It’s a lively, energetic coffee, the kind that makes your foot tap without you even noticing.Fresh harvests from Carlos Pola, senior and junior, regularly appear in our line-up. Recently, in espresso as Finca Las Brisas, previously in a lighter roast. Each lot is expressive in its own way, and this Pacamara, with its intense candied sweetness, literally coats the taste buds.This nano lot was purchased directly from the Pola family at a financially demanding point in the season, before the larger volumes had begun to generate returns. In practical terms, it provided the farm with additional liquidity at a time when labour costs are at their peak.After harvest, the cherries aren’t exposed to full sun straight away. For the first few days, they rest in bags kept in the shade. With access to air, the fruit begins to breathe and soften, while sugars in the pulp slowly break down. This brief pause before drying allows fermentation to begin more gradually and proceed more evenly.As a result, the fruit releases more natural sweetness, the profile feels more composed, and fermentation stays clear of harsh alcoholic edges. Pacamara, with its fuller structure and long finish, pairs beautifully with natural processing. It’s a bit like James Brown’s Get Up (I Feel Like Being a) Sex Machine, groove and a finish that lingers long after the last sip.

Finca Bethania officially took shape in 1991, and the love for coffee and commitment to quality have been passed down from generation to generation ever since.Today, the plantation is run by Ana and Martha Albir, for whom coffee has been not just a job but a true way of life for the entire family for over 60 years. After many years of experience with commercial coffee and observing declining market prices, they decided to shift their focus toward specialty coffee in search of stability, higher quality, and greater independence.Finca Bethania combines traditional farming practices with a modern approach to coffee cultivation and processing. The plantation operates according to sustainable development principles. Water used in production processes is treated and returned to the rivers, while the natural forest, local ecosystem, and wildlife are carefully protected. Since 2014, the farm has held Rainforest Alliance certification, confirming its commitment to environmental conservation.ABOUT THE COFFEEThe Maracaturra variety, known for its large beans and intense character, is grown on a small, designated section of the plantation. This is the parcel from which this nano-lot originates. Ana and Martha chose to process it using the natural anaerobic method to highlight the fruitiness and complexity of the flavor profile. The cherries ferment in airtight containers for 3–4 days and then dry for approximately 15 days on African beds at the Cafetos de Segovia mill in Ocotal, which is also owned by the Albir family.

The station works with 2,341 smallholder farmers from 22 nearby hills. Each farmer owns on average around 250 trees. In Burundi, coffee is typically grown on micro-farms, often in small plots next to family homes.The coffee cherries arrive at the station on the day of harvest, where they undergo water flotation sorting, hand selection, and classic washed processing. Fermentation in clean water lasts 10–12 hours, after which the coffee is thoroughly washed and dried on raised beds for 2–3 weeks. Each lot remains fully traceable.The result in the cup is a clean, elegant profile typical of high-altitude Burundi coffees: red currant, vanilla, and black tea.A sweet, clear coffee with a tea-like structure and juicy acidity. From the very beginning, Bridazul has acted as a link between farmers and roasters. Producers deliver their coffee cherries here, while the Bridazul team handles processing, quality control, and matching coffees with the right buyers without ever taking ownership of the raw product.This allows small farmers to focus on cultivation, while buyers gain access to unique microlots that might otherwise never leave the region.What sets this place apart is its exceptionally advanced approach to fermentation and drying. Years of collecting data, testing temperatures, fermentation times, and slow drying techniques have given Bridazul a far wider range of processing methods than most standard mills in the region. Processes here are designed with a specific flavor profile in mind rather than maximum efficiency.Little Red Riding Hood is an example of this approach. In 2020, Tim Willems from Bridazul noticed that several experimental batches were too small to export individually. Instead of discarding them, they were combined into a cohesive whole. This decision led to the creation of the Bridazul Blends line, and with it, this particular composition.ABOUT THE COFFEEThe coffee comes from several farms around Dipilto and Mozonte, including El Avion, Los Pirineos, and La Bendición, located at elevations between 1400 and 1650 meters above sea level. The blend features the Caturra and Catuai varieties and undergoes Carbonic Maceration fermentation.The cherries ferment briefly in small batches under controlled conditions to highlight fresh, fruit-forward notes. They are then dried on shaded African beds, spread in thin layers to preserve fruit intensity and maintain a clean, elegant cup structure.Bridazul and Little Red Riding Hood demonstrate how technology, experience, and collaboration with local farmers can create a coffee that is not a random blend but a thoughtfully crafted story captured in a cup.

He sent us samples of several coffees from China, and we chose this one… the most ā€œcoffee-likeā€ of them all. It’s a super sweet, dense espresso with spicy notes in the background.We already have one natural from Ethiopia in our espresso lineup. But having just one is like owning a single bicycle. Technically fine… but why limit yourself?This Ethiopia is different from the one in our regular offering because there’s simply more of everything. The acidity might be higher, but the finish is longer and more complex. In the aroma, you’ll find notes of orange and flowers.It makes a seriously good shot on its own, and it also works as a solid base for milk drinks. We highly recommend tasting it side by side with our everyday Ethiopia and seeing the difference for yourself.
