Thank you for being part of this initiative.I’ve developed a kind of allergic reaction whenever I hear: “this is a Brazilian coffee that doesn’t taste like a typical Brazilian coffee.”Here, that phrase fits perfectly — because this coffee has a lot going on, and it’s as complex as the DNA of a true street mutt. There’s plenty of caramel and milk chocolate, sure — but it also has a jammy note. Not a sad, bluesy kind of jam, but a juicy, fruity one — packed with ripe red strawberries!A few words about the farm:This coffee comes from a farm that was established in 2017. In 2021, it expanded with two additional estates — Fazenda Buriti and Fazenda Arcos, neighboring Santo Inácio. The effort quickly paid off: in 2021, Marco’s coffee placed 3rd in a competition for the best fermented coffee in the cooperative. In 2023, his coffees were awarded again — 2nd place in the natural category, and 3rd place in the Elas no Café competition in the Cerrado region.But it’s not about the awards — it’s about the hard work of the farmers, which was rightfully recognized through this project. Antonio is the third generation of his family to farm here, and began by planting grains and pulses. However, he told us that it has always been his dream to farm coffee, and in 1991, the first coffee tree was planted. Slowly but surely, Antonio increased the number of trees and the production capacity of La Colina. Nine years ago, Antonio built his own processing facilities, and with his focus on quality rather than quantity, he has achieved excellent rankings in the Guatemala Cup of Excellence competition. The coffee grows within a beautiful landscape of oak, cypress, and pine. The farm benefits from multiple streams, with fresh water for irrigation and processing. Only one quarter of his farm is planted with coffee, while the rest remains native forest, certified by the National Institution of Protection of Forests.

The first step is manual collection of mature cherries on Zarza's farm. The cherries are then being oxidised open-air for 48 hours. Then they are put into plastic bags in an anaerobic environment for 60 hours. in two steps, the second one is with The cherries have their skin peeled and then the coffee is fermented for another 60 hours in their mucilage and the mossto. The cherries are then transferred to a tank with hot water followed by cold water. This thermal shock maintains the aroma and flavor that has developed through previous fermentation in the targeted area. After draining some of the water in a covered African bed, place in a silo and dry until the moisture content reaches 11% (about 10 days to 2 weeks).
