In 250 g of brewed coffee, we measured 54.4 mg of caffeine. Compared to the same coffee in its fully caffeinated version, this represents a real reduction of about 70% in caffeine content in the brewed coffee.ROASTER'S OPINIONThis coffee has a consistent chocolate-nut character, enriched with a subtle hint of dried fruits that gently highlight the flavor, reminiscent of classic brownies. It is distinguished by pronounced sweetness, medium fullness, very low acidity, and aromas of cocoa and chocolate. The whole is completed by a long, chocolate finish and excellent balance. Recently, in espresso as Finca Las Brisas, previously in a lighter roast. Each lot is expressive in its own way, and this Pacamara, with its intense candied sweetness, literally coats the taste buds.This nano lot was purchased directly from the Pola family at a financially demanding point in the season, before the larger volumes had begun to generate returns. In practical terms, it provided the farm with additional liquidity at a time when labour costs are at their peak.After harvest, the cherries aren’t exposed to full sun straight away. For the first few days, they rest in bags kept in the shade. With access to air, the fruit begins to breathe and soften, while sugars in the pulp slowly break down. This brief pause before drying allows fermentation to begin more gradually and proceed more evenly.As a result, the fruit releases more natural sweetness, the profile feels more composed, and fermentation stays clear of harsh alcoholic edges. Pacamara, with its fuller structure and long finish, pairs beautifully with natural processing. It’s a bit like James Brown’s Get Up (I Feel Like Being a) Sex Machine, groove and a finish that lingers long after the last sip.

Coffee here is most often processed using the natural or honey method, and experiments with aerobic fermentation are also common.Fun fact: Our coffee lot was delivered to the station on the very day of harvest. Its parameters were then evaluated, and the cherries were placed in large hermetic tanks for 5 days of anaerobic fermentation. At the appropriate moment, the coffee is exposed to a temperature of 20°C to halt fermentation and remove yeast. The cherries then “mature” in the tanks for another 5 days before being transferred to solar dryers. Drying takes 30 to 45 days.

If the coffee is very fresh (foaming strongly when it contacts water), you can extend the bloom to 2 minutes or add an additional bloom at 1:00 (pour another 50 g and wait until 2:00).At 1:00 (or 2:00), begin pouring into the center of the V60 (circles about the size of a 5-złoty coin), using circular movements at a pace of 6–8 g per second (slightly below the second enlarged dot on the Acai kettle), keeping the stream just below the point where it breaks.When you reach 250 g, lower the kettle to about 3 cm above the water surface (circular movements are no longer necessary) and finish pouring to 300 g.Perform a shake while holding the narrowing at the base of the V60 (both horizontally and vertically). Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on small, multi-hectare farms in the El Tambo microregion, located west of Popayán, the capital of the Cauca department.PROCESSINGA single-variety Castillo, hand-harvested and depulped immediately after the cherries are picked. The beans are fermented for approximately 36 hours in a tank, then washed three times to completely remove any remaining mucilage from the parchment. They are slow-dried for around 15 days on raised beds, then homogenized and stabilized for several more days.ROASTER'S OPINIONYou can’t drink the same blend twice.
