The green beans are first moistened with water and steam, causing them to swell and open their structure. This allows for the selective separation of caffeine without altering the other components responsible for flavor and aroma.In the next stage, liquid CO₂ under high pressure acts as a natural solvent, removing only the caffeine while leaving valuable compounds within the beans – such as fats, proteins, sugars, and aromatic acids. The process takes place in cycles where the carbon dioxide is recovered and reused until the caffeine is almost completely removed.After the decaffeination is complete, the beans are gently dried at a low temperature to restore their natural moisture. Thanks to the slow and gentle nature of the entire process, the coffee retains its original character – the full flavor, aroma, and quality that make it stand out even in its decaffeinated version.

It’s a big deal for us; we serve them to you over the next 12 months in an espresso that is the gem of our offer. Lively, distinct, and fruity. Sweet, but balanced by a pleasant acidity. We like it that way, and it has already won you over too.Why does this coffee change? Well, we can't stock up five years in advance because the beans will age and no longer taste as good. Every year brings a new harvest, and every year we look for something that matches our ideal flavor profile. That's how we've previously had coffees from the Buku Abel and Banko Gotiti washing stations. This year, the best beans we tasted were produced by the Danche washing station from the Gedeo region.In recent years, Gedeo has become our favorite coffee region. Traditionally, coffees from these areas were sold as originating from Yirgacheffe. However, in recent years, this specific part of the region has begun to be distinguished to highlight the uniqueness of the flavor profiles found here.ABOUT THE FARMThe Danche washing station is located in the renowned coffee town of Chelbesa, situated at an altitude between 2,000 and 2,300 meters above sea level. Thanks to fertile soils and suitable cultivation methods, local farmers—around 400 households—achieve very good yields. Most of them manage small, one- or two-hectare farms. Their cherries end up precisely at Danche to be processed according to strict procedures. And trust us, the result is excellent. This coffee doesn't need to "defend" itself in the cup. The farm combines modern cultivation practices with a regenerative approach, utilizing composting, controlled processing methods, and drying in tunnels, which allows for better control over the final profile. At the same time, it serves as a knowledge center for local farmers.By the way, we actually made a mistake here ourselves, one that we usually warn against. Robusta is just one of the varieties of the Canephora species. And in this particular bag, you will find beans of a different Canephora variety – Kaweri. For us, it is simply superb.ABOUT THE SPECIESWe are glad that you are exploring coffea canephora, often called robusta, together with us. For years, this species was mainly associated with cheap blends, but well-cultivated canephora can be intense, sweet, creamy, and surprisingly complex.That is precisely why it is appearing in our selection — to show that the world of coffee is broader than arabica alone.However, it is worth brewing it a bit differently. Canephora is more intense and extractable, which is why we recommend lower temperatures: 86–89°C (it is best to start at 88°C). Water with lower mineralization — around 70 ppm — also works well. You can simply mix your water with distilled water in a 1:1 ratio or use low-mineral water, such as Żywiec Zdrój.Do not be surprised if it tastes different from the coffee you know. That is precisely the point.ROASTER'S OPINIONThe mildest coffee in our offer. Sweet and velvety, while completely devoid of acidity and with very low bitterness. Operating at an altitude of 2,107 meters above sea level, it specializes in natural and anaerobic processing methods. Founded in 2017, the station has since become an important processing hub for local coffee producers.The station receives cherries from approximately 500 smallholder farmers, each cultivating coffee on plots of 1.5–2 hectares. Its location was chosen for the area’s high coffee production potential and its central position, which facilitates cherry deliveries from surrounding farms. Benti Nenka operates within active farming communities, supported by traditional systems of collective labor such as DEBO and DADO—forms of mutual aid in which farmers take turns working together.ROASTER’S OPINIONSweet, fruity, and floral, with a clearly defined acidity.
