We chalk it up to the stereotypical distance and reserve of the descendants of Vikings. Island Rose is 65% green tea leaves, with papaya, mango, and rose buds. It sounds exotic, and that is exactly how it hits the nose.Given that two-thirds of the portion is tea, the dose can be increased to about 2.5–3 grams per 100 milliliters of water. The temperature should be around 80°C, with a brewing time of 2 minutes.The result is a strongly perfumed infusion, with candied tropical fruits in the foreground and a floral quality mixed with the “typical” green tea flavor in the background. Sweet and intense. On the plus side, there is no artificial, cloying aftertaste, the kind you get from eating aspartame with a spoon, which is characteristic of cheap blends. Pleasant, neat, and completely unpretentious.The second infusion is already much less intense, though the fruit still takes center stage. The whole setup makes some sense, although it is probably better to brew it once and use the rest for cold brew. It involves using a matcha bowl, a bamboo whisk- chasen and a bamboo spoon- chashaku. Place 2 chashaku spoons of matcha (1,5g) in a matcha bowl and pour 100ml of hot water (80 °C). Chasen in hand, vigorously whisk your matcha from the wrist in m-shaped, not circular, motion. In about 20 seconds your bowl should be filled with a perfect jade-green foam. You can add more water now if you like your matcha to be less strong.Mixing your matcha with a milk frother is just as easy. Add a flat teaspoon of matcha (1,5g) to a cup or glass and pour over with 100ml of hot water. Mix well and add more water. 1 teaspoon will usually give you 200-250ml of matcha drink. Matcha Aoba is a tea we are especially proud of. It is a classic, high-quality first-harvest matcha, produced entirely without the use of synthetic plant protection products. It comes from the very birthplace of matcha, Kyoto Prefecture. It is also worth noting that it was ground just before being shipped from Japan to our warehouse, making it an exceptionally fresh product.  Tencha, meaning the tea leaves used for matcha before grinding, comes from the first harvest and was shaded with covering mats for over three weeks prior to picking. Its flavor profile is further enhanced by the volcanic soils in which the tea bushes are grown.
