Matcha Aoba is a tea we are especially proud of. It is a classic, high-quality first-harvest matcha, produced entirely without the use of synthetic plant protection products. It comes from the very birthplace of matcha, Kyoto Prefecture. It is also worth noting that it was ground just before being shipped from Japan to our warehouse, making it an exceptionally fresh product.  Tencha, meaning the tea leaves used for matcha before grinding, comes from the first harvest and was shaded with covering mats for over three weeks prior to picking. Its flavor profile is further enhanced by the volcanic soils in which the tea bushes are grown. Yogi Masala is the best spice blend for the famous Indian chai masala that we have managed to find on the market. It is based on warming spices, skillfully complemented by fennel and orange peel. The blend contains cut spices rather than ground powder, which allows them to retain their freshness much longer and keeps their flavor from becoming dull or “faded,” as is often the case with ready-made mixes.  To get the most out of Yogi Masala, it is best to simmer the blend for at least several minutes. The resulting decoction can be confidently combined with strong black tea, milk, honey, or sugar. Perfect for a big mug, ideally paired with a blanket and a book. It also works very well brewed on its own in a mug, just like any herbal blend.We should add that if you find it hard to get through winter without a daily dose of chai masala, you can easily prepare a large batch in advance. The most noble of Japanese teas. Gyokuro is sometimes described as “leafy matcha” because, like matcha, it is grown in darkness. For three weeks before harvest, the tea garden is covered with traditional jikagise mats. Each day, additional layers are added, eventually blocking as much as 94% of sunlight. As a result, the plants produce increased levels of caffeine, amino acids, and chlorophyll, which directly shape the character of the infusion. The leaves are smaller, but consequently far richer and more concentrated.  Gyokuro has an intoxicatingly marine flavor, a strikingly vivid color, a heady aroma of green vegetables, and the depth of a rich broth. It is sweet, dense, and lightly saline. Amber Heart is a fermented shu pu-erh tea (ripe), where the typical earthiness is complemented by an unusual sweetness. The infusion is smooth and warming, with notes of wood and warming spices. Unlike “raw” sheng pu-erh, shu pu-erh is free of bitterness and gentle on the stomach.  We named it Amber Heart because of the dark golden color of the infusion and the unusual shape of the leaves: small nuggets formed like hearts. This type of tea is known in China as Lao Cha Tou.During the production of shu pu-erh, the leaves are piled into heaps and sprayed with water to provide additional moisture that accelerates fermentation. Lao Cha Tou comes from the very bottom of these piles, where fermentation takes place in the highest humidity.
