The president of Lima Coffee is Rony Lavan, who is responsible, among other things, for finding the most interesting coffees from small producers. He has guided the company toward specialty coffee, and his microlots are winning an increasing number of industry awards. Fun fact: Cajamarca is a relatively dry and cool tropical region located in the north-eastern highlands of Peru, characterized by very fertile soil at high Andean elevations. All of these factors contribute to the developing production of specialty coffee. Cajamarca is the main coffee-growing region in Peru, accounting for about 25% of national production. Small-scale producers own approximately 2-3 hectares of arable land, and many of them practice organic farming methods.COFFEE OF THE MONTHEvery month we pick two coffee specials – one for the espresso lovers, and the other for the pour-over sippers. The company was founded by Syoum and Emame, and is currently run by their grandchildren. Bette Buna is committed to improving the quality of life for its community members – it teaches local farmers how to improve soil quality, restore agroforestry systems, and understand the importance of harvesting ripe cherries. Ripe cherries weigh more and yield better coffee, so farmers receive higher pay per kilogram, as well as a quality premium. The company also distributes over 350,000 seedlings from its own nursery every year.Fun fact: The coffee underwent a decaffeination process at the Coffein Compagnie using a solution of water and ethyl acetate, which occurs naturally in sugar cane, coffee, and fruits. The station was established in 2006, but remained inactive for a long time until Leo Fidele Ndagijimana took it over in 2018. Fidele repaired and modernized the machinery, using his experience in managing stations in western Rwanda to establish new processing standards. He named the station "Horizon" to reflect his vision of producing exceptional coffee.Fun fact: the station has become a positive element in the community – it employs over ninety local residents, with women making up 70% of the staff. It is a hilly region with an average altitude of 1,500-1,800 meters above sea level, rich in volcanic soils. The Nyagishiru station is owned and managed by Matsitsi Trading Coffee SU (MATRACO). The company was founded in 2015 by Zuberi Matsitsi, who produces specialty coffee primarily for international markets.Fun fact: Zuberi Matsitsi owns over 7,000 coffee trees. In addition to the Nyagishiru CWS plantation, his company also owns two other plantations in the Kayanza province. Coffee batches from Zuberi Matsitsi's plantations won awards in the Cup of Excellence competitions in 2013, 2014, 2015, and 2017.Store in a dry and cool place.

The local producers cultivate coffee at altitudes reaching up to 2,200 meters above sea level, and the station itself is located at 1,850 meters above sea level.Fun fact: a peculiar aspect of this coffee is that its "unique profile" is partly attributed to the indigenous honeybees inhabiting the Nyungwe forest and its surrounding areas, where the crops are grown. Bee-assisted pollination, fertile humus-sandy soil, and a cool climate resulting from the proximity of Lake Kivu all contribute to the flavor of this coffee.Store in a cool and dry place.

The region is characterized by mineral-rich volcanic clay soils, consistent rainfall, and a mild climate. The region is known for its ideal conditions for coffee cultivation. The mountainous terrain, volcanic soils, and favorable microclimate allow for the production of coffee with refined, distinctive profiles.Fun fact: heirloom is a term characteristic of Ethiopian coffees, used to describe the local and wild varieties of the coffee tree viewed as a whole. The processing was carried out at the cooperative’s facilities to ensure consistency. The coffee was then decaffeinated in Germany using the water process.Did you know? Water process decaf is a multi-step decaffeination method in which green coffee is soaked in a water solution to extract the caffeine. The caffeine is then removed from the solution using activated carbon. The caffeine-free solution is subsequently added back to the pre-dried coffee beans. The cooperative's headquarters are located in the Ngariama area on the southern slopes of the mountain.Fun fact: Most coffee growers in Kenya own between 1/8 and 1/4 of a hectare of land and deliver their coffee as cherries to a local processing station, such as Karimikui, for sorting and processing. At the station, the deliveries are tasted, and after selection, they are mixed and processed into daily lots (microlots).Store in a dry and cool place.

Their farms average 1-2 hectares in size. The coffee cherries delivered to Kindeng Mill are processed, and then the beans are dried on raised beds and cloths, turned several times a day. The entire process takes about a month.Fun fact: Jiwaka Province is located in very fertile lands in the Waghi River Valley. The river serves the locals in many areas, including agriculture. The region is famous for its lush landscapes and favorable conditions for coffee cultivation. Despite the challenges faced by small producers in Bolivia, such as access to a market dominated by larger buyers, Hernando maintains high quality standards in his production, supports the local community by preserving traditional farming methods, and promotes economic development in the spirit of sustainable practices.Fun fact: Coffee was likely introduced to Bolivia by enslaved people from Africa. The first mentions date back to the 18th century and refer to estates in the Yungas region, where it was cultivated and consumed by landowners. Coffee cultivation expanded on the largest scale in the 1970s and 1980s due to a national plan to diversify crops and avoid complete dependence on coca crops.Store in a cool, dry place.
