THE CUP
This delicious expression of Gesha offers layered notes of pomegranate, redcurrant, and black tea. The profile is sweet like honey and vanilla, with an elegant silky texture. The gentle acidity is like candied lemon.
ABOUT THE FARM
The West Valley is the most prominent coffee growing region in Costa Rica. Most of its coffees are grown under protective shade, and produced on fertile clay. The mountainous landscape is dominated by three volcanoes and a gentle tectonic depression, while the Pacific weather patterns create well-defined dry and wet seasons. Volcan Azul is located on the edges of the Poás Volcano. For 5 generations, the producers have continued making coffee with superior quality. The descendants of the founders families are acquiring natural tropical forest to help mitigate the effects of global warming.
ABOUT THE PROCESS
The process for this lot started when cherries were still on the branch. By constantly measuring the Brix sugar content level, Alejo and his team identify the ideal harvest moment. Following harvest, the cherries are pulped to remove the skin. A thick layer of mucilage is left surrounding the beans imparting sweetness and body to the coffee as it dries. The coffee was dried for 4 days in the sun, before 33 hours mechanical drying. Due to the mucilage, the dried cherries become deep red in colour, giving the process its name.
