This approach allows them to precisely match the processing methods to the characteristics of the raw material and maximize the sensory potential of each lot.The farm utilizes a wide range of processing methods: from classic washed and honey to more advanced natural, anaerobic, and extended fermentation processes. Fermentations are conducted under controlled conditions, often in sealed tanks, with the duration and parameters precisely tailored to specific varieties. Drying takes place mainly on raised beds and patios, and the entire process – from harvesting to stabilization and dry milling – is strictly monitored.The result of this approach is coffee with high clarity and a complex profile: from elegant, clean Geshas and structured honeys to intense, controlled anaerobics with distinct fruitiness and winey notes. The quality of production is confirmed by numerous successes in the Cup of Excellence competition, where the farm has placed at the top multiple times, including first place in 2025.Our beans are a selection of peaberry, sourced from the coffees that won awards in this year's Cup of Excellence. Peaberry is a naturally occurring type of bean – about 10-15% of coffee beans do not split in half but remain as a single whole. Traditionally, they are separated from the rest for the consistency of the lot. The Sanchez Valencia family has developed a complex process, allowing them to achieve stable and repeatable results.ABOUT PROCESSINGThe first stage involves creating a "fermentation starter" – naturally occurring yeasts are extracted from the cherries of the Purple Caturra variety. Next, they are added to concentrated blueberry juice to conduct a pre-fermentation. Then, the starter obtained this way is added to the already harvested coffee cherries sealed in 200-liter fermentation tanks. After this stage, the coffee is processed as a classic washed.We have been roasting infused fermentation coffees for some time now. Of course, they vary, but they share a fairly distinct common trait in their profile. Blueberry was an absolute surprise. We took a slurp and said to ourselves – wow, fudge, toffee, milk chocolate. We've never had anything like this before. Blueberries are there, of course – in the dry aroma, in the flavor. But that is not the main characteristic of this coffee. A lot has changed since then. Back then, the processing still had its flaws; there were many heavily over-fermented beans that roasted darker than the rest, creating a slight "muddiness" or what some called "tarriness" in the cup. Today, that is completely gone. This is a sweet, jammy, and thick natural, yet remarkably clean and transparent at the same time. This approach allows them to bring out the best sensory qualities of every batch and offer coffees with truly distinctive profiles.José Antonio Salaverria and his sons, Andrés and José Antonio Junior, represent the sixth and seventh generations of coffee producers from Huachapán. In recent decades, the family has focused on top-quality coffees, implementing programs that select plots based on altitude, quality potential, and growing conditions. Their main production areas are Santa Rita, San Francisco, and El Molino, located around the Santa Ana volcano.Traditional varieties dominate on the Salaverria farms, such as Bourbon Elite and Híbrido San Francisco, a hybrid of Bourbon and Pacas. The family is known for its innovative approach to coffee cultivation and processing. They experiment with various fermentation methods to optimize quality and create lots with standout sensory profiles. Each farm is divided into smaller plots called tablones, allowing for precise crop management and the creation of meticulously described microlots. In response to challenges such as coffee leaf rust, the Salaverrias have focused on soil regeneration and strengthening plant resilience. They produce their own organic fertilizer called Huisil, made from organic waste, mainly coffee pulp as well as fish and animal by-products. Currently, they use a blend of 50% Huisil supplemented with mineral components such as nitrogen, potassium, boron, and zinc. They also apply various pruning methods adapted to tree height and variety to maintain productivity and plant health.The Salaverrias place great importance on staff management and providing fair working conditions. Farm managers receive bonuses based on harvest quality, and many workers are employed on a permanent basis, fostering a committed and experienced team. Between 50 and 60 people live and work directly on the farms, and coffee pickers are offered competitive wages along with optimized work systems that allow them to finish earlier in the day, giving them more time with their families.The family also invests in local social infrastructure. Near one of the farms in San Francisco, housing has been built for seasonal workers and access to medical care has been ensured. Doctors regularly visit the plantations, and the family supports local clinics, including two they built themselves in Ataco. In addition, they donated land for the construction of two public clinics and supported the development of a local school and a football field.
