Our visit to his place was entirely spontaneous.In January 2025, while traveling through Guji, our local partner Gemechu mentioned that he wanted to show us a small coffee drying plot behind the house of one of the nearby smallholders. It was our last day in this part of Ethiopia, so we were happy to stop by Gelo’s farm. Freshly harvested coffee, only a few days old, was covered with a tarpaulin to protect the cherries from the intense sun. This is a very good practice, although a distinct, intense fermentation aroma was clearly noticeable beneath the cover. Curious about the outcome, we took a sample of coffee that had previously been dried in the same way. Two days later, at the cupping table, we tasted a juicy, fruity, and very clean coffee, without any “wild” notes that can sometimes appear as a result of extended processing.Mr. Gelo owns just 5 hectares of coffee fields, and his annual production amounts to only… about 20 bags of export-ready coffee.A true gem from deep within Guji.ABOUT COFFEE PROCESSING ON THE FARMA single, regionally traditional Wolega variety, hand-picked and delivered to a small drying area with raised beds. Dried as a natural, in whole cherry, covered daily with a tarpaulin during periods of the most intense sunlight. The lush, natural ecosystem creates excellent conditions for growing coffee trees while also contributing to the fertility and stability of the soil in these lands.This particular lot is a blend of two botanical varieties from several small producers, who cultivate and process coffee on small, multi-hectare plantations.ABOUT COFFEE PROCESSING ON THE FARMThe Caturra and Pache varieties are hand-picked and processed at small, producer-owned stations. The beans are separated from the cherries using small, often manual depulpers and then fermented in tanks for about 36 hours. After washing, the beans are dried in specially built wooden structures, covered with tarps to ensure a more controlled process, without direct sunlight exposure.ROASTER'S OPINIONI first roasted El Diamante around 2016, alongside several other washed microlots from the highlands of this northern part of the country. And I was hooked. A beautifully clean and elegant cup, full of clear notes, distinct fruitiness, and mature, juicy acidity.

Several years ago, these producers were dislocated from their homes and land because of a natural disaster, and they have rebuilt their lives and farms with a new focus on coffee. Unlike the vast majority of other Sumatran coffee receiving and processing centers, this mill is producing Washed coffees, as well as Naturals. The most common varieties grown in Sumatra, which are Ateng, Bor Bor, Catimor, and Timor hybrids. Aceh, in northern Sumatra, is an incredible region for coffee production. The average farm is one hectare, 80% of producers within northern Sumatra are women, and 95% of producers are smallholders. The region is diverse, geographically speaking. It is surrounded by beaches with a swampy inland, and the Barisan Mountains make up the inner two-thirds of the area. Coffee is grown on this volcanic mountain amongst the rainforest. One of the notable features of this area is Lake Taboa, the largest volcanic lake in the world.THE PROCESSHistorically, Indonesian coffee producers have implemented the wet hull method but recent years we have witnessed a shift towards modern specialty techniques which deliver exciting new profiles. Over 80 hectares are dedicated to more than 20 botanical varieties, each treated as a unique project.ABOUT THE COFFEEThis exceptional batch is SL28 — a legendary variety known for its incredible purity and elegance, especially in Kenya, but under Hacienda Sonora’s conditions, it achieves extraordinary clarity and finesse. Grown at an altitude of about 1300 meters above sea level, it offers a cup full of juiciness, delicate structure, and refined sweetness.The natural processing was carried out with great precision: selectively picked cherries are first separated by floatation, then dried whole on black tarps for about 12 days, with full control over airflow and humidity. After the initial drying, the coffee matures, undergoes final drying at low temperatures (up to 35°C), and then rests for two months before being hulled and hand-sorted.In the cup, the coffee is light, juicy, and incredibly clean for a natural – with dominant notes of raspberry and ripe melon, complemented by a delicate, tea-like tannin of black tea. The finish is long, elegant, and sweet, with no heaviness or excessive fermentation. This is a natural in the Hacienda Sonora style: precise, harmonious, and incredibly drinkable.We always roast the coffee fresh, so when it arrives to you, it’s just a few days old. Nearly four decades ago he started with hard labor at a processing station—milling, sorting, drying—where he learned the foundations of coffee processing. Today he runs his own farm, El Renacer, where every step of processing is dialed in to perfection.I chose a Colombian SL28, a super fruity and vibrant variety that already promises a party for your taste buds. On top of that, we add ginger co-fermentation. In short: we prepare microbes (Lactobacillus and Saccharomyces), feed them ginger and a bit of panela (a fancy kind of sugar), add freshly harvested cherries, and let everything ferment for 72 hours. After fermentation and depulping, the coffee is dried until it reaches ideal moisture and stability.So what does it taste like, my friend? A total flavor festival. The co-ferment takes center stage, but in the background you’ll find mandarin, lemongrass, high sweetness, and lots of citrus notes. Pour-over, espresso, or moka pot—it always turns out great.ROASTER’S OPINIONThe famous El Renacer farm + SL28 + ginger = TOTAL JINGLE BELLS!!! What more is there to say—first co-ferment, check. An ultra-fresh, spicy-citrus coffee. Ginger leads the way, obviously, but there’s much more going on: mandarin, lemongrass, high sweetness, and a ton of citrus. And as a bonus—no matter how you brew it, it always comes out great.

He eventually settled himself in the Chapadão de Ferro microregion of Cerrado Mineiro in the 1990s, primarily providing service for agricultural machinery and leasing his property to local coffee growers. In 2013, he decided to take over management of the coffee crops at his farm, Fazenda Chapadão de Ferro, and has since earned most of his income through his coffee production. Within Cerrado, there are many microregions that present unique characteristics in the cup. The Chapadão de Ferro microregion is a small town with farms situated around the cone of a partially formed volcano. Farms here are at higher elevations above 1100 meters and coffee is harvested a month or two later than in other parts of Cerrado Mineiro. Benedito faced challenges early on due to a lack of infrastructure and some knowledge about coffee production in the area. Soon, his son Rafael Inácio completed his degree in Agronomy and returned to join the operations at the farm, helping to develop the crops and achieving high quality results. Today, they cultivate coffee across 18 hectares of the 25 hectare property. They have embraced modern fermentation and processing, and dry their crop on concrete patios for uniform results.THE PROCESSThis lot underwent anaerobic processing for 96 hours: selectively harvested cherries were placed in polypropylene and wrapped in canvas, creating an anaerobic fermentation environment. The fermented cherries were then dried on a concrete patio to their target humidity and then rested for 30 days before being milled and prepped for export.

There, after selling the more valuable leaves and buds, farmers brewed their own tea from the remaining twigs and stems, creating a tea unlike any other: kukicha. In Japanese, “kuki” means twig and “cha” means tea. Kukicha works exceptionally well when cold-brewed using the cold brew method. Moya Kukicha comes from organic plantations on the island of Kyushu and is lightly roasted, giving it a more pronounced aroma.Because the photosynthesis process that converts L-theanine into catechins does not occur in stems, kukicha has a high content of this relaxing compound and an exceptionally low caffeine level.
