Finca El Llano belongs to the Perez family and is located in the prestigious Acatenango region, in the Chimaltenango department, in the heart of Guatemala’s volcanic mountain chain. In 2016, together with his family, he established a central processing station to help farmers from more than 15 nearby villages process their coffee in a controlled, quality-focused way. This approach allows for a consistent and clean sensory profile while also significantly increasing the income of the local community. He grew up in Pérez Zeledón under difficult conditions, sharing a small house with his siblings and often going to school hungry. Despite limited opportunities, he and his family built a project based on high-quality specialty coffee production and an increasingly precise approach to processing.Over the past decade, the processes on the farm have evolved from simple, basic methods to consciously controlled production of honey and natural process lots. On different plots, he cultivates varieties such as Gesha, Pink Bourbon, and Castillo, constantly developing processing methods to search for even higher quality coffee.This specific lot of Gesha was selected from among the best coffees in the Nariño region during the La Mejor Taza de Nariño competition. It then went to the auction of the best lots, where it was won by Adam Laska — co-owner of the KAFAR roastery — who had previously participated in the competition as a judge.ABOUT THE PROCESSINGThe processing starts with the manual harvesting of fully ripe cherries. Next, the coffee undergoes a four-day anaerobic fermentation in sealed jute bags kept in the cool climate of the Alta Clara region. The next stage is an eight-day anaerobic fermentation in airtight steel tanks, which deepens the sweetness, texture, and complexity of the sensory profile.After fermentation, the coffee is dried for 15–20 days in parabolic dryers, which ensures uniform airflow. The final stage is manual selection and a 15-day stabilization period in jute bags.In the cup, the coffee presents an elegant and refined character with notes of guava, sweet cherry, and muscovado sugar, supported by a creamy texture and a long, sweet finish. The crops are situated at an altitude of 1900 to 2200 meters above sea level, and the dominant varieties are Kurume and other local varieties characteristic of this region.The name Harruu Bunnaqaa originates from the Oromo language. "Harruu" means a large shade tree, under which Oromo community meetings traditionally took place, while "Bunnaqaa" is related to sharing coffee. Harruu Bunnaqaa is also a historical site in Guji, where local Oromo leaders would meet to jointly celebrate peace, blessings, and coffee.Coffees from this area stand out for their exceptional complexity and aromatic intensity, resulting primarily from the high altitude of the crops and very fertile soils. The sensory profile frequently features herbal, floral, and spicy notes, along with fresh accents reminiscent of hops or citrus.This lot offers a flavor profile with notes of blueberry, vanilla, and lemongrass, with a distinct, crisp texture. From the very beginning, Bridazul has acted as a link between farmers and roasters. Producers deliver their coffee cherries here, while the Bridazul team handles processing, quality control, and matching coffees with the right buyers without ever taking ownership of the raw product.This allows small farmers to focus on cultivation, while buyers gain access to unique microlots that might otherwise never leave the region.What sets this place apart is its exceptionally advanced approach to fermentation and drying. Years of collecting data, testing temperatures, fermentation times, and slow drying techniques have given Bridazul a far wider range of processing methods than most standard mills in the region. Processes here are designed with a specific flavor profile in mind rather than maximum efficiency.Little Red Riding Hood is an example of this approach. In 2020, Tim Willems from Bridazul noticed that several experimental batches were too small to export individually. Instead of discarding them, they were combined into a cohesive whole. This decision led to the creation of the Bridazul Blends line, and with it, this particular composition.ABOUT THE COFFEEThe coffee comes from several farms around Dipilto and Mozonte, including El Avion, Los Pirineos, and La Bendición, located at elevations between 1400 and 1650 meters above sea level. The blend features the Caturra and Catuai varieties and undergoes Carbonic Maceration fermentation.The cherries ferment briefly in small batches under controlled conditions to highlight fresh, fruit-forward notes. They then undergo depulping, initial washing, and a long, controlled fermentation in cool mountain spring water lasting around 40 hours. This slow and gentle process brings out maximum clarity in the cup and highlights the coffee’s natural fruit notes. Before export, the coffee is sorted through as many as 12 stages, ensuring the highest level of bean selection.In the cup, Uganda Zebigi presents a harmonious and elegant profile. Finca Bethania officially took shape in 1991, and the love for coffee and commitment to quality have been passed down from generation to generation ever since.Today, the plantation is run by Ana and Martha Albir, for whom coffee has been not just a job but a true way of life for the entire family for over 60 years. After many years of experience with commercial coffee and observing declining market prices, they decided to shift their focus toward specialty coffee in search of stability, higher quality, and greater independence.Finca Bethania combines traditional farming practices with a modern approach to coffee cultivation and processing. The plantation operates according to sustainable development principles. Water used in production processes is treated and returned to the rivers, while the natural forest, local ecosystem, and wildlife are carefully protected. Since 2014, the farm has held Rainforest Alliance certification, confirming its commitment to environmental conservation.ABOUT THE COFFEEThe Maracaturra variety, known for its large beans and intense character, is grown on a small, designated section of the plantation. This is the parcel from which this nano-lot originates. Ana and Martha chose to process it using the natural anaerobic method to highlight the fruitiness and complexity of the flavor profile. The cherries ferment in airtight containers for 3–4 days and then dry for approximately 15 days on African beds at the Cafetos de Segovia mill in Ocotal, which is also owned by the Albir family.Store in a cold and dry space.
