export by liberalizing legislation, he founded Olkai.Hambela Goro works with 460 smallholder producers that grow 74110 varietal at an impressive altitude of 2300 masl. Most of them own literally only hundreds of coffee trees each, which makes lots from Hambela Goro truly multi-component blends. At the same time, the consistency and quality of this coffee are beyond extraordinary.In addition to direct involvement in coffee production, Olkai prioritizes social responsibility in order to empower producers they work with. A return to warm, summer days.V60 RECIPE16g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. The pulping machine is only started once a large enough batch has been collected to allow for at least 2 hours of continuous operation. In the meantime, further deliveries arrive to maintain the workflow until approximately 19:00. After the pulp is removed, the beans are sorted by density in water channels into different grades: P1, P2, P3, lighter fractions, and so-called "pods" (the lowest grade).The coffee then ferments for 12–24 hours, after which it is thoroughly washed and soaked for another 8–12 hours. Fredy is an expert with both larger lots and small microlots, and every aspect of coffee picking and processing is done with care in order to ensure top quality. Fredy is always thinking about sustainability on the farm. He actively cares for the variety of trees on the farm - grevillea and cuje are the most numerous but he also maintains other types of fruit trees and native trees. The soil is carefully maintained, and soil management includes the application of organic materials that have been composted such as fallen leaves and branches as well as coffee pulp. A variety of native animals and birds appear on the farm, and Fredy explains that the farm is not even fenced in; as in nature these creatures can come and go as they please. Fredy loves experimenting with different varieties and processes, and this lot is the perfect example of his efforts. He added about 1 hectare of Pacamara plants to his farm in 2019, and they have begun producing the large, red fruit for this lot.THE PROCESSAfter a very careful picking, with workers choosing only the ripest cherries, the coffee is placed into clean sacks for a fermentation of about 48 hours. When this fermentation period is over, Fredy adds the coffee to his raised beds, positioned to take advantage of the abundant sunlight of Fraijanes. The coffee dries on these beds for 22 days, with frequent turning to encourage thorough and consistent drying.ROYAL BEANSWhat’s behind the name Royal Beans?
