It comes from the very birthplace of matcha, Kyoto Prefecture. It is also worth noting that it was ground just before being shipped from Japan to our warehouse, making it an exceptionally fresh product. Tencha, meaning the tea leaves used for matcha before grinding, comes from the first harvest and was shaded with covering mats for over three weeks prior to picking. Its flavor profile is further enhanced by the volcanic soils in which the tea bushes are grown. Amber Heart is a fermented shu pu-erh tea (ripe), where the typical earthiness is complemented by an unusual sweetness. The infusion is smooth and warming, with notes of wood and warming spices. Unlike “raw” sheng pu-erh, shu pu-erh is free of bitterness and gentle on the stomach. We named it Amber Heart because of the dark golden color of the infusion and the unusual shape of the leaves: small nuggets formed like hearts. This type of tea is known in China as Lao Cha Tou.During the production of shu pu-erh, the leaves are piled into heaps and sprayed with water to provide additional moisture that accelerates fermentation.
