CO₂ acts as a selective solvent, binding caffeine molecules without affecting the compounds responsible for the coffee’s flavour and aroma. After the process is complete, the CO₂ is released and the caffeine separated, making this method completely safe, clean, and environmentally friendly.The Mountain Water Washed method, on the other hand, uses pure water from mountain sources. The beans are soaked under controlled conditions, which opens their structure. The water is then circulated repeatedly, washing out the caffeine through a natural difference in concentration. After the process, the beans are carefully dried to restore the proper moisture level.Both methods preserve the authentic character of the coffee, delivering a full, natural taste — without caffeine.BREWINGThe density of decaffeinated coffee differs slightly from that of caffeinated coffee. First, a dessert-like base of sponge fingers. Then plenty of sweetness, notes of almonds and that sweet-bitter amaretto accent.This coffee comes from Huila, Colombia, and follows a classic washed process. The beans are sourced from small-scale producers working on a few hectares each, where selective picking and controlled fermentation are the norm rather than the exception. Depulped on the day of harvest, fermented for 12–36 hours, then thoroughly washed and dried to the desired moisture level. The result is a clean, structured base that translates into clarity and balanced sweetness in espresso.Caffeine is removed using the EA (ethyl acetate) method. It is a compound that occurs naturally in fruit and as a by-product of sugar fermentation. The green coffee, already processed, is first steamed under low pressure to open up its structure. The flavour goes in all sorts of fruity directions. It is exactly like reaching into a bag and pulling out a handful of colourful fruit gummies. Sweet, juicy and slightly tangy, enough to get your mouth watering.This coffee feels a little like the turn of summer into autumn. Summer is still hanging around, but you can already feel that autumn is just around the corner. The flavour works in a similar way. This is a natural, so there is no shortage of sweetness, but instead of heading towards heavy, dark berry notes, it stays bright, light and incredibly easy to drink. We described the profile as apricot syrup, papaya and yellow plums: plenty of bright, expressive fruit!The coffee comes from around Shantawene in the Bensa district of the Sidama region. It is processed at Buncho Station, whose name simply means “coffee tree” in the Sidama language. Established in 2018, the station receives cherries from small-scale producers in nearby villages.For the natural process, ripe cherries are sorted and then dried whole on raised African beds. Beans that, due to their appearance—darker parchment, spots, or pulp residue—would previously have been automatically categorized into a lower grade, were re-evaluated based on cup quality. Those without actual defects were selected and prepared as a separate, more affordably priced lot. The coffee undergoes multi-stage sorting, supported by an optical sorter, followed by intensive natural processing with a short anaerobic fermentation stage. The result is a very sweet, complex, and intense coffee.ROASTER'S OPINIONThe profile of this Ugandan coffee is the result of a long fermentation—ripe mango and dark chocolate combine with notes of balsamico and rum, creating a thick, intense character unusual for coffees from the Mount Elgon area. It is a very fruity and complex coffee with an exceptionally deep profile.In the aroma, ripe, almost caramelized mango dominates, accompanied by a sweet balsamic note and a delicate fermented accent. In flavor, mango builds an intense, syrupy sweetness, while balsamico and rum give depth and a slightly liqueur-like character to the whole profile. The profile finishes with dark chocolate and a long aftertaste. Introducing Alma Negra from the legendary Las Lajas. This is one of those micro mills whose name has become synonymous with a distinctive style: intense sweetness, juicy naturals and funky processing. Alma Negra is one of its best-known processes.This Costa Rican coffee lands in the territory of dark red fruit and dried tea leaves. The closest comparison would be cherry rooibos: sweet, gently astringent and syrupy, with an exotic, tangy flash lingering in the aftertaste.ABOUT THE PROCESSINGThis signature take on the natural process is based on the very slow and precisely controlled dehydration of whole coffee cherries. Only hand-picked fruit with a sugar content above 22° Brix makes the cut. The cherries are first washed and then density-sorted in water, with the lower-density fruit removed. An additional round of electronic sorting eliminates any remaining defects. The selected cherries are dried on patios inside a greenhouse for 22 to 30 days, depending on the intensity of the sunlight. After drying, the coffee rests for at least 60 days to equalise its moisture content and stabilise the flavour profile developed in the fruit. Only then is it hulled, sorted once again and prepared for packing.ABOUT THE FARMLas Lajas is run by Francisca and Oscar Chacón. Before they started pushing the boundaries of coffee processing, they were already ahead of their time in how they approached cultivation. They decided to switch to organic farming after the death of Oscar’s father, who had worked with pesticides for many years. Since then, Las Lajas has stopped using conventional crop protection chemicals. They made that decision at a time when organic farming did not yet command a higher price for coffee.
