Tabi brings structure and elegance, often expressed as a more tea-like clarity and a stable, citrus-fruit acidity, while Yellow Colombia adds sweetness and juicy, ripe fruit character.Formally, this is a washed coffee, but processed in a way that strongly shapes the flavor profile. First, the fermentation is two-stage: an initial aerobic phase, followed by anaerobic submersion, designed to emphasize stone fruit notes (peach, apricot) rather than heavy, wine-like flavors. The washing station is located on the slopes of Mount Kenya near the town of Kangema, and the coffee cherries harvested by 980 farmers who are members of the cooperative are processed here.Fun fact: Like many other Kenyan coffees, coffees from the Githiga station undergo a double washing process. After the ripe cherries are separated from defective, unripe, and overripe ones, they are wet-processed using clean water from the Githiga stream.
