It is a light coffee on the palate, with a tea-like structure and delicate intensity.ABOUT THE PROCESSINGThe exceptional character of this batch is greatly influenced by the Extended Fermentation Fully Washed processing method. The process begins with the manual harvesting of only fully ripe fruits. Next, the coffee cherries go to a depulper, which separates the skin and most of the pulp from the beans. At this stage, the beans are still covered with a layer of mucilage.The next step is extended fermentation. In contrast to classic washed processing, where fermentation usually lasts from a dozen to several dozen hours, here the process is intentionally prolonged and carefully controlled. Microorganisms naturally occurring on the surface of the fruit break down the remaining pulp, while creating aromatic compounds responsible for a greater complexity of flavor. It is this stage that allows for the extraction of additional fruitiness and juiciness while maintaining the cleanliness characteristic of washed processing.After fermentation is complete, the beans are thoroughly rinsed with clean water to remove any remaining pulp. Then they go to drying tables, where they dry slowly until optimal moisture content is achieved. Only then is the parchment layer removed, and the green beans are prepared for export.The result is a coffee that combines the clarity of a classic washed with the additional aromatic depth obtained through extended fermentation. Kii is one of three wet mills managed by the Rung’eto FCS in Kirinyaga and is Fairtrade certified. The Chairman of this society has implemented various quality-focused processes throughout all the factories of the Rung’eto FCS. For example he installed tiles on all the washing channels and fermentation tanks. Moreover, the water for the processing is being reused. Farmers associated with the Rung’eto Cooperative cultivate their crops on Mount Kenya's slopes, known for producing intense, complex, and flavour-dense coffees.Harvest & Post-HarvestSorting: Cherries are hand sorted for unripes and overripes by the farmers before they go into production.Pulping: A 3-Disc Agaarde pulping machine removes the skin and pulp. The coffees are graded by density into three grades by the pulper. Grade 1 and 2 go separately to fermentation. Grade 3 is considered a low grade.Fermentation: The coffee is dry fermented for 18-36 hours in concrete tanks under a roof that provides shade for better temperature control during fermentation.Washing/Grading: After fermentation the coffees are washed and again graded by density in washing channels. They are sometimes soaked in clean water overnight.Drying: Sun-dried 12 to 20 days on African drying beds. Time depends on weather conditions. Coffees are covered under plastic during midday and at night. In this area the flowering period is usually between February and March, following this the trees will be ready for harvest from October to December.Soil: The soil, primarily Nitisol, is rich and developed from volcanic materials, commonly found in highland areas and steep volcanic slopes. Nitisol exhibits superior chemical and physical properties compared to other tropical soils.ROASTER'S OPINIONLots of sweetness, a balanced yet distinct acidity, and a jammy character.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that 98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. Oscar continues this tradition, and thanks to him and his approach, Los Nogales is a center of innovation and information for all proactive farmers in this region.Detailed description of this coffee's processing method:Process: mosto fermentationSelection of ripe fruit: The process begins with the careful harvesting of only ripe coffee cherries. This is the key to obtaining high-quality coffee beans, as ripe fruit has optimal flavor and aroma.Cleaning and disinfection with purified water: The harvested coffee beans are thoroughly cleaned and disinfected with purified water. This helps eliminate impurities and unwanted microorganisms.Density sorting, or floating: Coffee beans are submerged in water and sorted by density. Higher-density beans tend to sink to the bottom, while lower-density beans float on the surface. This helps separate good beans from defective ones.Thermal shock: Selected beans undergo thermal shock in water at 80°C for 60 seconds, followed by rapid cooling in cold water at 15°C for 3 minutes. This process breaks down sugars and pasteurizes the beans, contributing to the final flavor of the coffee.Pulping in a wet mill and adding mosto: Coffee beans are separated from the skins and placed in fermentation barrels. Squeezed juice from the coffee cherry skins themselves, which contains a high amount of natural sugars—the so-called "mosto"—is added to them. His small farm of about 8 hectares is located in the Bensa region, which, in our opinion, holds the best quality potential. The crops here reach well above 2000 meters above sea level and usually consist of selected, single botanical varieties.Javier is the son of Don Andres, a producer whose coffees we have already hosted in our brown jars. His farm is just around the corner, and the terrace of the washing station offers such an extraordinary view of the valley and Lake Yojoa that if Bill Gates had visited this place, this very landscape would be known worldwide as the Windows desktop background. The Fernandez family (because there is also a second son, Nahun!) is not afraid to play around with processing, and thanks to bold experiments, year after year they deliver some of the best lots in all of Santa Barbara. This is an opinion, not a fact. But also a fact.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMWhat we have here is a 66-34 blend. The Ethiopia was processed as a natural – drying the coffee seeds inside the whole fruit. Freshly picked cherries undergo an initial selection, during which those with defects are rejected. Then, they are spread across so-called African beds – long tables, sometimes stretching for dozens (!) of meters, with a mesh lining that allows for even air circulation throughout the process, resulting in homogeneous drying. The whole process takes between 25 and 30 days, depending on the weather.On the other hand, Javier's lot is a longer-fermented honey – before depulping, the cherries fermented for 96 hours in a tank, and only later were they spread out to dry with a thick layer of mucilage. This technique extracted more deep, fruity-wine notes from the coffee.ROASTER'S OPINIONHere is our concept for this espresso: we created a roast profile that showcases the beautiful notes of flowers and fruits typical of high-quality Ethiopian coffees, but at the same time, on the flip side, offers quite a bit of chocolate-dessert depth, which also balances the acidity and gives the cup equilibrium. As a result, whether you brew it in an espresso machine, a moka pot, or even as a filter coffee, you will get a full, round, and complex coffee with a long-lasting, syrupy aftertaste!Store in a dry and cool place.
