Origin: Colombia
Region: Quindio
Farm: Jairo Arcila
Variety: Castillo
Altitude: 1450-1500 m a.s.l.
Processing: Honey Co-fermented
ABOUT THE PROCESSING
Coffee cherries underwent a 72-hour dry anaerobic fermentation. During this process, green apples were added to the fermentation tanks, enriching the coffee's flavor profile with notes of fruity freshness and distinctness. After fermentation, the beans were separated from the pulp and placed on African beds, where they dried until reaching the ideal moisture level. Or at least that's what the producer says – we weren't there, we're just repeating what they say. And that's why if you ask us about the process, we'll answer – fake fermentation :))).
Fruit-infused fermentation. Green apple submerged in sweetness, a bit like grandma's apple pie. It's intense. - Roaster
