Amber Heart is a fermented shu pu-erh tea (ripe), where the typical earthiness is complemented by an unusual sweetness. The infusion is smooth and warming, with notes of wood and warming spices. Unlike “raw” sheng pu-erh, shu pu-erh is free of bitterness and gentle on the stomach.  We named it Amber Heart because of the dark golden color of the infusion and the unusual shape of the leaves: small nuggets formed like hearts. This type of tea is known in China as Lao Cha Tou.During the production of shu pu-erh, the leaves are piled into heaps and sprayed with water to provide additional moisture that accelerates fermentation. Lao Cha Tou comes from the very bottom of these piles, where fermentation takes place in the highest humidity. This allows for better control of fermentation and the development of aromatic complexity.ROASTER’S OPINIONKenyan coffees processed using the sleeping bag method are still rare, which is why this lot immediately caught my attention. Whole-cherry fermentation combined with controlled drying resulted in an unusual profile that is softer than classic washed Kenyan coffees.In the cup, you’ll find notes of nectarine, blackberry, and tea, with a subtle chocolate accent in the background. The acidity is medium and well-balanced, and the overall profile is very clean and cohesive for a natural process.This coffee shows a different side of Kenya: less aggressive, more juicy and calm, yet still full of character. Genmaicha is a sweet, slightly nutty, and aromatic tea with an intriguing amber hue. Its flavor, familiar from sushi bars and Japanese restaurants, lingers in the memory for a long time. Legend has it that a shogun’s servant in Hakone served his master tea into which stolen rice grains he had kept in his pocket accidentally fell. The servant paid for his mistake with his life, but the shogun enjoyed the taste of the infusion so much that he decided to add the new tea to his menu permanently. Thus Genmaicha was born, today also known as “popcorn tea.” In the past, it was considered a drink of the lower classes, who added much cheaper rice grains to pure sencha leaves to increase their volume. It is also part of the Renacer Program – a field school for coffee producers in the region, aimed at imparting knowledge on better crop management practices.Sigfredo, together with a team of six technicians, runs the field school. The program supports small and medium-sized producers from the area, offering training on best agricultural practices that promote soil and land regeneration while improving yields and coffee quality. The school operates at Finca Noruega, where classes are held twice a month. The curriculum focuses on a soil health program based on the principles of "right source, right dose, right place, and right time."Since 2021, the program has involved 60 participants who work on experimental plots.
