CO₂ acts as a selective solvent, binding caffeine molecules without affecting the compounds responsible for the coffee’s flavour and aroma. After the process is complete, the CO₂ is released and the caffeine separated, making this method completely safe, clean, and environmentally friendly.The Mountain Water Washed method, on the other hand, uses pure water from mountain sources. The beans are soaked under controlled conditions, which opens their structure. The water is then circulated repeatedly, washing out the caffeine through a natural difference in concentration. After the process, the beans are carefully dried to restore the proper moisture level.Both methods preserve the authentic character of the coffee, delivering a full, natural taste — without caffeine.BREWINGThe density of decaffeinated coffee differs slightly from that of caffeinated coffee. It’s worth using a little more to enhance mouthfeel. Use 18.5 g of coffee, ground at 19 clicks on a Comandante grinder. Here, it went through another stage of processing—wine maceration.Maceration preserved the natural sweetness of the Brazilian beans while enriching them with wine aromas that give the brew exceptional depth and freshness, adding an extra pleasant acidity. The raw beans were macerated for 24 hours in a blend of three Iberian wines—Spanish Chardonnay and Pinot Grigio, and a Portuguese rosé Syrah. This combination gave the coffee its characteristic aroma and delicate wine notes, which remain even after roasting. During roasting, the alcohol evaporates completely, leaving behind a wine-inspired sensory profile.This is a coffee that contains no alcohol but still carries the refined wine character in which it matured—fruity, light, and elegant.

Founded in 2018 near the town of Palestina in southern Huila, the station was built to support local farmers by providing easier access to coffee processing and sales. Today, 214 nearby farmers deliver their freshly harvested cherries to El Puente—most of them of the Castillo variety.El Puente focuses primarily on honey, natural, and other experimental fermentation methods, all while minimizing water usage.This particular lot is 100% Castillo, processed using the honey method. Upon arrival at the station, cherries underwent an initial selection to remove debris and under- or overripe fruit. Then, they were placed in a water tank to eliminate remaining floaters and defects. Next, the cherries were pulped to remove the skin, and the beans were placed in anaerobic fermentation tanks for 6 hours. Afterward, they were dried on raised beds for about 20 days until reaching optimal moisture content. Finally, the beans were cleaned, vacuum-packed in GrainPro bags, and prepared for export.Thanks to this carefully designed process, the result is a uniform, defect-free coffee with beautifully developed beans—an excellent base for precise roasting.ROASTER'S NOTESInside this bag, you’ll find 100% Castillo – a variety known for its high yield, resistance to fungal diseases, and exceptional balance between sweetness and acidity.In the aroma, you’ll discover sweet notes of strawberry and banana, complemented by delicate floral hints.In taste, these fruity tones dominate, harmonized by a pleasant, grapefruit-like acidity. You’ll find notes of dark chocolate, spices, honey, and dried fruit.This Fine Robusta from Panama has a high body—typical for this species—subtle fruity acidity, and a long chocolaty finish. Its aroma reveals hints of spices, dried fruits (plum, apricot), and cocoa. The flavor is dominated by dark chocolate, spices, dried fruit, and honey. There is also a slightly herbal/tobacco character, which is typical for this type of coffee.The cherries of this Canephora were first soaked briefly, then moved to another tank with water where fermenting yeast was added for anaerobic fermentation. After 48 hours, the coffee was passed through a depulper, then spread on raised beds to dry.          THE FARMKiva Estate is a group of native Panamanians with diverse professional backgrounds, whose 30-year friendship eventually led them into the world of coffee cultivation. Two team members already owned pastureland and cattle, and during one of their gatherings, the idea of growing Fine Robusta was born.The team spent a year learning throughout South and Central America—visiting top farms, trade shows, and meeting experts. The challenge was the low popularity of Robusta and the lack of proper equipment, and in some countries its cultivation was even prohibited. With help from Olmedo in Nicaragua and BRS2314 seeds from Brazil, the first plantation near Penonomé in Coclé was established.Step by step, the team assembled post-harvest processing equipment, despite jokes and laughter from neighbors. The first harvests were promising, and Kiva Estate’s Fine Robusta gained recognition in Europe during World of Coffee in Athens, reaching prestigious coffee spots.This unusual combination of a Brazilian robusta variety, the experience of the Kiva Estate team, and the unique growing environment resulted in the production of Fine Robusta from Panama.ROASTER’S OPINIONInterest in fine robustas in our market is lower than it was 2–3 years ago, but around the world more and more countries are trying to create much more drinkable robustas than the ones we associate with espresso-roasted blends. What’s interesting here is that when we think of Panamanian coffee, we usually think of Geisha. In this case, we have a Brazilian variety grown in Panama at about 550–600 masl. The processing itself was quite intense—anaerobic with added yeast. As a result, we get a high-quality fine robusta with a complex sensory profile that only subtly resembles the typical character of this species.In the aroma, the coffee smells of herbs and nuts, with noticeable notes of dried fruit and alcohol. In the taste—high body, very low and smooth acidity, spices, honey, and dried fruit. This is definitely not a coffee for everyone—especially those who prefer light, very delicate Arabicas. Here we are dealing with a rather intense coffee, one that gently reminds us that it is indeed a robusta.
