Situated at an altitude of 1,900–2,100 meters above sea level, the farms benefit from a cooler climate, fertile soils, and large temperature differences between day and night. Such conditions favor the slow ripening of the cherries, allowing the beans to gradually develop their natural potential.Coffee trees grow among traditional, diverse crops that provide natural shade. The cherries are harvested by hand, and only fully ripe cherries are selected for further processing. Subsequently, they are processed using the natural method on raised beds, where they require regular turning and careful monitoring throughout the entire drying period. This process allows the origin's character to be preserved and the full potential of the bean to be brought out.ABOUT THE COFFEENotes of mandarin, milk chocolate, and spices dominate in the cup. The station is managed by Cherab Betesebu, and the cherries delivered to it come from around 600 local farmers cultivating coffee at altitudes reaching 2,100 meters above sea level. The combination of high altitude, fertile soils, and abundant rainfall creates conditions thanks to which Yirgacheffe has been famous for years for exceptionally valued, aromatic coffees.ABOUT THE PROCESSINGAfter harvesting, ripe cherries are carefully selected and depulped, then fermented for 36–48 hours. After fermentation, the beans are washed, sorted by density, and dried on raised African beds for 12–15 days. Regular turning and protection from intense sun and night moisture help preserve the clarity of the profile, highlighting the clear acidity and delicate florals characteristic of washed coffees from Yirgacheffe.ROASTER'S OPINIONAricha is one of the most valued stations in Yirgacheffe, and its washed lots have been recognized for years as a great example of the region's character. This coffee combines intense jasmine, sweet apricot, and an unusual, hoppy accent that adds originality and complexity.In the aroma, distinct jasmine dominates with a delicate, tea-like note. In flavor, juicy apricot appears, accompanied by a characteristic hoppy accent. As it cools, the profile becomes more tea-like. It takes its name from the city of Yrgalem, in the Sidamo region in Ethiopia – motherland of all the Coffea Arabica coffees.Due to the grind size, recommended for moka pots. Proper coarseness results in good water flow, desired extraction and finally expected flavour.In the neighbourhoods of the city, this arabica variety named Typica is grown in small plots of land called coffee gardens. This coffee is made with the wet processed Sidamo gr. 2 CMI beans, which Abdullah Bagersh specially selects for us and its astonishing character makes it best enjoyed unblended.Its great floral, bergamot and honey aroma comes prominently through the cup. Since its inception, it has been systematically developing, and its long-term plans include sourcing groundwater for processing as well as installing mechanical dryers and solar tunnels.The station employs six permanent workers, six seasonal workers, and 244 temporary workers. Each year, it processes between 500 and 600 tons of fruit supplied by 868 farmers who grow coffee in small backyard gardens. The main varieties cultivated in this region are local 7454, 74110, 7440, and 74112.The station applies rigorous procedures in terms of management and traceability of raw material origin. These include reducing water consumption and keeping detailed documentation at every stage of the supply chain — from farming to export.ABOUT THE PROCESSING OF COFFEE BEANS AT THE FARMThe 74110 variety, hand-picked by 868 smallholders. Before the actual process, it undergoes initial selection, during which unripe cherries or impurities are removed. Before separating the bean from the fruit, the cherries are washed, then fermented for 24 hours, and washed again. We recommend it primarily for filter brewing methods, where its complexity and delicacy are most pronounced.The coffee comes from the Oromia, Guji region in Ethiopia and was produced by Gemechu Shonora in cooperation with around 500 smallholder farmers. The crops are situated at an altitude of 1900 to 2200 meters above sea level, and the dominant varieties are Kurume and other local varieties characteristic of this region.The name Harruu Bunnaqaa originates from the Oromo language. "Harruu" means a large shade tree, under which Oromo community meetings traditionally took place, while "Bunnaqaa" is related to sharing coffee. Harruu Bunnaqaa is also a historical site in Guji, where local Oromo leaders would meet to jointly celebrate peace, blessings, and coffee.Coffees from this area stand out for their exceptional complexity and aromatic intensity, resulting primarily from the high altitude of the crops and very fertile soils. The sensory profile frequently features herbal, floral, and spicy notes, along with fresh accents reminiscent of hops or citrus.This lot offers a flavor profile with notes of blueberry, vanilla, and lemongrass, with a distinct, crisp texture.
