Kafar is a coffee brand founded in 2015 by a group of friends whose professional lives revolve around coffee. At the heart of the brand is a specialty coffee roastery, supported by additional initiatives such as training delivered in partnership with Coffee Support and serving outdoor events with our coffee truck—a blue coffee trailer with the distinctive KAFAR logo. What truly sets our roastery apart is the meticulous selection of green coffee overseen by two certified Q Graders (an international Specialty Coffee Association certification). Thanks to this, our range features coffees of the highest quality. The green beans we roast at Kafar come from trusted importers who prioritize direct relationships with coffee producers, fostering long-term cooperation and shortening the supply chain. Situated at an altitude of 1,900–2,100 meters above sea level, the farms benefit from a cooler climate, fertile soils, and large temperature differences between day and night. Such conditions favor the slow ripening of the cherries, allowing the beans to gradually develop their natural potential.Coffee trees grow among traditional, diverse crops that provide natural shade. The cherries are harvested by hand, and only fully ripe cherries are selected for further processing. Subsequently, they are processed using the natural method on raised beds, where they require regular turning and careful monitoring throughout the entire drying period. This process allows the origin's character to be preserved and the full potential of the bean to be brought out.ABOUT THE COFFEENotes of mandarin, milk chocolate, and spices dominate in the cup. Only ripe cherries from local family farms, where coffee is still cultivated with a vast amount of manual labor, arrive at the Uraga station. The cherries then undergo controlled anaerobic fermentation and are dried slowly on raised beds. This process does not overpower the coffee's natural character, but instead extracts even more sweetness, depth, and aromatic complexity.We chose this lot because it is exactly what we expect from modern specialty coffees. Fermentation here is a means, not the end — it does not take center stage, but rather enhances the very best that Guji has to offer. The result is spectacular. It is sooooo smooth to drink.ABOUT THE FARM AND PROCESSINGAt Finca La Siberia in 2019, the Silva family planted the Batian varietal—a coffee tree bred in Kenya for resistance and high cup quality. El Salvador is not its natural home, but that is precisely what made the whole story even more interesting. It turned out that the volcanic soils, cool climate, and high elevation of the farm bring out a truly impressive potential from this varietal.The name of the farm itself has character too. The founders decided that the place felt like... Siberia. This was due to the chilly mornings, high elevation, and challenging terrain. It is hard to argue with them—the coffee clearly thrives in these conditions.The cherries ripen slowly, building a higher concentration of sugars, and then undergo a Double Anaerobic Fermentation process. It sounds like the name of a progressive metal band, but in practice, it means a double controlled anaerobic fermentation that adds even more depth, intensity, and complexity to the coffee.The result? A coffee that shows it is worth taking a risk sometimes. Batian found a second home in El Salvador, and we were delighted to find a spot for it in our roaster.Store in a cool, dry place.

The farm covers over 100 hectares, with nearly 60% of its area still remaining as natural forest. Coffee grows here at an altitude of approximately 1,700 m a.s.l., in fertile, volcanic soils and a cool climate that slows down the ripening of the cherries, allowing more sweetness and complexity to build.ABOUT THE VARIETAL AND PROCESSINGIts character is shaped by SL28 and SL34 — iconic Kenyan varietals that have been the foundation of the country's finest coffees for decades. These are precisely what give coffees from Kenya their distinctive fruitiness, high acidity, and intensity.The beans underwent Fully Washed processing. The cherries are hand-picked and meticulously sorted, then fermented for 12–24 hours, washed, and soaked in clean water for another 24 hours. Finally, the coffee dries slowly on raised beds for 7–15 days.Because we like classics when they are truly well executed. Ibonia showcases the Kenyan character without unnecessary extras — it is intense, juicy, and complex, yet at the same time very easy to drink. Large Maracaturra beans harvested from a small portion of Finca Bethania underwent anaerobic fermentation for 3–4 days and were then dried as a natural on African beds. This process helps bring out the fruitiness, emphasize the sweetness, and give the coffee a fuller structure.Finca Bethania is a farm owned by the Albir family, who has been involved with coffee for generations but is not afraid to step outside traditional boundaries. Martha and Ana combine experience with experimentation—they care about quality, the environment, and every stage of production. From water recycling to protecting the natural forest, they demonstrate that specialty coffee can go hand in hand with responsible farm management.We chose this coffee because it combines character, an interesting story, and the producers' courage to search for new solutions. From the very first sip, it brings distinct fruitiness—melon introduces a juicy, honey-like sweetness, blueberries add depth and freshness, while cardamom appears as a subtle, spicy accent that lends character to the whole cup.However, this is not just the result of processing. Behind this profile lies a specific location and method of work. The coffee trees grow at high altitudes in the Guji region, where coffee is traditionally grown among other plants, preserving natural shade and biodiversity. The name Daanisa itself comes from a local tree that is part of this landscape—a place where coffee is not grown in isolation from nature, but alongside it.A group of 44 local producers collaborating with the Dambi Uddo station is responsible for the beans. Only carefully selected, ripe cherries are processed, which are then dried whole on raised beds. This method allows the natural sweetness of the fruit to be preserved and builds a characteristic profile: intense, yet clean and structured at the same time.What we like most about this coffee is the synergy of energy typical of Guji combined with an elegance that makes you want to come back to it. The coffee cherries underwent a brief Carbonic Maceration fermentation in small, strictly controlled batches. This process allows for the precise extraction of the natural sweetness and complexity of the fruit without the risk of heavy, fermentative notes dominating. Next, the fruit was dried on shaded, raised beds, laid out in a thin layer. Slow and even drying helps preserve the clarity of the profile, the intensity of flavor, and the velvety texture for which the best CM Natural processed coffees are famous.This is another coffee season from the La Bendición farm that we reach for with complete confidence. In previous years, beans from Don Liberato and Sergio Jarquin proved that they can delight not only with their character, but above all with consistently high quality. The station works with 2,341 smallholder farmers from 22 nearby hills. Each farmer owns on average around 250 trees. In Burundi, coffee is typically grown on micro-farms, often in small plots next to family homes.The coffee cherries arrive at the station on the day of harvest, where they undergo water flotation sorting, hand selection, and classic washed processing. Fermentation in clean water lasts 10–12 hours, after which the coffee is thoroughly washed and dried on raised beds for 2–3 weeks. Each lot remains fully traceable.The result in the cup is a clean, elegant profile typical of high-altitude Burundi coffees: red currant, vanilla, and black tea.A sweet, clear coffee with a tea-like structure and juicy acidity. The profile is full and smooth, with very low acidity and a pleasantly long, dry finish.This character is shaped by both the growing location and the processing method. The coffee comes from the Chikmagalur region in the state of Karnataka—a mountainous part of India considered the birthplace of Indian coffee. According to legend, it was here that Baba Budan brought the first coffee seeds from Yemen, laying the foundation for Indian coffee cultivation. Today, on the slopes of the Bababudangiri range, surrounded by the extraordinarily rich nature of the Western Ghats, grows an Arabica with an exceptionally classic character.Chinennahally Estate has been owned by a single family for over 70 years. The coffee trees grow under a two-tier shade of native trees, and only mature cherries are selected during harvesting. After being processed using the washed method and sun-dried, the beans retain a clean, elegant profile where chocolate and nutty notes take center stage.We chose this coffee because it is a great example of classic Indian Arabica. Without excessive fruitiness, but with depth, a velvety body, and a character that will be appreciated by both espresso lovers and those looking for a calm, everyday cup. This is coffee from the place where the history of Indian coffee began—and in our opinion, you can taste that tradition in it.Store in a cool, dry place.
